Happy Tuesday! This past week has been a whirlwind of excitement for our family. We’ve been slowly preparing to move for the last several months, but kicked the process into high gear this week when we found what seemed like our dream house.
We still love the location and the idea of the house, but the reality was that the house was in very bad shape and the owners were seriously loony.
The good news is that we’ve held onto that motivation to move faster on the things we need to do at our house to get it ready to sell and then find a new place.
It’s all good.

A busy mom can never have too many quick and easy chicken recipes in her dinner-time arsenal. As we head back into another school year, the kids may be thinking about meeting new teachers or getting used to new classes and schedules, but I’m thinking about how much busier my afternoons and evenings will be when the kids are back into after-school sports and homework. I’ve been asking my good friends and family for their favorite quick weeknight dinner ideas, and this braised balsamic chicken from my sister was one of the first recipes we tried. It was such a hit with my family that we quickly added it to our regular dinner rotation.

Ready to see my sister’s quick and easy braised balsamic chicken recipe? To serve this chicken dish recently, I made a side of garlic mashed red potatoes. The sauce from the tomatoes and balsamic vinegar is wonderful as a mashed potato “gravy” but if you’re looking for a lighter dish, you can serve the chicken with sauteed zucchini or green beans from the garden.

This sauce is perfect for any grilled meats, but is especially tasty on grilled chicken!
3 tablespoons unsalted butter
1 small onion, halved and finely diced
3 garlic cloves, minced
Kosher salt
2 cups tomato sauce
1/2 cup tomato paste
1/3 cup packed light brown sugar
1/3 cup dark molasses
3 tablespoons Worcestershire sauce
2 tablespoons yellow mustard
1 1/2 teaspoons celery seeds
1/2 teaspoon crushed red pepper flakes
2 tablespoons cider vinegar
1. In a medium nonreactive saucepan, melt the butter over medium heat. Add the onion, garlic, and a pinch of salt and cook, stirring occasionally, until soft, about 5 minutes. Reduce the heat to medium-low and add the tomato sauce, tomato paste, brown sugar, molasses, Worcestershire sauce, mustard, celery seeds, and red pepper flakes, whisking to combine. Bring to a gentle simmer and cook, stirring occasionally, until the flavors come together, about 30 minutes. Remove from the heat and blend or puree until smooth. Stir in the vinegar.
2. Use immediately or store in the refrigerator in an airtight container for up to 1 month.
**Baste grilled foods with sauce only during the final stages of grilling to prevent the sugars in the sauce from burning.
Note from our family: we found that the sauce was even tastier the 2nd day!

St. Patrick’s Day is approaching fast, and as someone with a lot of Irish blood flowing through my veins, I love to celebrate each year in two ways. First, I wear lots of green (nobody wants to get pinched!) and second, I make some fun St. Patrick’s Day themed food. It’s easy to make green desserts for the kids, but dinner time can be a little trickier. This year, I was on a mission to find a meal that everyone would LOVE (and eat!) that didn’t take me all day to plan or prepare.

I think the BEST compliment I received after serving this delicious St. Patrick’s Day dinner was from my husband. Everyone loved the Cooked Perfect® Fire Grilled Chicken (Bourbon BBQ Wings!) and they were polished off pretty quickly. When my son wanted more chicken, I offered to heat some more up. My husband said that we’d finished it all, but I disagreed. I pulled a second bag of wings out of the freezer, and my husband said, “What?! That was frozen chicken? I totally thought you’d made those from scratch.”
Mission accomplished!
Because pre-dinner time is the busiest time in our house, I love finding meals that take some of the meal prep off my hands…especially when they taste THIS good. I grabbed two bags of the Bourbon BBQ Wings at the grocery store the other day (we have a big family – and teenagers – so I wanted to make sure we had plenty!).
Cooked Perfect Fire Grilled Chicken comes in a variety of tasty flavors, and you can choose a variety of cuts as well, such as wings, tenders, drumsticks, thighs or chunks. I was drawn to the Bourbon BBQ because it’s a flavor I know everyone in the family already likes, but I could have easily gone with any of the other flavors, like Buffalo Ranch, Wildflower Honey BBQ, Lemon Herb, Zesty Herbs and Spice, Szechuan, Korean Style, or Classic Style.
Seriously, my mouth is watering!
The best thing about Cooked Perfect Fire Grilled Chicken is that it is super flavorful, convenient and easy to prepare, and perfect for serving as-is with delicious sides. I decided to serve our Bourbon BBQ Chicken Wings with a side of broccoli and Irish-style mashed potatoes, or Colcannon.
Did I mention that this meal was a hit? Our colcannon side dish was so tasty, and I got it ready while the chicken was in the oven.
Ingredients:
1/2 a head cabbage, shredded
2 lbs potatoes, peeled and cut into chunks
2 Tbsp butter
3 green onions, chopped
1 tsp salt
1/4 tsp pepper
1/2 tsp dried parsley
1 cup milk (I used 2%)
4-6 slices of bacon, cooked and crumbled
Directions:
1. Fill a large saucepan about 1/2 full with water; heat to boiling. Add chopped cabbage and bring to a boil. Reduce heat and simmer cabbage until tender, about 10 minutes. Drain and set cabbage aside, leaving the cooking liquid in the pan.
2. Add the potatoes to the hot water; add additional water if needed to cover the potatoes. Bring to a boil, then reduce heat and cook until potatoes are fork-tender, about 15 minutes. Drain potatoes, then return them to the dry pot.
3. Meanwhile, heat butter and green onions in a medium saucepan for 2-3 minutes at medium heat. Add salt, pepper, parsley, and milk. Stir until heated through. Add bacon crumbles.
4. Stir hot milk mixture into drained potatoes. Add reserved cooked cabbage and mash together until mixed and smooth.

One of the first recipes that caught my eye was a recipe for Creamy Verde Chicken Chili – something totally up my family’s alley. We love Tex-Mex flavors!
When I saw the ingredients list, I admit I was a little skeptical. Okra and cauliflower in chicken chili? I was afraid my kids would turn their noses up at “hidden” healthy ingredients. After all, my kids are teenagers, so it’s not very easy to sneak anything past them!
I was amazed at how easy this recipe was to prepare. I put the chicken, salsa, beans, tomatoes, cauliflower, chicken broth, and seasoning blend* into my pressure cooker. Then I blended together the remaining ingredients and poured the mixture on top of everything. I closed and sealed the lid and turned the pressure cooker on. Then I waited while my house filled with the delicious smells of the Southwest.
I was shocked when my kids started eating that they immediately began commenting on how delicious it was. And then I was even more startled when they all reached for seconds to fill up their bowls again.
We will definitely be making this delicious chicken chili again in the near future. I can’t wait to try more of the recipes in this cookbook! I’m excited to try new ways to feed my family more healthy alternatives, while not sacrificing the time that we have together.

]]>Happy August!! This is the month I’ve waited ALL summer for! It’s finally time for vacations and travel. This week starts my mega month of travel, and I can’t wait! Yes, I know that work will be challenging to keep up with from the road, but it will be worth it to have a break.
Now that a huge majority of my time is spent in sales with my LuLaRoe business, I worry about being gone for several weeks and missing precious sale opportunities. ]]>Having a pressure cooker has really taken the pressure off me (pun totally intended) at dinner time. If I forget to thaw meat for dinner or want a super delicious and quick meal, it’s there for me. One of my favorite things to toss in the pressure cooker is chicken breasts -even better if they are crammed full of all kinds of tasty goodies. Ham & Spinach Stuffed Chicken Breasts are right at the top of my list!
Ham & Spinach Stuffed Chicken Breasts
Ingredients:
4 boneless skinless breasts
8 pieces thin sliced deli ham
fresh spinach
white cheddar
1 tsp. garlic salt
salt and pepper to taste

Directions:

2. Cut a thick chunk of white cheddar cheese; place inside 2 pieces of ham and stuff into chicken.

3. Grab a handful of washed fresh spinach and stuff it in there too; use this to help your cheese stay inside.

Season outside of chicken breast well with salt, pepper, and garlic salt or powder. Use your pressure cooker’s brown feature to brown both sides of chicken breast in a small amount of olive oil. Then place chicken on top of the trivet of your cooker over 1 1/2 cups water.

Cook on high pressure for 8 minutes; release pressure naturally and keep the chicken in the pot for 8 additional minutes. Remove and serve with your favorite side for a tasty meal!

]]>I got a pressure cooker (Amazon link) last year for my birthday and for over 6 months it sat in the unopened box in my pantry, taunting me. I had big plans for it – canning, meals, desserts – but I was intimidated by it so I didn’t even open the plastic. Then I just decided I had to give it a try and I was left wondering where the heck had this amazing thing been all my adult cooking life?
Forgot to pull meat for dinner? No problem! In a rush and need a full meal in 30 or less? Yep, it can do that. So now I am obsessed with my pressure cooker and use it at least twice a week for mouthwatering dinners in a flash like this recipe for Pressure Cooker Greek Stuffed Chicken Breasts- I even whipped up a from scratch Tzatziki sauce to top it with!
2-4 boneless skinless chicken breasts
1/2 cup feta cheese
4-6 pepperoncini peppers
1 tsp. oregano
1 tsp. salt
1 tsp. ground black pepper
Tzatziki sauce:
1/2 cup greek yogurt
1 1/2 tsp. lemon juice
1 tsp. dried oregano
2 T. grated cucumber
1/2 tsp. salt
1/2 tsp. ground black pepper

Directions:

2. Stuff pocket in chicken breast with feta, I chose one that was seasoned with sun-dried tomatoes and basil for more ready to go flavor!

3. Season the outside with salt, pepper, and oregano.
4. Turn pressure cooker on brown and give both sides of your chicken a nice brown on each side.

5. Remove stuffed chicken breasts from the pressure cooker and set aside. Add 1 cup chicken broth and 1/2 the juice from a jar of pepperoncini to pressure cooker. Place steamer basket/tray in cooker and lay your chicken on top with a pepperoncini on top.

6. Place your lid on top securely, be sure the steam valve is closed. Cook for 8 minutes on high pressure, release pressure naturally and allow chicken to sit for another 8 minutes.
7. While your chicken sits you can toss together this yummy tzatziki sauce! Just mix together greek yogurt, lemon juice, oregano, grated cucumber, salt and pepper. Place in fridge until ready to drizzle over chicken mixture.

The past 6 weeks have been crazier than ever.
