3 cans white beans, drained (I used a combination of Cannellini and black eyed peas, since that's what I had on hand)
1 can diced tomatoes, with liquid
2 cups chicken broth
1 teaspoon dried oregano
½ teaspoon dried basil
1 teaspoon minced onion or onion powder
Freshly ground pepper, to taste
Instructions
Slice sausage and heat in a large skillet over medium-high heat for about 3-5 minutes, stirring frequently. Add spinach and garlic and cook until spinach begins to wilt.
Add the rest of the ingredients and bring to a boil. Reduce heat to medium-low and cover. Simmer for about 15 minutes, or until water is reduced and orzo is cooked through.
Serve with fresh garlic bread.
