Butterscotch Bars

Ingredients
  • 2 eggs, beaten
  • 1 cup sugar
  • ¾ cup butter or margarine
  • 2 cups mini marshmallows
  • 1 cup finely chopped walnuts (or a nut of your choice) - OPTIONAL
  • 2½ cups graham cracker crumbs
  • 1 cup butterscotch chips (found next to the chocolate chips)
  • 2 Tablespoons creamy peanut butter
Instructions
  1. Beat eggs lightly in a small bowl. Combine eggs, sugar, and butter in a medium saucepan. Bring to a rolling boil and cook for 2 minutes, stirring constantly. Remove from heat and cool.
  2. Add nuts and graham cracker crumbs and stir. Add marshmallows and continue stirring until combined.
  3. Pat mixture into a 9x13 pan.
  4. In a small saucepan, melt butterscotch pieces over low heat; stir in peanut butter and mix well.
  5. Spread melted butterscotch/peanut butter mixture over the crumb mixture in the pan. Let cool until the butterscotch mixture is solid. Cut into bite-sized squares. Store in a sealed container in the refrigerator.
Notes
I like to let my crumb mixture cool to lukewarm or a little warmer. If you put the marshmallows in too soon, they will all melt (which is not always a bad thing). If you want until the mixture is totally cold, it can be harder to stir.
