As each new year begins and we say farewell to the old year, the same handful of thoughts goes through my mind…how can I make this coming year better than last? How can I spend more time with my family and less time working, cleaning, shopping, and cooking? How can I meet my healthy living goals (including losing a little weight!) without spending all my time stressing over what I eat?
I love to cook. I really do. But I don’t have the time to spend hours in the kitchen every night. There’s just no way. Between work that needs to get done and kids that need to be picked up and dropped off, it’s practically impossible to dedicate more than a few minutes to getting dinner prepped and served each night.
Typical “fast” dinner options simply aren’t an option for our family very often. With our family of six at home (including three teens and a tween), a lot of the convenience options are just too pricey, not to mention the fact that they are usually not very diet-friendly.
That’s why we love having Tyson® Grilled & Ready® Chicken Breast Strips on hand in the freezer. I picked up a 3-lb bag in the freezer section at Sam’s Club during a recent trip because it’s the ideal ingredient for quick and easy dinner recipes. I love that Tyson® chicken is something I can feel good about feeding my kids, and it certainly helps that we all LOVE how delicious it tastes, too!
There is so much you can do with a bag of Tyson® Grilled & Ready® Chicken Breast Strips from Sam’s Club. We love to add some chicken strips to a salad or use them in a soup. They’re even great on their own, served with a side of vegetables and mashed potatoes.
Recently, we made easy Greek-style chicken wraps for dinner, and not only did the kids declare their love for them, but my husband claimed that they were THE BEST wraps I had ever made. That’s a pretty bold statement for a dinner that only took me 15 minutes to make!
Because I knew everyone’s preferences are slightly different, I let everyone assemble their own wraps, which means that there are no specific measurements for ingredients. I personally love mine filled with a whole lot of everything. My son left off the olives, and my daughter preferred hers without sauce. So adjust the ingredients to suit your family’s needs.

The chicken was so flavorful and tender and paired perfectly with the fresh and cool veggies and tzatziki sauce, and we can’t wait to have it again!

I am obsessed with this goat cheese and beet spring salad…and it’s not just about the taste (which is amazing, by the way). I am obsessed with how sinfully EASY it is to make.
Which is why I’ve been eating a lot of this salad lately…
Can you blame me?
My husband and I went out for dinner and a movie a few weeks ago, and the only restaurant near the movie theater that didn’t have a 45 minute wait was a pretty basic sit-down burger place. I wasn’t too picky about where we ate as long as we could make the movie…
I ordered a salad for dinner that night, intrigued by the beets (which I LOVE on salads) and the candied walnuts (which I also love on salads). The salad I ordered at the restaurant had grilled chicken on it, but honestly the chicken was the least-impressive thing about it.
I came home determined to recreate the beet and walnut and goat cheese salad at home…and I was amazed at how easy it was to do. And what’s better, it whipped up in LESS than 15 minutes and was perfect for this week’s 15 Minute SALAD theme.
Note: I calculated the Weight Watchers Points Plus value for this salad, and as long as you use approximately 1 Tablespoon of vinaigrette, 1 ounce of goat cheese, and 1/8 cup of candied walnuts, this salad would come in at 7 Points+. Of course, the greens and the beets are 0 points, so feel free to LOAD up on those. You could reduce the points of this recipe by using a reduced fat cheese, a lighter vinaigrette, or switching to a lighter nut.
The vinaigrette is pretty basic, but if you don’t love vinaigrettes, then try another pre-made dressing. I have also made this salad with a creamy poppyseed dressing which was delicious as well…just a little sweeter than the vinaigrette.

I love smoothies. Love them. So when the 15 Minute Suppers bloggers decided to do a beverages-themed recipe week, I knew I needed to make a smoothie recipe. I decided to try for something out of the ordinary rather than my typical mixed berries, OJ, and yogurt in the blender.
Not that there’s anything wrong with mixed berries, OJ, and yogurt.
I’ve heard that avocados are amazing in smoothies, and despite my husband’s up-turned nose, I was excited to try avocado in my smoothie.
It did not disappoint.
This smoothie was very creamy and mild – not too sweet, not too tart. I just wish it had turned out a little more blue.
Regardless of the color, it’s definitely something I’d love to make again!

This week, the 15 Minute Supper bloggers were challenged to come up with a quick appetizer that could be made in 15 minutes or less….and I was almost stumped. Honestly, I was just busy. And feeling uninspired.
At the last minute, I decided to consult my family recipe book, compiled by one of my Aunts years ago, to see if anyone in my extended family happened to have an easy appetizer that I could make and share. My Aunt Connie pulled through for me, and although I changed around more than a few of the ingredients on her recipe, I owe the inspiration for these cilantro black bean tortilla roll ups to her.
These tortilla roll ups couldn’t be much easier. I just threw everything into my blender (cheese included) to make the cheesy black bean spread. No chopping of ingredients needed!
I love that these tortilla roll ups are an easy and quick savory alternative to bring to a party. Because they’re full of beans and cheese, they’ll be nicely filling, too. I can’t wait for my next get-together now!

Did you know that May is National Burger Month?
May is the perfect time of year to celebrate this most iconic American summer-time food, isn’t it? With Memorial Day just days away, and with it the unofficial beginning of summer, the rest of the 15 Minute Supper bloggers and I thought it would be perfect to commemorate National Burger Month with a collection of gourmet burgers that can be made in 15 minutes or less.
When I was given the challenge of creating a gourmet burger, the first thing that came to my mind was a Greek burger with tzatziki sauce. I had never had one before, but I instinctually knew that it would be good. I LOVE Greek flavors (this isn’t the first time I’ve made a Greek-inspired 15 Minute Suppers – you should try my Gyro-style Greek Wraps).
And, OH BOY, was it good!
If I had a little extra time, I would mix the burger spices in to ground beef and form my own patties, but frozen patties are so quick and easy that this becomes a recipe for even the busiest of nights and not just special occasions.
The ciabatta rolls were a lucky guess….and really made these burgers gourmet for me. I wanted something that was a little more fancy than a regular hamburger bun, and the ciabatta rolls did the trick. The only complaint was that my burgers were not quite big enough to fill the buns. Next time, I’ll go for larger patties!
Ready for the recipe?? There are 3 parts to making this easy gourmet burger: Spicing and grilling the burgers, making the tzatziki sauce, and topping the hamburger. And, yes, as long as you stay on task and follow the instruction order, you really CAN make 4 gourmet Greek burgers in just 15 minutes!

I grilled my burgers on an electric grill (like a panini press) and topped with feta cheese while still hot.
Add all the toppings and you’ve got yourself a gourmet burger, Greek-style!

When you’ve got 2 kids in karate, 3 kids taking piano, 2 boys in scouts, 3 girls in youth group, one kid in drama, one with a job, one in track (you get the picture) …you need lots and lots of quick dinner ideas. I’ve been more creative this year than ever before, and I’m loving it. Dinner doesn’t have to be complicated to be good. And it doesn’t have to take long to prepare to be tasty, either.
So many of the 15 Minute Suppers that I’ve made in the last 6 months (yes, I’ve been doing a weekly #15MinuteSuppers recipe for over half a year!) can be paired with a quick raw veggie or a green salad (salads don’t have to be complicated, either!). I am loving the quick meal revolution that has been happening in my family.
This week, I made a dinner that was quickly coined “classy pizza” (by a certain teen who is not overly fond of pizza) after the second bite. This particular teen was so fond of these pizza paninis that she has actually asked for them again.
Like most nights, I was rushed and tried to take some quick shots before having to rush out the door again…and the lighting was NOT cooperating. I love cooking, but I cook for my family, not for the camera…and this time around the family won. Hopefully you can still tell how easy and delicious these paninis are, despite the pictures.
These pepperoni pizza paninis have so much going for them – Quick to prepare, kid-friendly, easy to eat on-the-run, and yummy! We’ll be making them again!

I have a hard time writing “recipes” for sandwiches, because…well, they’re sandwiches. Get two slices of bread, layer them with yummy ingredients, slice in two and eat.
Sandwiches can be as simple as the peanut-butter-only lunches I make every morning for my 3rd grade son, but they can also be filling enough to eat for dinner.
BLTs are a favorite at our house – bacon, lettuce, and tomato with some mayo on toasted bread – but every once in a while I like to make loaded BLTs for fun. They really don’t take much extra preparation time, but the extra deliciousness added in between the toasted bread is totally worth it!
BLTS are so simple and quick but so delicious! The addition of guacamole, spicy mayo, and a slice of pepper jack cheese (my favorite!) totally kick this “ordinary” sandwich up a notch. I’m craving another now!

I’ve been making this dish for as long as I can remember.
Someone asked me for my recipe for kielbasa and potatoes a while back and I was a little flustered. This has always been one of those dishes that really doesn’t need a traditional recipe…but it’s still a dish worth sharing.
This has spent years at the top of my family’s favorite dinner list. Kids and parents alike enjoy it because it’s tasty and I love it in particular because it’s SO easy to throw together.
I’ll share the “recipe” with you tonight…but I promise you: once the IDEA of this easy dinner recipe is in your brain, you won’t need to fall back on the recipe (wait, does that mean this post will be useless after today??). You’ll be hooked on how easy it is!

]]>I love a good beef stroganoff….and I’m always looking for ways that I can make some of my favorite meals faster. Stroganoff is one of those meals that can be cooked super-slow (I love my crock pot version!) or labor-intensive (think: fresh mushrooms, sliced steak, and slow-thickened sauce on the stove top). While this easy meatball stroganoff recipe may not be as fancy as others that I have tried, it certainly fit the bill and satisfied our tummies!
I love using meatballs in my stroganoff because it makes the preparation go so much faster – this recipe took 15 minutes from start to finish (yes, even with the pasta or rice! Just start a pot of water on another burner and the pasta or rice can be ready at the same time as the stroganoff). Meatball stroganoff is equally delicious poured over egg noodles or white rice – use whatever floats your boat. Or eat it alone. No one is judging.

I was beyond excited to test out out a few recipe ideas I had brainstormed after I found out that a whole package of guacamole was on it’s way. So far, I’ve made 3 delectable dishes with Wholly Guacamole, but this recipe that I’m featuring today is not only my favorite guac recipe, but perhaps my favorite recipe EVER that I created completely on my own.
It’s so easy to make, it’s a crime.
Not only is this chicken salad unique, but it is colorful and delicious and tastes great the next day, too. What more could you ask for?
