Recently, we made easy Greek-style chicken wraps for dinner, and not only did the kids declare their love for them, but my husband claimed that they were THE BEST wraps I had ever made. That’s a pretty bold statement for a dinner that only took me 15 minutes to make!

Greek-Style Chicken Wraps

Because I knew everyone’s preferences are slightly different, I let everyone assemble their own wraps, which means that there are no specific measurements for ingredients. I personally love mine filled with a whole lot of everything. My son left off the olives, and my daughter preferred hers without sauce. So adjust the ingredients to suit your family’s needs.

 

Greek-Style Chicken Wraps

Greek-Style Chicken Wraps

Ingredients

  • Tyson® Grilled & Ready Chicken Breast Strips
  • Olive oil
  • Sprinkle: Oregano, cumin, and lemon pepper
  • 1 clove garlic, minced
  • Wraps or flour tortillas
  • Fresh spinach
  • Feta cheese, crumbled
  • Kalamata olives
  • Cucumber, diced
  • Tzatziki sauce
  • Green onion, sliced

Instructions

  1. Drizzle a small amount of olive oil in a skillet over medium-high heat; add some minced garlic and stir. Add Tyson® Grilled & Ready Chicken Breast Strips to the hot oil; sprinkle with oregano, cumin, and lemon pepper. Cook chicken until heated through.
  2. Meanwhile, dice cucumber and prepare the other wrap ingredients.
  3. To serve, each family member takes a wrap and fills it with their desired ingredients. Roll the filled wrap up and secure it with a toothpick.

Perhaps the perfect light and tasty lunch or side salad at the dinner table: Goat cheese and beet spring salad with light vinaigrette

Can you blame me?

My husband and I went out for dinner and a movie a few weeks ago, and the only restaurant near the movie theater that didn’t have a 45 minute wait was a pretty basic sit-down burger place. I wasn’t too picky about where we ate as long as we could make the movie…

I ordered a salad for dinner that night, intrigued by the beets (which I LOVE on salads) and the candied walnuts (which I also love on salads). The salad I ordered at the restaurant had grilled chicken on it, but honestly the chicken was the least-impressive thing about it.

I came home determined to recreate the beet and walnut and goat cheese salad at home…and I was amazed at how easy it was to do. And what’s better, it whipped up in LESS than 15 minutes and was perfect for this week’s 15 Minute SALAD theme.

Note: I calculated the Weight Watchers Points Plus value for this salad, and as long as you use approximately 1 Tablespoon of vinaigrette, 1 ounce of goat cheese, and 1/8 cup of candied walnuts, this salad would come in at 7 Points+. Of course, the greens and the beets are 0 points, so feel free to LOAD up on those. You could reduce the points of this recipe by using a reduced fat cheese, a lighter vinaigrette, or switching to a lighter nut.

  • Mixed Spring greens with spinach
  • Sliced canned red beets
  • Crumbled goat cheese
  • Candied walnuts
  • Vinaigrette:
  • 4 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 3 tbsp honey
Instructions
  1. Add vinegar, olive oil, and honey to a mason jar (or another container with a lid). Secure lid and shake til combined.
  2. Set the salad ingredients on a plate: spring greens, sliced beets, crumbled goat cheese, and candied walnuts.
  3. Drizzle salad with vinaigrette and enjoy! OR toss greens with dressing before setting on plates.

 

The vinaigrette is pretty basic, but if you don’t love vinaigrettes, then try another pre-made dressing. I have also made this salad with a creamy poppyseed dressing which was delicious as well…just a little sweeter than the vinaigrette.

I love smoothies. Love them. So when the 15 Minute Suppers bloggers decided to do a beverages-themed recipe week, I knew I needed to make a smoothie recipe. I decided to try for something out of the ordinary rather than my typical mixed berries, OJ, and yogurt in the blender.

Not that there’s anything wrong with mixed berries, OJ, and yogurt.

I’ve heard that avocados are amazing in smoothies, and despite my husband’s up-turned nose, I was excited to try avocado in my smoothie.

It did not disappoint.

This smoothie was very creamy and mild – not too sweet, not too tart. I just wish it had turned out a little more blue.

Regardless of the color, it’s definitely something I’d love to make again!

  • 1 cup Greek Yogurt (I used half cup plain and half cup blueberry)
  • 1 cup fresh or frozen blueberries
  • ½ cup avocado
  • 1 banana
  • ½ cup milk
  • ½ teaspoon cinnamon
  • 1 tablespoon honey
  • About 4-6 ice cubes
Instructions
  1. Mix all ingredients in a blender and blend until smooth.
  2. Serve with fresh blueberries and whipped cream, if desired.

At the last minute, I decided to consult my family recipe book, compiled by one of my Aunts years ago, to see if anyone in my extended family happened to have an easy appetizer that I could make and share. My Aunt Connie pulled through for me, and although I changed around more than a few of the ingredients on her recipe, I owe the inspiration for these cilantro black bean tortilla roll ups to her.

These tortilla roll ups couldn’t be much easier. I just threw everything into my blender (cheese included) to make the cheesy black bean spread. No chopping of ingredients needed!

Cilantro Black Bean Tortilla Roll Ups {Quick Appetizer Recipe} #15MinuteSuppers

Ingredients
  • 1 (8 oz) package reduced fat cream cheese, softened
  • 1 cup grated Cheddar, Monterrey Jack or Mexican cheese combo
  • ½ cup black beans
  • About ⅓ cup fresh, uncut cilantro (or a good sized handful from a bunch of cilantro)
  • 1 (4 oz) can green chiles, drained
  • 2 teaspoons taco seasoning
  • 6-8 flour tortillas
Instructions
  1. Place all ingredients in a blender and pulse until the cilantro and black beans are finely chopped.
  2. Spread cheese mixture on tortillas. Roll up and then slice into1½ inch pieces. Serve with salsa.
  3. Note: If you have extra time, you can wrap each rolled tortilla in foil and refrigerate until ready to serve. Slice right before serving.

 

I love that these tortilla roll ups are an easy and quick savory alternative to bring to a party. Because they’re full of beans and cheese, they’ll be nicely filling, too. I can’t wait for my next get-together now!

May is the perfect time of year to celebrate this most iconic American summer-time food, isn’t it? With Memorial Day just days away, and with it the unofficial beginning of summer, the rest of the 15 Minute Supper bloggers and I thought it would be perfect to commemorate National Burger Month with a collection of gourmet burgers that can be made in 15 minutes or less.

When I was given the challenge of creating a gourmet burger, the first thing that came to my mind was a Greek burger with tzatziki sauce. I had never had one before, but I instinctually knew that it would be good. I LOVE Greek flavors (this isn’t the first time I’ve made a Greek-inspired 15 Minute Suppers – you should try my Gyro-style Greek Wraps).

And, OH BOY, was it good!

If I had a little extra time, I would mix the burger spices in to ground beef and form my own patties, but frozen patties are so quick and easy that this becomes a recipe for even the busiest of nights and not just special occasions.

The ciabatta rolls were a lucky guess….and really made these burgers gourmet for me. I wanted something that was a little more fancy than a regular hamburger bun, and the ciabatta rolls did the trick. The only complaint was that my burgers were not quite big enough to fill the buns. Next time, I’ll go for larger patties!

Ready for the recipe?? There are 3 parts to making this easy gourmet burger: Spicing and grilling the burgers, making the tzatziki sauce, and topping the hamburger. And, yes, as long as you stay on task and follow the instruction order, you really CAN make 4 gourmet Greek burgers in just 15 minutes!

  • Burgers:
  • 4 frozen burger patties
  • 1 teaspoon ground cumin
  • 2 teaspoons minced onion
  • 2 teaspoons Oregano
  • 2 teaspoons garlic
  • ½ teaspoon pepper
  • Tzatziki sauce:
  • 1 cup plain Greek yogurt
  • 2 teaspoons lemon or lime juice
  • ½ teaspoon garlic, chopped or dried
  • 3 mini cucumbers, peeled
  • 2 teaspoons dried dill
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Toppings:
  • Ciabatta rolls
  • Feta cheese
  • Sliced tomatoes
  • Lettuce
  • Grilled/sauteed onions
Instructions
  1. Mix the spices in a small bowl. Generously sprinkle and rub the spices on both sides of each burger patty. Grill each burger until cooked through (timing will depend on your grilling method and heat. I use an indoor electric grill that cook both sides at once, so it's super fast).
  2. When burgers cooking, make the tzatziki sauce by placing all sauce ingredients in a food processor and blending gently (it only takes a few pulses - you don't want the sauce to be soupy).
  3. When burgers are cooked, sprinkle each patty with feta cheese and allow cheese to melt slightly.
  4. Toast ciabatta rolls (I placed the rolls, cut-side-down, on the grill after taking the burgers off).
  5. Generously spread each side of a sliced ciabatta roll with tzatziki sauce and then top with burger, tomatoes, lettuce, and anything else you might enjoy!

I’ve been more creative this year than ever before, and I’m loving it. Dinner doesn’t have to be complicated to be good. And it doesn’t have to take long to prepare to be tasty, either.

So many of the 15 Minute Suppers that I’ve made in the last 6 months (yes, I’ve been doing a weekly #15MinuteSuppers recipe for over half a year!) can be paired with a quick raw veggie or a green salad (salads don’t have to be complicated, either!). I am loving the quick meal revolution that has been happening in my family.

This week, I made a dinner that was quickly coined “classy pizza” (by a certain teen who is not overly fond of pizza) after the second bite. This particular teen was so fond of these pizza paninis that she has actually asked for them again.

Like most nights, I was rushed and tried to take some quick shots before having to rush out the door again…and the lighting was NOT cooperating. I love cooking, but I cook for my family, not for the camera…and this time around the family won. Hopefully you can still tell how easy and delicious these paninis are, despite the pictures.

Because bread sizes vary so much I am not including quantities in the ingredients list. The beauty of these sandwiches is that you can put as much or as little of any of the ingredients...or change up the toppings for a new variety.

Ingredients
  • Sliced Italian or French bread
  • Spaghetti or marinara sauce
  • Mozzarella cheese, shredded
  • Pepperoni slices
  • Butter or margarine
Instructions
  1. Heat panini press.
  2. Spread outside of each slice of bread with butter or margarine. Place butter-side-down on plate or cutting board.
  3. Spread the inside of each slice of bread with a thin layer of spaghetti sauce. Generously sprinkle ONE side of bread with cheese and then place pepperoni on top. Sprinkle additional cheese over the pepperoni so that the top bread sticks. Top with second slice of bread.
  4. Place sandwich on panini press, close, and cook for about 5-7 minutes, or until bread is toasted and cheese is melted.
  5. Slice sandwich in half and serve! Dip in additional spaghetti sauce, if desired.
Notes
If you don't have a panini maker, you can make these sandwiches grilled-cheese-style by grilling them in a sauce pan on top of the stove.

 

These pepperoni pizza paninis have so much going for them – Quick to prepare, kid-friendly, easy to eat on-the-run, and yummy! We’ll be making them again!

Sandwiches can be as simple as the peanut-butter-only lunches I make every morning for my 3rd grade son, but they can also be filling enough to eat for dinner.

BLTs are a favorite at our house – bacon, lettuce, and tomato with some mayo on toasted bread – but every once in a while I like to make loaded BLTs for fun. They really don’t take much extra preparation time, but the extra deliciousness added in between the toasted bread is totally worth it!

  • Cooked bacon (about 3 slices per sandwich)
  • Thinly sliced tomato
  • Iceberg lettuce
  • Red onion, sliced into thin rings
  • Regular OR chipotle mayonnaise
  • Guacamole
  • Deli cheese, if desired (I recommend pepper jack cheese)
  • Bread, toasted
Instructions
  1. Cook bacon to desired level of crispiness. Slice tomato and tear bread-sized leafs of lettuce. Slice red onion and break apart rings.
  2. Toast bread at the last moment. Spread warm bread with mayo and layer with all of your desired ingredients - as much or as little as you want. My recommendation? Make your BLT a LOADED BLT!

 

BLTS are so simple and quick but so delicious! The addition of guacamole, spicy mayo, and a slice of pepper jack cheese (my favorite!) totally kick this “ordinary” sandwich up a notch. I’m craving another now!

I’ve been making this dish for as long as I can remember.

Kielbasa and potatoes has been a family dinner stand-by meal for years! This is one of those meals that we can throw together on nights that we don't know what to cook. Quick, easy, and tasty!

Someone asked me for my recipe for kielbasa and potatoes a while back and I was a little flustered. This has always been one of those dishes that really doesn’t need a traditional recipe…but it’s still a dish worth sharing.

This has spent years at the top of my family’s favorite dinner list. Kids and parents alike enjoy it because it’s tasty and I love it in particular because it’s SO easy to throw together.

I’ll share the “recipe” with you tonight…but I promise you: once the IDEA of this easy dinner recipe is in your brain, you won’t need to fall back on the recipe (wait, does that mean this post will be useless after today??). You’ll be hooked on how easy it is!

Kielbasa and potatoes has been a family dinner stand-by meal for years! This is one of those meals that we can throw together on nights that we don't know what to cook. Quick, easy, and tasty!

Kielbasa and Potatoes #15MinuteSuppers
 
Ingredients
  • 1 package (12-16 ounces) kielbasa or smoked sausage - any variety works
  • About 6 potatoes (I recommend about one potato per person), cut into bite-sized pieces (I like skin-on)
  • Beans or peas or edamame
  • Optional: ½ onion, chopped
  • About 1 teaspoon Italian seasonings
  • Salt and pepper, to taste
Instructions
  1. Place cut potato chunks into a large pot of boiling water. Boil potatoes for 5-8 minutes, or until just under-cooked.
  2. While the potatoes are cooking, slice smoked sausage/kielbasa. Saute sausage in a large sauce pan over medium heat.
  3. Scoop slightly undercooked potatoes into sauce pan with sausage. Add a small amount of water (1/4-1/3 cup) from the pot of water into the pan. Stir and cover. Cook, covered, for 3-4 minutes.
  4. Uncover and add your vegetable of choice. Add Italian seasonings; sprinkle generously with salt and pepper. Stir and saute until water is evaporated and potatoes are soft when pierced with a fork.

I love a good beef stroganoff….and I’m always looking for ways that I can make some of my favorite meals faster. Stroganoff is one of those meals that can be cooked super-slow (I love my crock pot version!) or labor-intensive (think: fresh mushrooms, sliced steak, and slow-thickened sauce on the stove top). While this easy meatball stroganoff recipe may not be as fancy as others that I have tried, it certainly fit the bill and satisfied our tummies!

I love a good beef stroganoff, but I also love a quick and easy weeknight meal for the family. This easy meatball stroganoff meets both needs - a quick, easy, and delicious recipe!

I love using meatballs in my stroganoff because it makes the preparation go so much faster – this recipe took 15 minutes from start to finish (yes, even with the pasta or rice! Just start a pot of water on another burner and the pasta or rice can be ready at the same time as the stroganoff). Meatball stroganoff is equally delicious poured over egg noodles or white rice – use whatever floats your boat. Or eat it alone. No one is judging.

Ingredients
  • 1 bag of frozen meatballs
  • 2 tablespoons oil
  • 1 large onion, chopped
  • 8 ounce can sliced mushrooms, drained (or a handful of fresh mushrooms, sliced)
  • 1 cup beef broth (I sometimes add more to stretch it out)
  • ½ teaspoon salt
  • 1 teaspoon dried paprika
  • 2 tablespoons ketchup
  • 3 tablespoons flour
  • 1 cup sour cream
  • 1 teaspoon dried Italian seasoning
  • Cooked rice or egg noodles
Instructions
  1. Microwave meatballs on a large plate for about 3 minutes. Set aside.
  2. In a large frying pan, saute onion and mushrooms in oil until onions are until tender. Add broth, mushrooms, salt, and ketchup.
  3. Toss meatballs in flour and then add them to the saucepan. Cook and stir until mixture starts to thicken.
  4. Add sour cream and stir until meatballs are heated through.
  5. Serve over hot, cooked rice or noodles.

I served my easy meatball stroganoff recipe with a super quick salad of sliced cucumbers and tomatoes with an onion vinaigrette. It was perfect!

I was beyond excited to test out out a few recipe ideas I had brainstormed after I found out that a whole package of guacamole was on it’s way. So far, I’ve made 3 delectable dishes with Wholly Guacamole, but this recipe that I’m featuring today is not only my favorite guac recipe, but perhaps my favorite recipe EVER that I created completely on my own.

Sweet and Spicy Southwest Chicken Salad

 

Sweet and Spicy Southwest Chicken Salad #15MinuteSuppers

Ingredients
  • 1 hard boiled egg, diced
  • 1 stalk of celery, diced
  • ⅓ cup red grapes, cut in half
  • 1 chicken breast sprinkled with a garlic & herbs seasoning mix (or any 1 cup cooked chicken), cubed
  • 2-3 tablespoons Mexican cojita cheese (or your favorite crumbly cheese)
  • ¼ cup red onion, diced
  • 1 tablespoon fresh cilantro
  • 4 ounce (half package) of Wholly Guacamole Spicy guac
  • Flour tortillas
Instructions
  1. If you're starting from uncooked chicken, then sprinkle your chicken breast with seasonings (I used a garlic and herbs seasoning, but you can sprinkle with Adobo or seasoned salt or even a taco seasoning). Heat on the grill for about 10 minutes, or until heated through (cook time will vary depending on the grill used and the thickness of the breast). Cube cooked chicken.
  2. While chicken is cooking, chop all of the other ingredients.
  3. Add everything to a medium bowl and stir.
  4. Serve in a flour tortilla, sandwiched between 2 slices of your favorite bread, or eat alone!

 
Note: If you’d prefer your chicken salad a little less spicy, then try a mild guacamole.
