Easy Thai Peanut Curry Chicken - a quick one-skillet family dinner that is ready in about 30 minutes!

Do you ever base an entire meal on a single ingredient you find in your cupboard and are determined to use? I’ve had a jar of Red Curry Sauce from Trader Joe’s (<—psst…that’s an Amazon affiliate link to the red curry sauce I used, just in case you don’t have a Trader Joe’s nearby) in my pantry for what feels like ages, and I decided it was finally time to do something with it.

Easy Thai Peanut Curry Chicken - a quick one-skillet family dinner that is ready in about 30 minutes!

This dinner was so easy, so quick, and so delicious. What more do you need to know? I made it unique by throwing in a few vegetables, but this sauce is so versatile that you could add a different variety of vegetables or just skip the veggies altogether. Although the veggies were my favorite part (I got to eat some of the kids’ extra, unwanted vegetables, because even teenagers are picky sometimes!).

I made this dish in my large 12-inch cast iron skillet (another Amazon affiliate link) but you can use any large skillet. I’m just partial to my cast iron!

Easy Thai Peanut Curry Chicken and Vegetables

Ingredients
  • 4 boneless, skinless chicken breasts, cubed (or any boneless chicken pieces, cut into bite sized pieces)
  • 3 small to medium potatoes, cubed
  • 1 can sliced carrots, drained
  • 1 medium yellow onion, cut into chunks
  • 1 cup cubed bell peppers (I used a variety of colors)
  • 1 teaspoon garlic, minced
  • 2 tablespoons crunchy peanut butter
  • 1 (11 oz) jar Red Curry Sauce (NOT paste)
  • 2 teaspoons corn starch
  • 5-6 ounces of milk (fill the curry sauce jar about half full of milk)
  • Oil
  • Chopped, fresh cilantro, optional
  • Cooked rice, for serving
Instructions
  1. Heat oil in skillet. Add chicken pieces and stir for 3-5 minutes, until lightly browned. Add potatoes, carrots, onion, peppers, and garlic. Stir.
  2. Pour entire jar of red curry sauce over chicken and vegetables. Add peanut butter. Stir.
  3. Fill the empty curry sauce bottle about half way with milk. Add corn starch. Replace lid and shake well. Stir milk mixture into the skillet. Bring to a gentle boil.
  4. Turn the heat down to low, cover and simmer for about 20 minutes, or until potatoes are soft.
  5. Serve over hot rice and sprinkle with fresh, chopped cilantro.

Tex-Mex Sausage Quinoa Skillet recipe

I consider myself a pretty good cook. My kids are fed (mostly) home-cooked meals, and I rarely make a dinner that’s a total flop. But it’s also pretty rare for me to make a dinner dish that is so well received that the kids are raving about it and talking about it 2 days after finishing it.

Last week, I made a one-skillet quinoa, based on a this one-pan Mexican quinoa that I found on Pinterest…except that I wanted to add a some meat to it to fill my hungry kids a little more. I also know that my family LOVES black beans and cumin and cilantro in Mexican dishes so I increased all of those for our taste.

I wouldn’t change a thing. It was SO GOOD. While we were in the process of eating dinner, the kids started making plans to take the leftovers for school lunch the next day, and my 16-year-old remarked the next day that it had been her best school lunch ever in all of her 12 years of school.

Ready for the recipe? You’ll love how easy it is to prepare, and everyone will love how delicious it tastes. And then your husband will love how easy it is to clean up when you only use one pan (because that’s totally how it works, right??).

 

Tex-Mex Sausage Quinoa Skillet

Tex-Mex Sausage Quinoa Skillet

Ingredients

  • 1 lb ground sausage
  • 2-3 cloves garlic, minced
  • 1 jalapeno, seeds removed and minced
  • 2 cups quinoa
  • 2 cups chicken broth
  • 2 (15.5-ounce) cans black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 (14.5 oz) corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 avocado, diced
  • 1/4 cup lime juice
  • Chopped fresh cilantro

Instructions

  1. Saute ground sausage, garlic, and jalapeno in a large (12-inch) skillet over medium-high heat.
  2. Stir in quinoa, chicken broth, beans, tomatoes, corn, chili powder, cumin, salt and pepper.
  3. Bring to a boil. Cover, reduce heat to low and simmer until quinoa is cooked through (about 20-25 minutes). Stir a few times during cooking period. Add additional water after 15 or 20 minutes if liquid is soaked up and quinoa not yet cooked through.
  4. Before serving, stir in lime juice. Top with avocado and cilantro.

Since I can’t eat many of the fresh fall fruits that I used to love, and since I can eat fruits after they’ve been cooked, I now love to find ways to bake with them. I’ve always been a fan of my special apple pie recipe, but I only go through the hassle of making an apple pie for special occasions and holidays.

Skillet Apple Crisp Recipe

This apple crisp is the perfect (and perfectly easy) way to enjoy some delicious fall apples. I thought the addition of the pecans was one of the best parts, but the nuts are easily left out if you either can’t eat or don’t like to eat nuts (but, really…they add a wonderful crunch and flavor).

Since I am currently obsessed with cooking in cast iron, I was excited to try an apple crisp in my newest cast iron skillet. It baked up perfectly, but there’s one specific thing to mention: when I left the apple crisp in the cast iron skillet over night (because I made the crisp late one night) the apples had started to turn black. I would recommend storing any leftovers in a separate glass or plastic container. You can definitely make this apple crisp in a glass baking dish.

I used Granny Smith apples, but I think a sweet apple would work just as well. If you prefer your apples to be more crisp, then reduce the stove top cooking time.

Skillet Apple Crisp

Ingredients

  • 1 cup all purpose flour
  • 1 cup quick oats
  • 3/4 cup pecans, chopped
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 8 tablespoons butter, melted
  • 6 large apples, peeled, cored, and cut into 1/2" wedges
  • 1/4 cup granulated sugar (for filling)
  • 1/4 tsp ground cinnamon (for filling)
  • 1/2 cup applesauce (I used berry applesauce)
  • 2 tablespoons butter
  • 2 tablespoons lemon juice

Instructions

  1. Preheat to 450 degrees F. Move oven rack to middle of the oven.
  2. To make the topping, mix flour, pecans, oats, brown sugar, granulated sugar, cinnamon, and salt. Stir the melted butter into the dry mix until everything is evenly coated and crumbly. Set aside.
  3. To make the filling, toss the apples, sugar, cinnamon, and applesauce in a large bowl.
  4. In a 12 inch cast iron skillet over medium heat, melt butter. Add the apples and cook, stirring frequently, until apples just start to soften, about 5-8 minutes. Remove skillet from heat and stir in lemon juice.
  5. Sprinkle the topping over the apples in the skillet and bake for about 15-18 minutes, or until the topping is golden brown.
  6. Cool for 10-15 minutes before serving (the apples will be hot!). Serve with vanilla ice cream (yum).
  7. Note: if you don't have a cast iron skillet, you can cook the apples in a regular skillet and then transfer to a square baking dish. Bake for 20-25 minutes.
