My alarm goes off at 5:00am every morning, Monday through Friday. That’s life with a house full of teenagers who need Mom to wake them up to get ready for school. So when my alarm went off this morning at 5, I was pretty excited to see an email from the school district announcing a 2-hour delay due to icy roads. I set my next alarm for 7:00, and promptly fell back to sleep.

At 7, I checked my emails again. Sure enough, the school district had sent an update: school is cancelled! We have a SNOW DAY (with no snow on the ground. Go figure!).

Lazy days with no school call for baking projects with the kids! I’m currently brainstorming what we can make together today.

Oreo Snowballs

Last time we had a snow day, we made these delicious, can’t-stop-eating-them Oreo snowballs. I was kind of hoping that the kids (and my husband) wouldn’t like them as much as they did…so that I could claim more for myself. I suppose it’s a good thing that I was forced to share them.

Oreo Snowballs

My family loves our Oreo cookies, but the Oreo snowballs that we made were over-the-top amazing. These snowballs are WAY more fun than the cold kind we make outside…(and they taste better, too!). Don’t get me wrong. We love the snow, but we enjoy staying cozy and dry even more!

Did I mention that these require only 3 (possibly four) ingredients and that they are NO-BAKE?! Unless you are actually snowed in and can’t get to the store to buy ingredients, you really have no excuse.

Oreo Snowballs

Here’s how easy it is to make Oreo Snowballs:

Ingredients:

  • 1 package of Oreo cookies, crushed
  • 8 ounce package of Cream Cheese, softened to room temperature
  • 12 ounces white chocolate
  • Optional: white sprinkles or crystal sugar

Oreo Snowballs

Instructions:

1. Crush the Oreo cookies in a blender or for more hands-on involvement, place Oreos in a gallon size freezer bag and have the kids roll them into crumbles with a rolling pin.

Oreo Snowballs

2. Blend softened cream cheese into the crushed Oreos. You can also blend the two by placing both ingredients into a gallon size zip top bag and kneading the cream cheese into the Oreos. Kids love this!

Oreo Snowballs

3. Roll the Oreo-cream cheese mixture into balls (about a tablespoon each). Place your balls on a baking sheet covered with a sheet of wax paper.

Oreo Snowballs

4. Place your rolled balls into the freezer for at least 10 minutes.

Oreo Snowballs

5. Remove the Oreo balls from the freezer; melt your white chocolate according to package directions.

Oreo Snowballs

6. Dip each cookie ball in white chocolate. You can use your fingers, a spoon, two tooth picks…whatever works best for you to dip your Oreo balls. Place chocolate-covered balls on another sheet of wax paper and immediately sprinkle them with white sugar crystals – they dry fast!

Oreo Snowballs

7. As soon as the white chocolate has hardened, your snowballs are ready to eat!

Oreo Snowballs

What are your favorite things to do on snow days (or just run-of-the-mill days off of school)?

I’m excited to welcome Claire from SumoChef for this guest post recipe today. Don’t these brownies look amazing??

For someone who loves baking, I make sure that I whip up unique and straightforward recipes for anyone to enjoy. It’s fun trying to mix everything together and create the perfect outcome, with just about everyone enjoying it. One of the things I have always wanted to put together is cream cheese and chocolate! I do love myself a chocolate cheesecake, but I decided to do something different and create a sweet cream cheese icing to be topped on a moist and chocolatey brownie. And that is how the Brownie Cream Cheese recipe came to be!

Brownies Cream Cheese Recipe

Delicious and loved by everyone, it’s not only a delight to eat, but very easy to make. So read on as I show you how to create this yummy brownie!

Brownies Cream Cheese Recipe

Brownie Cream Cheese Recipe

This Brownie Cream Cheese recipe has the moist and decadent brownies topped with wonderfully tart and sweet cream cheese icing. A straightforward and indulgent dessert just about anyone will enjoy!
Brownies Cream Cheese Recipe

Brownie Cream Cheese

Prep Time: 30 minutes

Cook Time: 60 minutes

Total Time: 1 hour, 30 minutes

Yield: 12 brownies

Ingredients

  • 3.5 ounces (100 grams) cream cheese
  • 1/4 cup (30 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups (120 grams) cake flour
  • 4 Tablespoons (25 grams) cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2/3 cup (150 grams) melted butter
  • 1/2 cup (100 grams) sugar
  • 4 Tablespoons (25 grams) chopped almonds
  • optional: 2 Tablespoons (30 milliliters) coffee

Instructions

  1. Prepare the cream cheese and place it in a bowl, beating it until it's mashed. Add the icing sugar and vanilla extract, whisking all ingredients until it's creamy. Crack one egg into the bowl and beat until smooth.
  2. Sift the cake flour, cocoa powder, baking powder, and baking soda into a bowl and set it aside.
  3. In another bowl, add melted butter with the sugar, stirring until well incorporated. Then insert the other egg, whisking all the ingredients until beaten and combined. Pour the coffee and add the sifted flour mixture, mixing everything until it has the consistency of brownie batter.
  4. Set aside one small portion of the brownie batter and add it to an icing pipe. With the rest of the brownie batter, fold in the almonds and mix everything together until the almonds and batter are blended.
  5. Put the brownie batter in a nine-inch brownie pan, using a spatula to even out the layer. Add the cream cheese mixture after that, spreading or moving the pan around until the cream cheese is spread evenly around the brownie batter.
  6. With the small portion of brownie batter, squeeze and add vertical lines onto the brownie mixture. After that, use a toothpick to swirl lines for an attractive design.
  7. Bake the brownies for 55 to 65 minutes at 150 degrees Celsius (approximately 300° F). Once the brownies are baked, turn off the oven and take the pan out, covering it with foil. Put it back in the oven to let it cool for a few minutes.
  8. Take out the brownies and cut it into even sliced. Serve and enjoy!

Pro-Tips to Follow:

Wondering what you can do to make this Brownie Cream Cheese recipe even better? Check these pro tips out!

  • Avoid letting your cream cheese sit out for too long to prevent any bacteria from coming into it. As much as possible, use all fresh ingredients at room temperature, preparing and using it within two hours.
  • If you’re a coffee drinker, these brownies are delicious served with a cup of coffee. For the kids, pair it with ice cream or top it with slivers of pistachio for a crunch!
  • Brownies Cream Cheese Recipe

  • If you’re having a hard time sifting, I recommend that you invest in a good flour sifter to make things much easier. The better equipment you have, the more chances you have at improving!
  • When twirling the piped brownie batter and cream cheese mixture, I recommend you to swirl it in random directions or circles, making it look like they have cute circles and swirls on top.

Hi guys!

What a week! I’ve been working like crazy to prepare for my LuLaRoe business launch….and then I got sick last week. And on top of that, we started refinishing all of our banisters and painting our kitchen (which means that the cereal and sandwich fixings are in the family room, next to the piano, and the rice and sugar and spices are on the landing of the stairs).

It’s kind of chaotic around here. But, the kitchen is taking shape (it looks so pretty and bright!) and I got my official call from LuLaRoe and placed my first two orders. I can’t wait for the rest of my inventory to get here! I’m planning my Facebook launch for the weekend of February 17-18, so I hope to see you there!

Early in our marriage (20 years ago or so), my husband and I found an enormous cookbook all about baking (in other words, it was full of cookies and cakes and breads and pies. Yum!). He started making Peanut Butter Blossoms (sometimes called Black-Eyed Susans or Peanut Butter Kiss Cookies) so long ago that I can’t remember a time when these weren’t his famous cookies.

Simply the best peanut butter blossoms cookies recipe ever. These classic cookies turn out perfect every time!

I guess 20+ years IS a long time to be making the same recipe.

These cookies are my hubby’s signature treat, and everybody loves them. They really are the BEST peanut butter blossoms I’ve ever had! There’s something about the small cookie topped with a Hershey’s Kiss that is totally, completely addicting. I can never eat just one!

(Even though it would probably be better for me if I DID eat just one…)

Oh, chocolate. I can’t get enough of you.

These easy chocolate crinkle cookies from Food Fun Family couldn't be easier to make. This recipe only calls for 4 simple ingredients, but they turn out moist and delicious every time!

Lately, any time there’s some down time at home, my 10-year-old son BEGS me to make some cookies, but he always ONLY wants to make chocolate chip cookies.

Not that there’s anything wrong with chocolate chip cookies. They’re wonderful. Delicious. Chocolatey.

But there’s a whole other world of chocolate cookie goodness out there, and I’m dying for him to discover the beauty of trying something NEW.

These easy chocolate crinkle cookies from Food Fun Family couldn't be easier to make. This recipe only calls for 4 simple ingredients, but they turn out moist and delicious every time!

I think I may have convinced him that there are other cookie options that are worth his attention after my friend shared this recipe with us.

The thing I love about these cookies is

1) they are so stinking easy. Like, they couldn’t be easier.

And 2) they are pretty much always soft and moist and delicious.

And they’re SO CHOCOLATEY. And they’re covered in powdered sugar. Really, they’re a kid’s dream. And a mom who has worked all day and just wants some chocolate already’s dream. Phew! That was a mouth-full. Try saying that a few times with a soft and chewy cookie in your mouth.

These Triple Chocolate Waffles with Raspberry Sauce are light and fluffy, with just the right amount of chocolate and sugar. Cocoa powder, TruMoo chocolate milk, and semi-sweet chocolate chips combine to make the perfect chocolate waffle for a special breakfast treat! They’re delicious enough on their own, but with the addition of a homemade raspberry sauce, this is a Valentine's Day breakfast to die for!

Tis the time of year for hot chocolate, and I have a new favorite way to enjoy it. It’s the easiest, tastiest, creamiest hot chocolate ever – and all I have to do is heat up a mug of TruMoo chocolate milk. Seriously! You’ve got to try it! My youngest son is a hot chocolate fanatic, and it has passed his test. I love giving it to him because I know that he’s getting nutrition that he needs. Plus, TruMoo has NO artificial growth hormones*, NO high fructose corn syrup and a delicious taste kids (and adults!) love.

They’re delicious enough on their own, but with the addition of a homemade raspberry sauce, this is a Valentine's Day breakfast to die for!

Because we’ve been enjoying TruMoo HOT this month, I figured it would be fun to use it in a hot breakfast recipe for Valentine’s Day (my favorite!). And what better to celebrate Valentine’s Day than chocolate and red berries?

The answer is…there is nothing better.

As picky as my son is about his hot chocolate, I’m pretty picky about my waffles. I was concerned before starting my recipe that these waffles not be too sweet or dense or dessert-like because I wanted them to be appropriate for a special breakfast. I was pleased that these waffles were light and fluffy, with just the right amount of chocolate and sugar. I had my husband test taste the very first waffle that came off the waffle iron, and he was so impressed that he immediately asked for another one.

Ingredients
Waffles:
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 2 eggs, beaten
  • 1 cup TruMoo chocolate milk
  • 4 tablespoons butter, melted
  • ½ cup miniature semi-sweet chocolate chips
Raspberry sauce:
  • 1 cup frozen raspberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • ½ cup cold water
  • 1 tablespoon lemon juice
Instructions
  1. Preheat waffle iron.
  2. Add all waffle ingredients except for the chocolate chips into a medium mixing bowl and stir or beat just until thoroughly mixed and smooth. Stir in chocolate chips.
  3. Pour waffle batter onto heated waffle iron and cook according to your waffle iron's directions. Remove waffle when cooked through and keep warm until ready to serve. I like to stick mine on an oven-safe plate in a warm oven.
  4. Serve with raspberry sauce and whipped cream and a side of TruMoo hot chocolate or make it simple and serve with powdered sugar (and more hot chocolate, of course!).
To make the raspberry sauce:
  1. Toss the frozen raspberries with sugar and cornstarch. Add raspberry mixture to a small saucepan over medium heat. Add cold water and lemon juice and stir. Continue stirring for several minutes, until raspberry sauce thickens and becomes translucent and a darker shade of red. Remove from heat and pour, hot, over your waffles.
  2. Note: I did not have to mash my raspberries, because by the time the sauce was finished cooking, they had softened and broken up on their own. If you have large chunks of berries in your sauce, you may want to mash them before serving.
Notes
Note: this recipe will yield a different amount of servings depending on the size of your waffle maker. We made about 8 waffles on ours.

Instructions
  1. In a large bowl stir together all ingredients until they are thoroughly combined.
  2. Add a bit more coconut oil if you find your mixture is too thick.
  3. Transfer mixture to a container with a tight fitting lid - mason jars are quite handy for this.
  4. If you are making this to give as a gift be sure to create a simple handmade tag letting the recipient know the “flavor” and maybe the ingredients. I'm including a simple gift tag here that you can print off and use for free.

To Use Your Sugar Scrub:

1 – Scoop out a generous amount onto damp skin, massage in a circular motion, rinse completely away, pat skin dry with a towel.
2 – Sugar scrub will be good stored for several months in an airtight container.

How to Print Labels To Give this Sugar Scrub as a Gift

Here’s a simple label you can use for the top of your jar. I’ve included one graphic image, and there are 2 easy ways you can use this. First, save the image to your computer.

Option #1 is to go to Avery Design & Print Online and use their free templates program to print them off on their stickers. Just enter design #22807 in the “start a new project” box and then click go. That will bring you to a page of lots of templates. If you want to use my design, click on the blank white circle (the first “design” there) and click next again. You’ll then see a big “graphing” circle in the middle of the screen. Click on “images” on the left menu and upload this image. Drag it til it fits the entire space provided. Viola! You should see the design populating the entire sheet to the right. You can print them on Avery labels OR you can just print them on any paper. (get the Avery circle labels here)

Option #2 is to open up a word document and insert this image as a file into a blank document. You can add as many as you want on a sheet, dragging to make it your desired size. I would probably opt to print on card stock versus regular printer paper.

If those options sound too complicated, then you can always add a scrap of fabric under the rim of your mason jar or tie a simple ribbon around the lid. Instant present-ready!
