When I first met Kristin, I had just had my third baby. I had three kids 4 and under and was in the throws of postpartum depression, though I didn’t know it at the time. Kristin was a slightly more seasoned mom who was an invaluable resource and support for me during what was a rather difficult time in my life as a young mom.

Kristin became my cheerleader. She encouraged me to pursue my budding talent as a photographer, and her four kids became my first official photography clients. Those were back in the days of film cameras, and I spent many hours in my make-shift dark room in my upstairs bathroom getting those photos to turn out “just right.”

Kristin is still my greatest cheerleader, though we are both at different stages in our parenting journeys now. My kids are no longer babies–they’re in school full time while I work from home full time. Three of Kristin’s kids are in college, with her youngest still in high school. She stays extra busy as the president of our women’s organization at church.

We laughed about the fact that we’re getting older – fast – but that so much of life is better now than it was 11 years ago. Instead of being in the middle of child-bearing years, we are now approaching a huge change….one that most women don’t seem to want to talk about.

The 2nd Talk – What are Menopause and Perimenopause?

I still feel young. I still AM young! When I happened to let slip the word “perimenopause” in front of my husband recently, he looked at me like I was crazy. And yet…. I’ve been noticing symptoms of perimenopause (and comparing/discussing with my friend Lisa) for the last year.

I might have had my doubts (could it really be happening to me so soon?) until my mom mentioned that something I was dealing with while I was at her house this summer sounded like the early stages of menopause. I believe now.

It doesn’t seem all that long ago that my mom had “The Talk” with me…preparing me for my first period. It’s crazy that I’ve now had that same talk with my own girls, and now I’m having “The 2nd Talk” with my mom as I begin this next stage of womanhood.

You know what? Bring it on! Menopause is not something to be scared of, and certainly not something that women should feel they have to deal with alone.

My “2nd Talk” Spa Day

I think everyday should start like today. I picked Kristin up at 9:00 this morning and we headed to a local day spa. We spent a full 90 minutes getting a full body deep tissue massage. Yes, our bodies are a little bit older and hold quite a bit of tension, but the pain was totally worth it. We both left the spa feeling light and refreshed. It was Kristin’s first massage….but I’m sure it won’t be her last.

Kristin and I headed out to lunch after our spa date was over, and we promised each other to make this a tradition. The lunch AND the massage. The talking and sharing stories, too. It’s what we women do best.

We rip and cut out Box Tops, collect them in a drawer in the kitchen, and then hand them in to the elementary school monthly. Most months, we give $2-$5 worth of Box Tops to the school. According to Boxtops4education.com, our elementary school has already collected $78.90 for the 2012-2013 school year. That may not sound like much, but it adds up so fast.

Our #Jingit4edu shop at Walmart

Yesterday, I downloaded the app, played around with it a little, and then headed to Walmart to do a little shopping. With AJ as my helper, we checked in to Walmart on the app and then scanned products on the list. After each scan, I answered a few questions (usually 2-5) on the app and was immediately awarded cash. Many of the products, like the General Mills cereals and snacks,  also awarded my school extra Box Tops just for scanning them in the store.

By the end of the evening, after shopping and watching some video ads at home, I had earned just under $8.00. It may not be a ton of money, but it didn’t take me much time at all (maybe 30 minutes total). I’ve said it before and I’ll say it again: I love the Spring. I love the regrowth of flowers and grass and trees. I love the fresh air coming in through my windows and the warmth and sun before the Summer humidity hits. But I do not love the allergies that come with Spring.

For years, I was pregnant or nursing and simply endured through the Spring time itchy eyes and constant sneezing. But I realized a few years ago that I didn’t need to endure my Spring time allergies anymore. I gratefully went out to the pharmacy to snatch up the first bottle of allergy medicine I could find. I really had no idea what I was looking for. I just wanted relief.

The story of my allergy medicine mishap is legendary in our house now, even though it only happened 3 years ago. You can read the whole amusing story if you’d like, but let’s just say that I did NOT get a non-drowsy allergy medicine. I was downright loopy.

I’ve tried allergy pills that work for a few hours, and others that last for a full 24 hours, and I am happy to say that I am almost completely symptom-free this season, thanks to Allegra. I take one pill each morning with breakfast, and I’m not itching and sneezing all day long. It’s a miracle and I feel like a totally new person.

This week, I was challenged to think of how Allegra played a part in my beauty regimen, and I realized that it’s part was huge. When I am suffering from allergies, my eyes are red and itchy, and even if I put eye make-up on in the morning, it will inevitably be rubbed off by lunch time.

And then there’s the OTHER issue…the part where my “beauty regimen” is almost non-existent lately. All too often, I spend the majority of the day looking like this:

I want to change that. I don’t like the feeling of growing out of all of my clothes, wearing comfortable pants and a t-shirt simply because I know I’ll be working at the computer all day. I have been working on getting back into a regular exercise routine, and because the weather is so perfect right now, that has included many morning walks. I love getting my exercise outside, but again – being outdoors is only possible when I am not itching my eyes out or sneezing constantly.

And I made myself a promise – a promise to not only take better care of my body, but also to take pride in the way I look and dress each day – even if my family are the only ones who will see me that day.

I set out for CVS on Thursday, armed with coupons, to get some new make up and stock up on some more Allegra. There are two things that I can’t live without when it comes to make-up: foundation and lipstick. Even on a lazy day, I wear those two things. I figured, though, in order to make a difference and add a little something more, that I should pay more attention to my eyes.

I scanned the shelves at CVS and found a few new items.

Going from DRAB to fab

I picked up some Advance Radiance Age-Defying foundation from Cover Girl (because I do need that age-defiance these days), some ColorStay mineral lipglaze from Revlon (color 500 – Lasting Shimmer), and some Maybelline Expert Wear eyeshadow (crease-free and fade-proof) in “Sunbaked neutrals.”

I snapped a picture of the example at the Maybelline display so that I could attempt to recreate the look at home. I might not be a make-up expert, but my eyeshadow DID prompt my 15 1/2 year old daughter to compliment me. Not too shabby, in my book.

How leftover roast beef became Gourmet French Dip sandwiches

I have been eyeing the Easy Au Jus recipe that Mama Loves Food posted quite a while ago (it’s one of those recipes waiting on my Pinterest Dinner board).

Luckily, this weekend I had a really good excuse the try the recipe, since I had to figure out something to do with the leftover roast beef and Ecce Panis bread in my kitchen.

I bought three loaves of Ecce Panis bread by Pepperidge Farm at Walmart the other day. All I had to do was stick the loaves in the oven while I set the table and cut the meat. It couldn’t have been simpler. The smell of freshly baking bread roused the entire family and I didn’t have to call anyone in for dinner.

Oh my goodness. I think the entire family DIED and went to heaven while eating the meal. The funniest part? After making a pretty darn good roast and some excellent au jus sauce, thanks to April at Mama Loves Food, do you want to guess what everyone was raving about?

Right. The bread.

Even the day after, when we still had a little bit of meat left over (did I mention it was a really BIG roast?), my husband complained that it wasn’t as good without the bread. True story.

Here’s how we made our unforgettable, must-make-again meal with leftovers:

I used April’s Easy Au Jus recipe, except that I used water instead of white wine, and I reserved the juices from the crock pot to use instead of straight beef broth. The ingredients are simple, and the thing I love best about this recipe (and the reason it works so well with leftovers) is that you don’t HAVE to have a fresh roast or pan drippings to make it.

So the ingredients I used were:

  • olive oil (maybe 2 tsp)
  • 1/4 cup red onion, chopped
  • 1 teaspoon garlic, minced
  • 1/8 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 1/2 cups beef broth (juices from roast)
  • 1 teaspoon flour

I should also note that I cooked my roast with Montreal Steak seasoning, so there was plenty of that in the juices. When I make this again, I will certainly add a few sprinkles of Montreal Steak for some more of that flavor. Please see Mama Loves Food for the instructions

While the au jus was heating up, I thinly sliced my leftover roast. I also put the Ecce Panis loaves into the oven to bake, giving them enough time to cool slightly before slicing them.

I cut each loaf into thick slices. I loved that the outer crust was flaky and crunchy, but the inside was soft and spongy and perfect for soaking up au jus.

To serve, each person made a sandwich to their liking (some of us put more meat in it than others…) and I set out small cups or bowls of au jus sauce to dip. I paired the meal with a freshly tossed salad.

Now that Easter is only a few days away, I’m thinking about how I can make my Easter meal leftovers something new, fresh, and exciting. I’m pretty sure that my future holiday leftover meals are going to include some Ecce Panis rolls…

Sorry I’m late getting my PhotoStory Friday/ Give Me Your Best Shot post up. And please forgive my lack of fancy-camera pictures. I’ve been a little preoccupied partying with my kids.

We’re celebrating the start of Spring Break!!

Today the kids were in school….and tomorrow we all get to sleep in. Yes, glorious, wonderful vacation. Of course, I’ll still need to work, but just the thought of not having to set my alarm for 5:45 every morning sounds incredibly relaxing. I can hardly contain myself.

In honor of the first day of Spring Break, I threw my kids a party tonight. Granted, I’ve been SO busy this week that I didn’t have a chance to head to the store to pick up the supplies, so I ran to Walmart after dinner. The kids were motivated to clean up (a little) because they knew that I was bringing back some TCBY frozen yogurt.

There’s something about frozen treats that screams of vacations and warm weather and happy times. I couldn’t be more happy about our Spring Break, although by the way the week is shaping up, I’m sure I’ll be sitting at the other end of the break wondering where all the time went.

Spring Break is a traditional time for us to explore our area. While we almost never go to downtown DC on “regular” days, we always make a point of heading to DC during Spring Break. We have a picnic at “airplane park” with friends and spend a day “old-city-hiking” at Harper’s Ferry. Oh, Spring Break is a wonderful, glorious time.

Definitely cause to celebrate….

Oh, Spring Break. I love you!

PS – in case you are wondering, I haven’t had TCBY frozen yogurt for ages, but it was one of my favorite treats as a teen. We had a TCBY not far from our house. Now that TCBY is at the grocery store, I will definitely be eating it more often.

The kids were slightly skeptical about eating frozen yogurt….all but my oldest, KitKat, who is out tonight. She was so upset that we’d be eating frozen yogurt without her because it’s her favorite. She made us promise to save her some for tomorrow. Luckily for her, as much as we all loved it, there was plenty left for KitKat.

Tonight, I tried some of the cartons (vanilla bean, supreme cookies and cream, and English toffee crunch) but I’m already planning a next time so that I can try their ice cream bars and sandwiches. Have I ever mentioned that I have a *slight* sweet tooth?

There’s something about the fresh air and the emergence of Spring that awakens my senses and makes me energized to be more active, eat more fresh foods, and enjoy the outdoors. This is nothing surprising – I do believe that Spring was meant to be this way.

Spring blossoms

Several days ago, I wrote about my search for a healthy balance. I will probably always be a work in progress – never perfect – but the important thing is that I am making progress.

And guess what? I am feeling happier, healthier, and energized. Here are a few things that have worked for me:

  • I am exercising. I might be starting out slow, but I am staying physically active for at least an hour a day.
  • I am taking a probiotic and daily vitamins. 4X Pro-B Probiotic from Costco.com has been a huge blessing.
  • I am cooking more foods with fresh ingredients (this season is so good fro that goal!)
  • I am spending time each day outdoors. I’m embracing the afternoon time at the park with the kids.
  • I am reading more books. Yes, reading takes time away from work that I could be getting done, but it calms me and keeps my mind active. That’s a good thing all around.
  • I am drinking more water. And more and more….I just ordered some new filters for my favorite water bottle this morning!
  • I am taking time off every afternoon to spend focused time on my kids. We’ve been playing games, reading, and just hanging out.
  • I am getting more sleep (I admit – this weekend was not the best example of good sleep, but I did catch up with a nice Sunday afternoon nap!).
  • I am learning to value my time more, and planning my days and weeks better than I have before.
  • I am doing things for ME.

 

 

While book reading, planning my days, and doing things for me might not be typical things that you find on a healthy-living list, they have made a world of difference to me. I may not be losing weight quite yet (that’s the second part of my goal…) but I am feeling happier. And healthy and happy are so closely tied together.

I mentioned at the beginning of the year that I am not a huge fan of New Year’s Resolutions. I need to lose weight, yes (a fact that I am painfully reminded of each time I look in the mirror or squeeze into a freshly washed pair of jeans). I need to incorporate more activity and exercise into my day, eat fewer sweet snacks and drink fewer Cokes. There are so many thing that I should be doing (things that I know would be good for me). And it all comes back to my word-of-the-year:

I realized at the end of 2011 that my life had become grossly imbalanced. I worked too much, I sat too much, I ate too much, and I didn’t sleep enough.

This past month, I have renewed my determination to reach into even more areas of my life and find even greater balance.

I am determined to drink less sodas….

And drink MORE water.

I will slip off the slippers more often….

And don my sneakers MORE often.

I will snack on fewer of these (hold me back!)….

And opt for a more healthy poppable snack (does it count if my raisins are covered in vanilla yogurt??).

I don’t remember when my fruit smoothie fetish began, but I distinctly recall planning outings just so I could drive by the ice cream shop that served smoothies back in the late 90s. Because there weren’t any good smoothie shops near my home (40 minutes away was a bit far) and because I couldn’t justify $5.00 and a long drive for a small drink, I figured that I’d better experiment until I could make a satisfying smoothie at home.

I’ve now been making smoothies for many years. My husband and oldest daughter are quite accomplished smoothie makers as well. We each have our trademark taste. My husband likes milkier smoothies (and heavy on the bananas); KitKat likes her smoothies heavy on the berries and yogurt; and I am the Orange Juice smoothie girl. I can put just about anything in a smoothie as long as it has an OJ base.

Here's a little secret: I never actually measure out my smoothie ingredients. I just add them til they look right and then add a little more til it tastes right!

Ingredients
  • 1 cup 100% Florida Orange Juice
  • 1 cup plain yogurt
  • ½ cup frozen strawberries
  • ½ cup frozen blueberries
  • 1 banana
  • ⅓ cup Strawberry Quick or vanilla Instant Breakfast
  • 4 ice cubes
Instructions
  1. Dump all ingredients into your blender and blend until smooth.
  2. Looking for an extra treat? Top with a dollop of whipped cream.
  3. Enjoy!

This Winter, thank goodness, has been mild, but I haven’t forgotten the Winters of the recent past that forced the seven of us to stay indoors (cooped up and in close quarters) for days on end.

Snow Days are inevitable during January and February in Washington DC, and as a mother of 5 living in a small townhouse, I MUST be prepared with some snow day activities to keep my kids entertained (you know rather than the alternative of having them tear at each others’ throats…).

Thanks to a quick internet search, I found the perfect white chocolate snowman treat that even my kids could handle.

Crunchy the Snowman

I headed out the other day to get all of the ingredients for the project (you can read all about my shopping trip and my crazy directionally-challenged self in the Google+ story I made with all of my phone pics).

The good news was that I finally made it to Weis, learned about a new grocery store in my area, and got a fancy new club card to add to my wallet (I’m actually truly interested to watch their ads now for deals because their rewards program sounds pretty cool).

After I got home and layed the ingredients out on the table, we got started. Here’s the simple process (and when I say simple, I mean that my 6 year old son made the finished example below just by looking at the pictures!)

Snowman Pretzels – Snow Day Treats

These easy chocolate covered pretzels are easy enough for kids to make and good enough to eat!
Ingredients
  • - container of large pretzel rods
  • - 1 cup white melting chocolate (I use almond bark)
  • - mini chocolate chips
  • - orange Tic Tacs
  • - Fruit by the Foot (or some kind of fruit leather, cut into strips)
  • - gummy rings or chocolate wafers
  • - gumdrops
Instructions
  1. Melt 1 cup of white chocolate (almond bark) in the top of a double boiler.
  2. One at a time, dip one end of a pretzel rod in the melted chocolate and use the back of a spoon to spread the chocolate two thirds of the way down the rod.
  3. Set the pretzels on a sheet of waxed paper and let chocolate dry for a few minutes.
  4. Press on mini chocolate chips for eyes and buttons and a Tic Tac for the carrot nose.
  5. When the chocolate has hardened, tie the Fruit by the Foot around the snowman's "neck" for a scarf. Stand the pretzel rods in a stable glass.
  6. For each hat, stretch a gummy ring over the narrow end of a gumdrop and secure it on the pretzel rod with a dab of melted chocolate. You can also "glue" a gumdrop onto a chocolate wafer and secure the hat onto the pretzel rod in the same fashion.

After we were done with the pretzel snowmen, we dipped some Oreo cookies in the melted white chocolate (because who wants melted chocolate to go to waste??) and added the same embellishments to make them into little snowman heads. All in all, it was a great activity for my kids – a perfect snow time time-filler. Heck, I’d even make these snowmen treats to cool off a hot summer day (in other words, they are yummy any time of year).
