One of my family’s Spring Break traditions is to spend lots of time together in the kitchen. Spring Break for my kids starts tomorrow (we have a late one this year!) so I’m just barely starting to think about all of our spring traditions.
We love to hard boil and dye eggs, make batches and batches of sugar cookies and bowls full of homemade frosting in a rainbow of pastel colors and then decorate them (and eat them for days!).
It’s all about the Easter food!
This year I’m in mourning because our kitchen is STILL only half-functional, and it’s going to be a bigger challenge to make dyed Easter eggs, sugar cookies, or other treats. I’m so excited for the weekend when we’ll be getting together with our friends for a big Easter dinner (and I can use their kitchen to cook all day!).
If you’re luckier than I am this week and have a full-functioning kitchen, these cake ball eggs are not only super cute and festive, but they are beyond delicious, too! Use funfetti cake mix for a fun look inside your cake ball eggs, and mix up the flavors and use yellow cake mix with strawberry frosting. The great thing about this recipe is that there’s so much room for variations in color and flavor!
Here’s what you need to start:
Crumble cupcakes into a large bowl and stir in frosting until completely combined.
Form mixture into 12 egg shapes with your hands and place on a baking sheet lined with parchment paper or wax paper. Place in the freezer for 10 minutes to set.
While cake ball eggs are chilling, grab your fondant. Set aside a small amount of uncolored fondant for the polka dots at the end.
Work pink GEL food coloring into larger portion of fondant until the desired color is consistent throughout. Separate fondant into 3 equal-sized pieces, set 2 aside and work with one piece at a time.
Roll one section of fondant flat (about 1/8-inch thickness).
Cut rolled out fondant into 4 sections with a sharp knife.
Remove eggs from the freezer and wrap one egg in one of the sections of fondant you just cut.
Repeat until all eggs are covered in fondant. Do not try to work the egg too much, just get it covered–the more you handle the fondant, the more sticky it will get.
Place eggs into the freezer for another 10 minutes to set. Remove eggs from freezer and make tiny circles with the white fondant you set aside earlier; mash those tiny circles randomly onto the outside of the eggs.
Chill your Easter egg cake balls until ready to serve.
These Easter egg cake balls are fun to make and delicious to eat. They're the perfect easy Easter recipe that everyone in the family will enjoy.

12. Place eggs into the freezer for 10 minutes to set.
13. Remove eggs from freezer and make tiny circles with the white fondant you set aside earlier.
14. Mash those tiny circles randomly onto the outside of the eggs.
15. Place eggs back into the freezer until ready to serve. Serve cold.

]]>My alarm goes off at 5:00am every morning, Monday through Friday. That’s life with a house full of teenagers who need Mom to wake them up to get ready for school. So when my alarm went off this morning at 5, I was pretty excited to see an email from the school district announcing a 2-hour delay due to icy roads. I set my next alarm for 7:00, and promptly fell back to sleep.
At 7, I checked my emails again. Sure enough, the school district had sent an update: school is cancelled! We have a SNOW DAY (with no snow on the ground. Go figure!).
Lazy days with no school call for baking projects with the kids! I’m currently brainstorming what we can make together today.
Last time we had a snow day, we made these delicious, can’t-stop-eating-them Oreo snowballs. I was kind of hoping that the kids (and my husband) wouldn’t like them as much as they did…so that I could claim more for myself. I suppose it’s a good thing that I was forced to share them.
My family loves our Oreo cookies, but the Oreo snowballs that we made were over-the-top amazing. These snowballs are WAY more fun than the cold kind we make outside…(and they taste better, too!). Don’t get me wrong. We love the snow, but we enjoy staying cozy and dry even more!
Did I mention that these require only 3 (possibly four) ingredients and that they are NO-BAKE?! Unless you are actually snowed in and can’t get to the store to buy ingredients, you really have no excuse.
Here’s how easy it is to make Oreo Snowballs:
1. Crush the Oreo cookies in a blender or for more hands-on involvement, place Oreos in a gallon size freezer bag and have the kids roll them into crumbles with a rolling pin.
2. Blend softened cream cheese into the crushed Oreos. You can also blend the two by placing both ingredients into a gallon size zip top bag and kneading the cream cheese into the Oreos. Kids love this!
3. Roll the Oreo-cream cheese mixture into balls (about a tablespoon each). Place your balls on a baking sheet covered with a sheet of wax paper.
4. Place your rolled balls into the freezer for at least 10 minutes.
5. Remove the Oreo balls from the freezer; melt your white chocolate according to package directions.
6. Dip each cookie ball in white chocolate. You can use your fingers, a spoon, two tooth picks…whatever works best for you to dip your Oreo balls. Place chocolate-covered balls on another sheet of wax paper and immediately sprinkle them with white sugar crystals – they dry fast!
7. As soon as the white chocolate has hardened, your snowballs are ready to eat!

]]>Thanksgiving is just around the corner, and I’m both in shock and ecstatic that it’s coming so soon. I look forward to Thanksgiving food ALL YEAR LONG. It really is my favorite dinner of the whole year, and I love that I cook so much that we can eat leftovers for days and days.
This year, I’m extra excited because Thanksgiving also signals a very special event! My husband and I are going on a cruise! I can’t wait to have some away time and relax instead of work-work-work. As much as I LOVE my LuLaRoe business and my blog and my big family, they sure do keep me busy!

]]>Have you noticed that you don’t truly appreciate something until you no longer have it? That’s exactly what I’ve been experiencing the last few days. My computer stopped “working” with my home wifi. It used to work. Now it doesn’t. All of the other devices in the house work just fine. Sigh.
I miss my wifi.

I love the holidays.
When I was growing up, holidays meant time with my extended family and some of the best foods ever. My mom, grandma, and all of my aunts would make their most delicious dishes and we would enjoy an amazing feast, regardless of which holiday we were celebrating.
The holidays changed quite a bit for me once I got married and moved across the country from the rest of my family. I still love the foods of the holidays, of course. But now it’s just a bigger challenge because all of the cooking and baking responsibility are on my shoulders.
I don’t want to skimp on all of my favorite holiday dishes, but I’m always on the look-out for recipes that make my holiday cooking easier and less time-intensive. Because time with family and celebrating the holidays together is important, I don’t want to spend the entire holiday by myself in the kitchen!
I love cooking, but I like spending time with the family even more, and nobody has time to be slaving away alone in the kitchen, especially when they’re supposed to be enjoying the holidays with family and friends. I’m guessing I’m not the only one that feels this way.
I have found a new family-favorite recipe that is a perfect addition to the holiday menu. It’s delicious and meets my picky holiday-worthy standards. And it’s fast and easy, which meets my holiday craziness needs!
When I told my kids and husband what I was making the other day, they just about died. They couldn’t wait for the crescent rolls to be done (and for me to take pictures). Once they were all done, you wouldn’t believe how quickly 16 Nutella and cheesecake-filled crescent rolls disappeared. No one could eat just one!
