One of my family’s Spring Break traditions is to spend lots of time together in the kitchen. Spring Break for my kids starts tomorrow (we have a late one this year!) so I’m just barely starting to think about all of our spring traditions.
We love to hard boil and dye eggs, make batches and batches of sugar cookies and bowls full of homemade frosting in a rainbow of pastel colors and then decorate them (and eat them for days!).
It’s all about the Easter food!
This year I’m in mourning because our kitchen is STILL only half-functional, and it’s going to be a bigger challenge to make dyed Easter eggs, sugar cookies, or other treats. I’m so excited for the weekend when we’ll be getting together with our friends for a big Easter dinner (and I can use their kitchen to cook all day!).
If you’re luckier than I am this week and have a full-functioning kitchen, these cake ball eggs are not only super cute and festive, but they are beyond delicious, too! Use funfetti cake mix for a fun look inside your cake ball eggs, and mix up the flavors and use yellow cake mix with strawberry frosting. The great thing about this recipe is that there’s so much room for variations in color and flavor!
Here’s what you need to start:
Crumble cupcakes into a large bowl and stir in frosting until completely combined.
Form mixture into 12 egg shapes with your hands and place on a baking sheet lined with parchment paper or wax paper. Place in the freezer for 10 minutes to set.
While cake ball eggs are chilling, grab your fondant. Set aside a small amount of uncolored fondant for the polka dots at the end.
Work pink GEL food coloring into larger portion of fondant until the desired color is consistent throughout. Separate fondant into 3 equal-sized pieces, set 2 aside and work with one piece at a time.
Roll one section of fondant flat (about 1/8-inch thickness).
Cut rolled out fondant into 4 sections with a sharp knife.
Remove eggs from the freezer and wrap one egg in one of the sections of fondant you just cut.
Repeat until all eggs are covered in fondant. Do not try to work the egg too much, just get it covered–the more you handle the fondant, the more sticky it will get.
Place eggs into the freezer for another 10 minutes to set. Remove eggs from freezer and make tiny circles with the white fondant you set aside earlier; mash those tiny circles randomly onto the outside of the eggs.
Chill your Easter egg cake balls until ready to serve.
These Easter egg cake balls are fun to make and delicious to eat. They're the perfect easy Easter recipe that everyone in the family will enjoy.

13. Remove eggs from freezer and make tiny circles with the white fondant you set aside earlier.

15. Place eggs back into the freezer until ready to serve. Serve cold.

]]>Happy First Day of Spring! Yesterday we had gorgeous spring-like weather and sunshine. Today and tomorrow, the biggest snow storm of the season is hitting us. What a way to welcome the spring!
My kids have spring break next week, and I’m already looking forward to having some extra time to bake Easter goodies (we still LOVE to make sugar cookies and decorate them with homemade frosting, even though my kids are big now).

My kids start Spring Break tomorrow, which means that the next week and a half will be all about sleeping in, baking our favorite Easter treats, and getting ready for an epic Easter egg hunt. In the past, this week of Spring Break has also meant big cousin sleep overs and always ALWAYS lots of food to feed lots of hungry kids and adults.
Basically, this time of year is about food and family (and to go along with my website, a good dose of FUN, too). I love to remind my friends and readers that preparing delicious meals – whether they’re for an ordinary family dinner or a big holiday brunch – doesn’t have to be complicated or time-consuming. Satisfying, family-friendly foods can be basic, using ingredients you are probably already adding to your shopping cart, like Johnsonville breakfast sausage links and bread. Did you know that you can find Johnsonville breakfast sausage in the refrigerated section of your grocery store, next to the bacon? I love that the sausage links are fresh, not frozen, and that I cook them up when I’m ready to eat.
We love cooking hot breakfast foods for breakfast, brunch, and dinner. There’s really no “wrong” time to eat things like sausage and French Toast, right? I love eating my French Toast with a side of sausage, because the sausage cuts the sweet flavor of the French Toast just right. Plus, my kids and I LOVE dipping our sausage links in maple syrup (despite what my mom thinks, sausage is better with syrup!), so they really are the perfect breakfast foods to pair together.
This week, I not only prepared French Toast and Johnsonville sausage links together, but I meshed them into one fantastic crowd-pleasing menu item, perfect for your Spring brunch, breakfast-for-dinner meal, or weekend breakfast.
Have you ever tried wrapping your French Toast around sausage links? This was a first for us, but it won’t be a last! It was a total hit for the kids and adults alike.

]]>My feet take a beating during the winter. They get so dry! As we enter spring time, it’s time to pull the sandals back out of the closet and show off our feet again!
Whether it’s a long day at work, a full day of shopping, or a backyard soccer game with your kids, there are times we all need a little foot pampering. I’m looking for something that soothes tired feet but is safe to use. It’s even better if it isn’t expensive, right? I have just the thing for you in this Lemon Mint Foot Soak. It softens, moisturizes, and leaves your feet ready for a night of dancing or a day in yoru favorite spring sandals.
Ingredients:
3 cups epsom salts
1 cup baking soda
2 Tablespoon coconut oil
15 drops peppermint essential oil
10 drops lemon essential oil
1 Tablespoon matcha green tea powder (optional)
Directions:
1. Soften coconut oil in the microwave for 10 seconds to make it easier to mix.
2. Combine all ingredients in a large bowl until evenly mixed. I used matcha green tea powder to give a little natural color to the foot scrub. You can leave it out if you don’t have any on hand or use a soap colorant to give it a green tint.

To Use:
