Have I mentioned my love for Thanksgiving foods enough recently? It’s true. I adore the traditional flavors of the holidays. And while I do enjoy a Thanksgiving turkey, I know that many of my friends and family prefer vegetarian dishes, and so I love finding lots of options that everyone can enjoy – the vegetarians and the meat-lovers alike.
Here is just a sampling of the meatless recipes that stood out to me in last week’s Vegetarian Thanksgiving Recipes Fresh Flavors Swap linky party (check out that link for even more vegetarian dishes to try!). There are so many amazing meat-free choices out there…so even when we are serving the holiday bird, I like to serve up plenty of meatless options to round out the Thanksgiving table.

Thanksgiving is one of my favorite days of the year. If I had to pick ONE meal of the whole year that was my favorite, it would definitely be Thanksgiving dinner. I love everything about it…all the way down to spending 2 days preparing it and 15 minutes to eat it. I’m also pretty fond of days and days of Thanksgiving leftovers. My mouth is watering just thinking about all of my favorite, traditional holiday dishes, passed down from my family as well as many new recipes that I’ve gathered over the years.

Thanksgiving simply wouldn’t be Thanksgiving without a big batch of mashed potatoes. And these mashed potatoes were the best mashed potatoes I have ever made (rivaling the best restaurant mashed potatoes, if I do say so myself).

I was so pleased with how well these glorious garlic herb mashed potatoes turned out, and what’s better is that they can easily be made ahead and heated whenever you need to serve them. One of my biggest challenges on Thanksgiving (and other holidays where I’m preparing a large meal for many…wait. That sounds like a typical night at our house!) is that I have to make too many things at once. I love finding recipes that can be made ahead and then made ready when we’re ready to eat.
Of course, this mashed potatoes recipe is perfectly suited to eating right away, but if you do need some extra time (whether you’re making them in the morning and keeping them warm in the crock pot or making them the day before and heating from cold before the big meal) these potatoes are perfect for heating and serving later!
If your potatoes get a little dried out after being in the fridge, just add a little bit of milk.

I added some delicious pan gravy to these potatoes, along with a side of carrots cooked in my cast iron skillet. My mouth and tummy were very, very happy!

I don’t know about you, but I am not ready for October to be over! Where did the month go? I am going to miss the fall leaves and the glorious colors but I do admit that I’m more than a little excited for Thanksgiving to be coming soon. I LOVE the foods of Thanksgiving and my mouth waters just thinking about the 7 Layer Salad and the Pumpkin Pudding Cake and the turkey and the mashed potatoes and the Crescent Rolls that I’ll be eating at the end of the month. I guess I can let go of October…November is pretty cool, too.

I grew up surrounded by grandparents, aunts, uncles, and cousins, and we always got together at Grandma and Grandpa’s house for holiday meals. Everyone had their specialty dishes that they’d bring every year, and with a big family like ours that meant a TON of delicious food. Each dish became an important part of our holiday tradition, and we noticed each time that a favorite recipe was missing. Note: affiliate links included within this post.
I have continued to make our traditional holiday“Wonderful” for the last 20+ years, and the chocolate version is an all-time favorite dessert in our house. This year, I thought I’d try giving our Thanksgiving classic dessert a pumpkin twist, and I cannot begin to describe how delicious it was.
“Wonderful” starts out with a basic shortbread-type crust baked in a 9×13 pan (I added finely crushed pecans to the pumpkin version because pumpkins + pecans = perfection). On top of the crust is a cream cheese-powdered sugar-Cool Whip layer. Once that has chilled for a little while, you add a layer of pumpkin spice pudding (a seasonal treat that can be found near the regular puddings…but don’t fret if you can’t find any. You can substitute any pudding (the small 3.4 oz. boxes) for the pumpkin. Top the layers off with the rest of the Cool Whip and a sprinkling of some additional crumbled pecans.
The only question is whether I like the chocolate version or the pumpkin version better…

Pumpkin Instant Pudding is a seasonal treat made by Jello, and can be found in October and November next to the rest of the pudding boxes. If you can't find pumpkin pudding, or if pumpkin isn't your thing, then you can substitute your favorite pudding flavor!
Also, it's totally fine to leave the nuts out.

I have to admit – when I saw that the latest theme for our Fresh Flavors Swap linky party was savory pumpkin recipes (main dishes, appetizers, sides, and more), I thought it would be a real stretch to find many non-dessert recipes using pumpkin. Before last week, I had never cooked any savory pumpkin dishes and I guess I hadn’t been keeping my eyes open for all the recipes that were out there. After this week, I am floored by all of the delicious savory pumpkin recipes that exist! I’m afraid I’m going to drive my family crazy trying a bunch of these…
That’s right, pumpkin is not just for baking! It’s a versatile, healthy, delicious ingredient to use in all sorts of recipes all year long.

]]>You are going to LOVE this pumpkin potato soup – your new favorite soup for winter!
When I think of cooking with pumpkin, I typically think of sweet, baked treats (I’ve made plenty of them over the years!) but I’ve very rarely had savory dishes with pumpkin.
Since tomorrow’s Fresh Flavors Swap is all about pumpkin main dishes, I knew that I wanted to at least attempt to add pumpkin to a dinner this week. I’ve seen pumpkin soup before, but I had never tried it before this week. I wasn’t sure if my family would be keen on pumpkin soup for dinner, so I thought I’d be sneaky and add pumpkin to a hearty potato soup that they’d normally eat.
My little pumpkin soup experiment was a huge success. Everyone in the family loved the soup, and they had no idea that there was pumpkin in it! The pumpkin made the soup thick and creamy and perfect. I can’t wait to make it again!

I based this recipe on a Sausage Potato Spinach Soup recipe I found on Damn Delicious. I thought it would taste great with pumpkin, and I was right!

We’re dedicating this week’s linky to PUMPKIN DESSERT recipes. It’s that time of year, after all! If you have any pumpkin dessert recipes, we’d love for you to link them up below. But first, I have a brand new pumpkin recipe to share!
I had a bag of pecans left over from the chocolate pecan pie I made this summer, and I thought that the pecans would pair perfectly with pumpkin (Whew! That was a lot of Ps!). My kids think I’ve gone a little pumpkin-crazy lately, but I just can’t get enough.
Judging my the number of pecan pumpkin bars my husband has eaten today, I’d say they’re a hit! Unlike a cookie bar that you’d eat with your hands, these pumpkin bars are a little soft (like pumpkin pie filling) to be eaten with your hands. But, really…that’s not a problem. Grab a bowl and a spoon and load up your pecan pumpkin bars with a big ol’ dollop of pumpkin pie spice whipped cream.
So yummy!

I topped my pecan pumpkin bars with a pumpkin spice whipped cream. I rarely measure my ingredients when I make whipped cream - I just pour some chilled whipping cream in a bowl, add some powdered sugar, a dash of vanilla, and a few sprinkles of pumpkin pie spice. Whip with hand beaters until creamy and stiffened. Yum!
