]]>I’m a little behind schedule to get this week’s Delicious Dishes party posted, but I do have a good excuse. Last Sunday, my 93-year-old grandpa passed away and so I took an unexpected, last-minute flight across the country to attend his funeral and then spend a few extra days with my parents. It has been a wonderfully relaxing week. A much-needed break away from work. And despite the fact that I traveled all the way out west for a funeral, I promise it was a happy occasion. A celebration of life and family.
I head back home tomorrow, and I can’t wait to hug my kids.

]]>Hi everyone! I hope you all had a wonderful, memorable, meaningful Memorial Day yesterday. I had an enjoyable day with family and friends at a yearly BBQ. The weather was officially the BEST Memorial Day weather we’ve ever had. It was spring perfection!
I’m still in shock that the summer is so close. It doesn’t feel like it should be (or could be) summer yet! My kids still have 3 weeks of school left (something for which I am grateful!). I am NOT ready for the switch over to summer schedules!
I AM, on the other hand, ready for summer foods, like the availability of so many fresh fruits and berries. Yum!

]]>Hallelujah! The kids are in school. I repeat. The kids are back in school. I LOVE spending time with my kids, and I normally love summer, but this summer took a lot out of me. It beat me. Plus, my kids love school and they are happier with a routine (unless we’re on a road trip. If a road trip is in the equation, we’ll always choose a road trip over just about anything).
These are some happy kids.

If you aren’t from Minnesota you may not be aware of the hubabaloo that the NY Times recently caused when they chose Grape Salad as the dish that best represents our beloved state.
Say what? Grape what?
Those are the questions heard around the state. Rightfully so. Grape salad is a virtual unknown to most Minnesotans, even those born and raised here. I hadn’t heard of it, that is for sure. But my sister Lanet had. She had served it, even. What?
True story. She is a part-time server at the historic Lowell Inn here in Stillwater, MN. Stillwater takes pride in it’s history as the birthplace of MN and is one of the oldest cities in the state. Lowell Inn is one of the older businesses of the city. Apparently, it serves Grapes Devonshire (Grape Salad) and has been for decades.
Perhaps Grape Salad is a MN dish from decades past? Eh, we still think the hotdish should be the NY Times pick and will be campaigning for that next time. Tatertot Hotdish anyone?
We are proud to be able to bring you an original recipe for Grapes Devonshire. It’s a true original made with clotted cream, grapes, strawberries, and brown sugar. From the oldest city in the state of MN.

Our kitchen is overflowing with watermelon, strawberries, and blueberries.
It’s a good problem to have.
We’ve had a pretty hot week, and yesterday while I was at the grocery store I considered for a moment buying a box of popsicles for the kids, but then I thought – why can’t I make my own popsicles with real ingredients that I want my kids (and myself!) eating?
While the kids were at school, I cut the watermelon, washed a bunch of berries, and made something cool and sweet and light and brilliant. I can’t wait to fill my summer with these…
You can switch up the fruits that you use in these popsicles – add a higher proportion of strawberries or add a kiwi or some raspberries for a different flavor. The possibilities are endless! I love the lightness (and the flavor) of watermelon and so these will be perfect for a light popsicle snack on hot days.
A note about the optional sugar: usually fruit is plenty sweet enough for my taste, but since ripeness and flavor varies significantly, you might need to add a little bit of sugar. Taste your pureed fruit first before adding any sugar. You probably don’t need any.
Additional tips: to make a watermelon berry slushy drink, freeze fruit before blending OR add a handful or two of ice cubes to the blender.
I think I’ll be coming up with more fruit combinations throughout the summer, taking advantage of the fruit that’s in season and making it easy to enjoy a healthy serving of fruit everyday!

]]>I was shopping for our Memorial Day dinner earlier today and found myself in the produce section of my grocery store hypnotized by the papayas. They looked so delicious…and they were on sale. I never buy papayas, so I wasn’t sure how the family would react to a new fruit, but I couldn’t resist giving it a try.
We had fresh and deliciously ripe papaya with dinner, but there was so much left over that I decided to try my hand at making a papaya smoothie. After a little bit of trying this and testing that, I came up with a cool and refreshing papaya smoothie that was satisfyingly sweet but very healthy (bonus!). I froze a bunch of papaya so that I can make this smoothie again anytime.
