We survived the first week of school AND my son got his driver’s license. Talk about a HUGE week for us!

I told the lady at the DMV (they call it the MVA here in Maryland, and I’m still not used to it) that I consider teaching 3 teenagers to drive is one of my greatest accomplishments, and definitely WAY harder and more frustrating than potty training (I used to claim potty training five kids as one of my most amazing accomplishments).

I have never been one to need an excuse to whip up some tasty treats in the kitchen, but if I needed a reason, then the Big Game would be the perfect excuse. I love how Game Time (especially the Big Game!) brings friends and family together.

I’m a sucker for anything that brings two of my favorite things together – food and friends. Honestly, I look forward to the time spent with good food and the people I love more than I look forward to Game Time (but don’t tell anyone else my little secret!).

Ritz Turtle Cookies

I’ve got the perfect pairing for this year’s Game Time celebration, whether you’re hosting a gathering or crashing a friend’s party. I’ve brought a few of my favorite tastes together into one delicious and sinfully easy snack – Ritz Turtle Bites! And I can’t leave out my favorite drink of all time – Coca-Cola Zero Sugar – which goes perfectly with these turtle bites. I picked up all of these ingredients at Walmart this week so that I’d have a head start on our Big Game party planning.

The BEST thing about these Ritz Turtle Bites is how delicious they are, but a close second is how easy they are to make. You can whip up a whole batch in under 10 minutes (can’t beat that!).

Ritz Turtle Cookies

I’m telling you – this snack is going to be the hit of your party!

Ritz Turtle Bites

Ingredients:

  • Ritz Crackers
  • Pecan halves
  • Rolo candies

Ritz Turtle Cookies

Instructions:

  • Preheat the oven to 350° F.
  • Place Ritz Crackers on a cookie sheet lined with parchment paper. Put one Rolo candy in the middle of each Ritz cracker.
  • Heat crackers in the oven for 3-4 minutes, just long enough so that the candy softens. This is the perfect time to pour a nice cold glass of Coca-Cola Zero Sugar to sip while you wait.
  • Remove the cookie sheet from the oven. While the chocolate is still warm, press one pecan half on top of the Rolo and press down gently.
    Let cool for a few minutes and enjoy!
  • Don’t forget to serve with Coca-Cola Zero Sugar!

The recipe couldn’t be any easier, but I did want to point out a tip about amounts. For every Ritz Cracker, you’ll need one Rolo candy and one pecan half. It’s a one-to-one-to-one recipe. Easy peasy! I recommend planning for 3 turtle bites per person you’re expecting to be at your Game Time gathering. If you need more, it’s quick and easy to put another batch in the oven.

Note: you can also make these in the microwave by placing crackers and Rolos on a microwave-safe plate and heating for about 25 seconds.

Ritz Crackers are the ideal starting point for so many snacks and finger foods, whether you’re craving a sweet treat like this one or serving alongside a cheese log (another party staple at our house!). I love the buttery-salty goodness of Ritz Crackers. It’s amazing how versatile they are!

Hi guys!

Can you believe another month has FLOWN by? This month has seemed both super long AND super fast. Have you ever felt like that? I think that my preoccupation with preparing for my LuLaRoe launch has been all-consuming. My days have been filled with research and studying for my business class, physically preparing the space we need to house so much inventory, and doing lots of shopping for supplies on Amazon (that’s an affiliate link, just FYI). Then add on a birthday, a few flus, scouts, night-time orchestra, and plenty of other fun stuff…and you have an idea of my crazy month of January.

There is only one thing more important than the Big Game for enjoying a Game Day get together, and that is the food. Am I right? Great-tasting food is an integral part of my Game Day entertaining, so it’s critical to get it right.

Game Day Mini Corn Dog Muffins Beef Lit'l Smokies Sausages Recipe from Food Fun Family

When I’m planning my Game Day spread, I consider a few things:

  • How easy is the food to prepare?
  • How will the food go over with a crowd that varies in ages?
  • How easy is clean-up going to be?
  • Finger foods and foods that can be eaten while standing/sitting on the couch are a huge plus!

I know that Game Day means lots of people in a small space. The kids are running around. The adults are jumping up out of their seats when their team scores. The last thing I want to do is plan a nice, sit-down meal when everyone really wants finger foods and treats that they can grab on-the-go.

It can be a challenge to find a good balance between easy and delicious, but I think I’ve found the perfect solution. These Mini Corn Dog Muffins with Beef Lit’l Smokies® sausages scored BIG at our house!

How to Make Mini Corn Dog Muffins with Beef Lit’l Smokies® Sausages

Game Day Mini Corn Dog Muffins with Beef Lit’l Smokies® Sausages

Ingredients
  • 12 Beef Lit’l Smokies® sausages, cut in half
  • Vegetable oil
  • 1 cup yellow cornmeal
  • ½ cup self rising flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 teaspoons granulated sugar
  • 1 large egg, beaten
  • 2 tablespoons butter, melted
  • 1¼ cups buttermilk
Instructions
  1. Preheat oven to 425° F. Drizzle oil in the cups of a mini muffin tin and place into the oven while you mix the batter, or about 10 minutes.
  2. In a medium mixing bowl, stir together cornmeal, flour, baking powder, baking soda, salt and sugar. Beat egg in a separate container; add egg and melted butter. Pour in buttermilk, a little at a time, until you have a thick batter. You may have to use a little bit more or less buttermilk to get the right consistency. Pour batter into a large measuring cup with spout for easy pouring.
  3. Remove hot muffin tin from the oven and immediately pour batter into cups. I like to fill cups to just below the top. Add half of a Lit’l Smokies® sausages to each cup.
  4. Tip: drizzling the muffin pan with oil and heating the pan before adding the batter will result in wonderfully crispy edges on your corn bread muffins, similar to my favorite part of a corn dog. You don’t want to skip this step!
  5. Bake at 425° F for about 12 minutes, or until golden brown and cooked through. Allow muffins to cool in the pan for 10 minutes or so, and then remove by running a butter knife along the sides of each muffin.
  6. Note: my mini muffin tin makes 18 muffins at a time, and this recipe makes about 24 mini muffins. Once I removed the first batch of muffins from the tin, I quickly wiped out the pan, put some additional vegetable oil in the pan, heated it again for 5-10 minutes, and used the rest of the batter.
  7. Serve hot or room temperature with mustard and ketchup.
  8. Store any leftovers in the refrigerator.

Time-saving tip: instead of making the corn bread muffins from scratch, you can pick up your favorite corn bread mix at the store and add Lit’l Smokies® sausages to the middle. Easy peasy!
