Recently, we made easy Greek-style chicken wraps for dinner, and not only did the kids declare their love for them, but my husband claimed that they were THE BEST wraps I had ever made. That’s a pretty bold statement for a dinner that only took me 15 minutes to make!

Greek-Style Chicken Wraps

Because I knew everyone’s preferences are slightly different, I let everyone assemble their own wraps, which means that there are no specific measurements for ingredients. I personally love mine filled with a whole lot of everything. My son left off the olives, and my daughter preferred hers without sauce. So adjust the ingredients to suit your family’s needs.

 

Greek-Style Chicken Wraps

Greek-Style Chicken Wraps

Ingredients

  • Tyson® Grilled & Ready Chicken Breast Strips
  • Olive oil
  • Sprinkle: Oregano, cumin, and lemon pepper
  • 1 clove garlic, minced
  • Wraps or flour tortillas
  • Fresh spinach
  • Feta cheese, crumbled
  • Kalamata olives
  • Cucumber, diced
  • Tzatziki sauce
  • Green onion, sliced

Instructions

  1. Drizzle a small amount of olive oil in a skillet over medium-high heat; add some minced garlic and stir. Add Tyson® Grilled & Ready Chicken Breast Strips to the hot oil; sprinkle with oregano, cumin, and lemon pepper. Cook chicken until heated through.
  2. Meanwhile, dice cucumber and prepare the other wrap ingredients.
  3. To serve, each family member takes a wrap and fills it with their desired ingredients. Roll the filled wrap up and secure it with a toothpick.

The bread you use can make or break a sandwich. I prefer a hearty bread for sandwiches, and I’ve just found the best sandwich bread ever from a brand I’ve known and trusted for ages. I’m excited to introduce you to Pepperidge Farm® Harvest Blends™ bread and a delicious (and easy!) hot sandwich I made this past week. Harvest Blends™ bread comes in these three variety:

  • Harvest Blends Seeded Grain: with sunflower, flax and sesame (delightfully crunchy, a little toasty)
  • Harvest Blends Sprouted Grain: made with sprouted whole wheat (perfectly soft, touch of molasses)

I took a toasted, cheesy sandwich to the next level with my sun dried tomato tuna panini. I made it the other day for lunch, and my husband, who had just made himself a peanut butter and jelly sandwich on a boring slice of bread, was insanely jealous of my gourmet sandwich made with Harvest Blends Ancient Grain. I have to admit…it was a beautiful sandwich!

Luckily, it’s so easy to make, using just a few ingredients, and is ready in less than 10 minutes.

Sun Dried Tomato Tuna Panini

Sun Dried Tomato Tuna Panini

Ingredients

  • 1/4 cup tuna in water, drained
  • 1/4 cup fresh spinach, chopped
  • 1 Tbsp sun dried tomato, diced
  • 2 slices Muenster cheese
  • 1/4 tsp each paprika and garlic powder
  • Olive oil (about 1-2 Tbsp)
  • 2 slices Pepperidge Farm® Harvest Blends™ Ancient Grain bread

Instructions

  1. Heat a panini press/griddle to medium-high. Or preheat a small skillet on the stove.
  2. In a small bowl, mix drained tuna, chopped spinach, sun dried tomato, paprika, and garlic powder. Drizzle with a little bit of olive oil and mix with a fork.
  3. Place a slice of cheese on a piece of bread; spread tuna mixture over top; add another piece of cheese and then another slice of bread on top to form a sandwich. Brush olive oil on the outside of the sandwich.
  4. Place sandwich on a panini press or skillet and toast until both sides are golden brown and cheese is melted.
  5. Enjoy!

Healthy Back-to-School Lunch Tips to make getting ready for school each morning easier and less hectic, and for making sure that the kids are eating a healthy, filling lunch each day

As much as we *may* have complained a time or two during the last few months about the hectic schedule (or non-schedule) of summer break, the fact that we are transitioning to back-to-school next week is still shocking. Alarm clocks and backpacks. Homework and after-school practices. Picking out clothes and packing school lunches….every single morning.

Back-to-school season can be tough, especially with kids in multiple schools with different start times and sports, clubs, and music classes that cover nearly every night of the week. It’s a lot to get used to.

We embrace back-to-school time, despite the fact that managing the family’s schedule is a lot for a busy working mom like me to handle. Luckily, my kids are old enough to take care of certain tasks on their own – or at least help out. One of the areas that I’ve delegated to the kids for the last few years is preparing their daily school lunches.

One thing I realized when we started having the kids get their own lunches ready was that I needed to have a good assortment of healthy food options for them to take or they would end up filling their lunch bag with crackers and cookies and a package of fruit snacks and call it good. Although lunch-prep at our house is far from “picture-perfect,” we’ve made a lot of progress and I think we’re doing a pretty good job at packing healthy school lunches.

CVS healthy school lunch tips

CVS surprised us with a box full of healthy snacks for the new school year. The kids couldn’t wait to dig in!

Here are a few of our tips for packing a healthy school lunch:

Make snack stations

We’ve got 2 “snack stations” in the kitchen: one in the pantry for dry foods and one in the refrigerator for fresh foods. I fill those stations with “grab-and-go” type foods that the kids can put in their lunches. Things like fruit, cheese sticks, yogurt cups, carrots and hummus, cut celery, etc are in the fridge and placed in small baggies, if necessary, so that the kids can grab a serving in a pinch without having to worry about getting out the knife and cutting board. The pantry has a basket or two of things like pre-made muffins, granola bars, nuts, dried fruits, crackers, beef jerky, etc. Again, we leave individual portions in ziploc bags so they’re easy to grab on the run.

Variety rocks!

We’ve stressed the importance of adding a variety of foods to their lunch box so that they don’t end up with too much “fluff” and not enough of the good stuff that will sustain them through the school day. Not all of my kids like sandwiches, so we’ve given them some options for sandwich “substitutes.” If they love crackers, then we have them add sliced cheese and deli meats to make homemade Lunchables. High-protein snacks like nuts mixes, cheeses, beef jerky, and yogurt are also encouraged as main lunch courses, as long as they have a variety of other foods, too, like a piece of fruit.

Pack the night before

Although packing lunch the night before will not make the contents any better for the kids, it sure does make the morning routine go a lot more smooth. Plus preparing ahead of time, without the time crunch, eliminates the rushed “throw-anything-in-the-lunch-bag” problem…or worse yet, the “oops!-I-forgot-to-pack-a-lunch” dilemma as they’re trying to get out the door. Any lunch is better than no lunch!

Stock the kitchen with things they love

We have found success with buying a variety of foods for the kids to try before “committing.” The foods that pass the test are added to our regular rotation. There’s no use in stocking the shelves with foods that the kids will never touch (or worse yet, bring to school and throw away, uneaten!).

Since I’m typically busy working every minute that the kids are at school and then busy driving them from home to practices and back again, making dinner, or helping with homework when they’re not in school, I don’t have a lot of extra time to run around town to shop. Luckily, CVS is always on the way to wherever we’re going, so it’s convenient to stop at CVS to grab snacks for the kids’ school lunches.

This is just a small sampling of the delicious, good-for-you food that you can get at CVS for school lunches!

Here are just a few ways that CVS is helping my family meet our healthier school lunch goals:

  • Adding more healthy foods: You can find more than 250 refrigerated and non-perishable healthy foods and beverages at CVS Pharmacy stores from brands including: Amy’s Kitchen, Annie’s Homegrown, Chobani, Vita CoCo, Bai, Krave Jerky, Rhythm Superfoods, That’s it bars as well as new products from the CVS Pharmacy exclusive line, Gold Emblem abound™ which is free from artificial preservatives, flavors and colors.
  • Moving healthy foods forward: Not only are CVS stores stocking a wide assortment of healthy foods (with more coming all the time), displays of healthy foods and grab-and-go snacks are being displayed more prominently, making it even more convenient to find healthy options. That includes roughly 25% of the front check out space being dedicated to better-for-you snacks like KIND bars, Larabars and Vega One bars.
  • Healthy eating trend zones: It will be easy to spot foods that meet your dietary preferences including paleo, raw and vegan as more and more diet-friendly products are added and displayed clearly in the store.
  • Fit Choices tagging program: CVS’s Fit Choices shelf tagging program makes finding healthier items in store so much easier by clearly identifying foods that fit nutritional and dietary preferences including: Good Source of Protein, Heart Healthy, Gluten Free, Sugar Free, Organic and Non-GMO Project Verified. It’s so helpful to scan products for my personal preferences.

I love a good sandwich or a hearty salad, but I don’t always have the time (or take the time, really) to make a good lunch for myself. When I’m in the middle of my work day, I rarely feel like stopping to make myself something to eat.

This past week, I was challenged to make a recipe with Bumble Bee® Prime Fillet® Albacore Tuna With Sundried Tomatoes & Olive Oil. I immediately thought of a hot sandwich, because I’ve always loved melty, cheesy tuna sandwiches.

I loved what I came up with. This was no ordinary tuna sandwich!

The sundried tomatoes and olive oil add a unique taste to this tuna, but the thing I love most about Bumble Bee® Prime Fillet® Albacore Tuna With Sundried Tomatoes & Olive Oil is the convenience. How often can you find something so good for you and so convenient to use and serve?

Ingredients
  • 1 can Bumble Bee® Prime Fillet® Albacore Tuna With Sundried Tomatoes & Olive Oil
  • 2 slices hearty bread of your choice
  • 2 slices cheese (I used Provolone)
  • About ½ cup fresh spinach
  • 1 wedge of spreadable soft cheese (ie, Laughing Cow) - I used Creamy Swiss Garlic and Herb
  • 2-3 tablespoons of avocado
  • Olive oil
Instructions
  1. Layer sliced cheese, spinach, then tuna (I drained a little of the olive oil first) on one slice of bread.
  2. In a small bowl, mix avocado and soft cheese and then spread on the other slice of bread. Put the slices together to make sandwich.
  3. Brush the outside of the sandwich with a little olive oil and place on a hot panini maker or toast in a toaster oven until bread is lightly toasted and cheese is melted.
  4. Slice and eat while hot. Yum!

I love shopping at Trader Joe’s, especially when they have delicious samples for me to try. I’ve been surprised, actually, to find several of my favorite diet-friendly meals and snacks from their samples. Recently, my Trader Joe’s was sampling polenta, which I had honestly never tasted before. I was totally hooked and bought 2 rolls of polenta to take home that day.

This is the super simple recipe that I came up with when I came home. Each slice, prepared this way, is 1 Weight Watchers PointsPlus. For me, 3-4 slices of polenta with marinara and a little Parmesan cheese is a perfect lunch meal, and since it cooks up so quickly, it’s definitely lunch-time friendly, too.

Sauteed Polenta with Marinara Sauce – Weight Watcher-friendly recipe

Sauteed Polenta with Marinara

Ingredients
  • 1 (18 ounce) package organic polenta, chilled
  • ½ to 1 tablespoon olive oil
  • Trader Joe's 21 Seasoning Salute* or spices to your liking
  • Marinara sauce
  • Parmesan cheese
Instructions
  1. Slice chilled polenta (my slices were about ⅓ inch). Sprinkle both sides with spices.
  2. Heat olive oil in a med-high skillet; add polenta slices. Heat for about 3-4 minutes on each side, or until lightly browned.
  3. Meanwhile, heat marinara sauce in a small pot or a bowl in the microwave.
  4. Top each slice of polenta with a spoonful of marinara sauce and sprinkle with a small amount of Parmesan cheese.
  5. Enjoy!
Notes
*Trader Joe's 21 Seasoning Salute is an awesome salt-free spice that includes a blend of onion, black pepper, celery seed, cayenne pepper, parsley, basil, marjoram, bay leaf, oregano, thyme, savory, rosemary, cumin, mustard, coriander, garlic, carrot, orange peel, tomato, lemon juice and lemon oil. If you don't have a Trader Joe's near you, you can add your favorite spices!

I am LOVING getting healthy, eating better, and losing weight with Weight Watchers…especially with the help, guidance and support of my Personal Coach.

When I first signed up for Weight Watchers, I was asked to list a few of the foods that I “couldn’t live without.” The very first thing that came to my mind was CHEESE. I love cheese. I realized as I analyzed my eating habits that I was snacking throughout the day on cheese, and while I realize that there could be worse things to snack on, I also realized that the amount of fat I was consuming regularly from just that one snack habit was not conducive to losing weight.

I also mentioned to my coach that I felt like lunch and midday eating were where I had the hardest problem. I was already in the habit of eating a decent breakfast and I cook a homemade meal for my family almost every night. But at lunch time…that’s when I crave fast food or I snack on whatever happens to be in the house. My coach and I decided that lunch would be a focus area for me and an easy area to improve right away.

On one of my recent chats with my Weight Watchers Coach, she mentioned one of her favorite lunches, and now that I’ve tried it, I’ve become officially (and happily) hooked. I love these lettuce wraps so much that I’ve told my daughter at college about them (they’re healthy AND portable!) and convinced my husband to try them out, too.

Easy lettuce wraps in less than 5 minutes!

Add different flavors of Laughing Cow cheeses (or a generic version) and different deli meats for variety. I love the jalapeno pepper cheese with chicken and roast beef.

Ingredients
  • 1 large leaf of Romaine lettuce (0 points+)
  • 2 slices of lean deli meat (2 ounces/slices = 2 points+)
  • 1 triangle of Laughing Cow light cheese (1 points+)
  • Fresh spinach, optional (0 points+)
Instructions
  1. Rinse and dry Romaine lettuce. Carefully remove the thickest part of the lettuce/stem from the bottom of the leaf. If necessary, split the center vein partially in half to help it roll more easily.
  2. Spread Laughing Cow cheese over the lettuce. Lay deli meat out on lettuce. Top with a handful of fresh spinach, if desired.
  3. Roll lettuce up and enjoy!

I was shopping at Trader Joe’s yesterday and was offered a sample. Never one to turn down a Trader Joe’s sample, I took a bite and was amazed. I don’t typically grab the sample products as readily as I did yesterday, but I HAD to make this salad at home. Not only was it full of flavor and a fun crunch, but I knew that the ingredients would fit perfectly with my Weight Watchers “diet.” I already had a few of the ingredients on hand at home, grabbed what I didn’t already have, and set off for my kitchen to make some for dinner.

Before I mixed everything up, I plugged in all of the ingredients to my Weight Watchers calculator and was so impressed that a heaping cup of this salad was only 2 Points Plus value. 2 Points? That’s awesome! And because it’s full of hearty, fresh vegetables, beans, and a little bit of cheese, it’s a rather filling salad.

I stored what my husband and I didn’t eat this evening for lunches for the next few days. My mouth is already watering for lunch tomorrow.

Veggie Crunch Salad – {2 WWP+}

Veggie Crunch Salad {Weight Watchers 2 Points Plus}

Ingredients
  • ½ cup chopped broccoli
  • ½ cup chopped carrot
  • ½ cup chopped green cabbage
  • ½ cup chopped red cabbage
  • ½ cup chopped jicama
  • ½ cup chopped green bell pepper
  • ½ cup chopped radish
  • ½ cup chopped celery
  • 1 can black beans, drained and rinsed
  • ⅔ cup fat free feta cheese
  • ¼ cup "light" or low-fat vinaigrette dressing (I used a champagne vinaigrette from Trader Joe's)
Instructions
  1. Chop vegetables. If you prefer one or a few of the veggies in this blend over others, feel free to use any combination of amounts as long as the final amount of chopped vegetables equals 4 cups.
  2. Add drained black beans, feta cheese, and vinaigrette to veggies and toss. Serve immediately or cover and refrigerate. Stores well for a few days.
  3. Note: Makes approximately 6 cups of salad. 2 Points+ Value based on 1-cup serving size. Using regular vinaigrette or regular feta cheese will effect the Points+ Value.
  4. Variation: add diced, cooked chicken breast, tuna, or diced lunch meat for a change (adding meat will effect the PP value).

Sandwiches can be as simple as the peanut-butter-only lunches I make every morning for my 3rd grade son, but they can also be filling enough to eat for dinner.

BLTs are a favorite at our house – bacon, lettuce, and tomato with some mayo on toasted bread – but every once in a while I like to make loaded BLTs for fun. They really don’t take much extra preparation time, but the extra deliciousness added in between the toasted bread is totally worth it!

  • Cooked bacon (about 3 slices per sandwich)
  • Thinly sliced tomato
  • Iceberg lettuce
  • Red onion, sliced into thin rings
  • Regular OR chipotle mayonnaise
  • Guacamole
  • Deli cheese, if desired (I recommend pepper jack cheese)
  • Bread, toasted
Instructions
  1. Cook bacon to desired level of crispiness. Slice tomato and tear bread-sized leafs of lettuce. Slice red onion and break apart rings.
  2. Toast bread at the last moment. Spread warm bread with mayo and layer with all of your desired ingredients - as much or as little as you want. My recommendation? Make your BLT a LOADED BLT!

 

BLTS are so simple and quick but so delicious! The addition of guacamole, spicy mayo, and a slice of pepper jack cheese (my favorite!) totally kick this “ordinary” sandwich up a notch. I’m craving another now!

When I eat a sandwich, I want something bold…not something boring. This past week, I made a sandwich that took bold to a whole new level – I even called hubby up from his desk to share because I was so excited with how it turned out.

I loved that this sandwich was super-quick to make but not even CLOSE to ordinary or boring. I loved that it used fresh, cool ingredients, making it a perfect lunch or dinner option for spring and summer meal time. But the thing I loved most about this sandwich was that the deli chicken was so perfectly seasoned that it didn’t need much else. But of course, I had to add a few of my favorite sandwich toppings (and one unique addition, too)…

  • Oscar Mayer BOLD Chipotle Seasoned Chicken Breast deli meat
  • Kaiser roll
  • One egg, cooked sunny-side up
  • Sliced cheese
  • Lettuce
  • Tomato, sliced thin
  • Avocado, sliced thin
  • Fresh cilantro
  • Mayo
  • Spicy chipotle mustard, if desired
Instructions
  1. Cook egg to your taste (I made mine sunny-side up).
  2. On a kaiser roll, spread mayo and mustard, if desired. Layer with deli meat, lettuce, tomato, cheese, avocado, and cilantro. Add egg and cover sandwich.
  3. Open wide and enjoy!
