Hi guys! I don’t know about you, but the last month and a half of school year for my kids is BRUTAL. Not because the classes are hard, but because every single night is packed with concerts and awards and play offs. And now I’m packing my bags and heading to Southern California next week – which, while the trip itself will be wonderful, only means more craziness and more trying to fit everything in to our already-tight schedule.
It’s this time of year that I wish that I could hire a cook, a maid, a kid-taxi service, and an assistant who could handle my blog AND all of the mailing I have to do a.

As each new year begins and we say farewell to the old year, the same handful of thoughts goes through my mind…how can I make this coming year better than last? How can I spend more time with my family and less time working, cleaning, shopping, and cooking? How can I meet my healthy living goals (including losing a little weight!) without spending all my time stressing over what I eat?
I love to cook. I really do. But I don’t have the time to spend hours in the kitchen every night. There’s just no way. Between work that needs to get done and kids that need to be picked up and dropped off, it’s practically impossible to dedicate more than a few minutes to getting dinner prepped and served each night.
Typical “fast” dinner options simply aren’t an option for our family very often. With our family of six at home (including three teens and a tween), a lot of the convenience options are just too pricey, not to mention the fact that they are usually not very diet-friendly.
That’s why we love having Tyson® Grilled & Ready® Chicken Breast Strips on hand in the freezer. I picked up a 3-lb bag in the freezer section at Sam’s Club during a recent trip because it’s the ideal ingredient for quick and easy dinner recipes. I love that Tyson® chicken is something I can feel good about feeding my kids, and it certainly helps that we all LOVE how delicious it tastes, too!
There is so much you can do with a bag of Tyson® Grilled & Ready® Chicken Breast Strips from Sam’s Club. We love to add some chicken strips to a salad or use them in a soup. They’re even great on their own, served with a side of vegetables and mashed potatoes.
Recently, we made easy Greek-style chicken wraps for dinner, and not only did the kids declare their love for them, but my husband claimed that they were THE BEST wraps I had ever made. That’s a pretty bold statement for a dinner that only took me 15 minutes to make!
Because I knew everyone’s preferences are slightly different, I let everyone assemble their own wraps, which means that there are no specific measurements for ingredients. I personally love mine filled with a whole lot of everything. My son left off the olives, and my daughter preferred hers without sauce. So adjust the ingredients to suit your family’s needs.

I took a toasted, cheesy sandwich to the next level with my sun dried tomato tuna panini. I made it the other day for lunch, and my husband, who had just made himself a peanut butter and jelly sandwich on a boring slice of bread, was insanely jealous of my gourmet sandwich made with Harvest Blends Ancient Grain. I have to admit…it was a beautiful sandwich!

As much as we *may* have complained a time or two during the last few months about the hectic schedule (or non-schedule) of summer break, the fact that we are transitioning to back-to-school next week is still shocking. Alarm clocks and backpacks. Homework and after-school practices. Picking out clothes and packing school lunches….every single morning.
Back-to-school season can be tough, especially with kids in multiple schools with different start times and sports, clubs, and music classes that cover nearly every night of the week. It’s a lot to get used to.
We embrace back-to-school time, despite the fact that managing the family’s schedule is a lot for a busy working mom like me to handle. Luckily, my kids are old enough to take care of certain tasks on their own – or at least help out. One of the areas that I’ve delegated to the kids for the last few years is preparing their daily school lunches.
One thing I realized when we started having the kids get their own lunches ready was that I needed to have a good assortment of healthy food options for them to take or they would end up filling their lunch bag with crackers and cookies and a package of fruit snacks and call it good. Although lunch-prep at our house is far from “picture-perfect,” we’ve made a lot of progress and I think we’re doing a pretty good job at packing healthy school lunches.

CVS surprised us with a box full of healthy snacks for the new school year. The kids couldn’t wait to dig in!
We’ve got 2 “snack stations” in the kitchen: one in the pantry for dry foods and one in the refrigerator for fresh foods. I fill those stations with “grab-and-go” type foods that the kids can put in their lunches. Things like fruit, cheese sticks, yogurt cups, carrots and hummus, cut celery, etc are in the fridge and placed in small baggies, if necessary, so that the kids can grab a serving in a pinch without having to worry about getting out the knife and cutting board. The pantry has a basket or two of things like pre-made muffins, granola bars, nuts, dried fruits, crackers, beef jerky, etc. Again, we leave individual portions in ziploc bags so they’re easy to grab on the run.
We’ve stressed the importance of adding a variety of foods to their lunch box so that they don’t end up with too much “fluff” and not enough of the good stuff that will sustain them through the school day. Not all of my kids like sandwiches, so we’ve given them some options for sandwich “substitutes.” If they love crackers, then we have them add sliced cheese and deli meats to make homemade Lunchables. High-protein snacks like nuts mixes, cheeses, beef jerky, and yogurt are also encouraged as main lunch courses, as long as they have a variety of other foods, too, like a piece of fruit.
Although packing lunch the night before will not make the contents any better for the kids, it sure does make the morning routine go a lot more smooth. Plus preparing ahead of time, without the time crunch, eliminates the rushed “throw-anything-in-the-lunch-bag” problem…or worse yet, the “oops!-I-forgot-to-pack-a-lunch” dilemma as they’re trying to get out the door. Any lunch is better than no lunch!
We have found success with buying a variety of foods for the kids to try before “committing.” The foods that pass the test are added to our regular rotation. There’s no use in stocking the shelves with foods that the kids will never touch (or worse yet, bring to school and throw away, uneaten!).
Since I’m typically busy working every minute that the kids are at school and then busy driving them from home to practices and back again, making dinner, or helping with homework when they’re not in school, I don’t have a lot of extra time to run around town to shop. Luckily, CVS is always on the way to wherever we’re going, so it’s convenient to stop at CVS to grab snacks for the kids’ school lunches.

Lunch is my most challenging meal of the day, but it is often my favorite. Love to eat it. Hate to spend the time making it.
I love a good sandwich or a hearty salad, but I don’t always have the time (or take the time, really) to make a good lunch for myself. When I’m in the middle of my work day, I rarely feel like stopping to make myself something to eat.
This past week, I was challenged to make a recipe with Bumble Bee® Prime Fillet® Albacore Tuna With Sundried Tomatoes & Olive Oil. I immediately thought of a hot sandwich, because I’ve always loved melty, cheesy tuna sandwiches.
I loved what I came up with. This was no ordinary tuna sandwich!

I love shopping at Trader Joe’s, especially when they have delicious samples for me to try. I’ve been surprised, actually, to find several of my favorite diet-friendly meals and snacks from their samples. Recently, my Trader Joe’s was sampling polenta, which I had honestly never tasted before. I was totally hooked and bought 2 rolls of polenta to take home that day.
This is the super simple recipe that I came up with when I came home. Each slice, prepared this way, is 1 Weight Watchers PointsPlus. For me, 3-4 slices of polenta with marinara and a little Parmesan cheese is a perfect lunch meal, and since it cooks up so quickly, it’s definitely lunch-time friendly, too.

I am LOVING getting healthy, eating better, and losing weight with Weight Watchers…especially with the help, guidance and support of my Personal Coach.
When I first signed up for Weight Watchers, I was asked to list a few of the foods that I “couldn’t live without.” The very first thing that came to my mind was CHEESE. I love cheese. I realized as I analyzed my eating habits that I was snacking throughout the day on cheese, and while I realize that there could be worse things to snack on, I also realized that the amount of fat I was consuming regularly from just that one snack habit was not conducive to losing weight.
I also mentioned to my coach that I felt like lunch and midday eating were where I had the hardest problem. I was already in the habit of eating a decent breakfast and I cook a homemade meal for my family almost every night. But at lunch time…that’s when I crave fast food or I snack on whatever happens to be in the house. My coach and I decided that lunch would be a focus area for me and an easy area to improve right away.
On one of my recent chats with my Weight Watchers Coach, she mentioned one of her favorite lunches, and now that I’ve tried it, I’ve become officially (and happily) hooked. I love these lettuce wraps so much that I’ve told my daughter at college about them (they’re healthy AND portable!) and convinced my husband to try them out, too.

]]>I was shopping at Trader Joe’s yesterday and was offered a sample. Never one to turn down a Trader Joe’s sample, I took a bite and was amazed. I don’t typically grab the sample products as readily as I did yesterday, but I HAD to make this salad at home. Not only was it full of flavor and a fun crunch, but I knew that the ingredients would fit perfectly with my Weight Watchers “diet.” I already had a few of the ingredients on hand at home, grabbed what I didn’t already have, and set off for my kitchen to make some for dinner.
Before I mixed everything up, I plugged in all of the ingredients to my Weight Watchers calculator and was so impressed that a heaping cup of this salad was only 2 Points Plus value. 2 Points? That’s awesome! And because it’s full of hearty, fresh vegetables, beans, and a little bit of cheese, it’s a rather filling salad.
I stored what my husband and I didn’t eat this evening for lunches for the next few days. My mouth is already watering for lunch tomorrow.

I have a hard time writing “recipes” for sandwiches, because…well, they’re sandwiches. Get two slices of bread, layer them with yummy ingredients, slice in two and eat.
Sandwiches can be as simple as the peanut-butter-only lunches I make every morning for my 3rd grade son, but they can also be filling enough to eat for dinner.
BLTs are a favorite at our house – bacon, lettuce, and tomato with some mayo on toasted bread – but every once in a while I like to make loaded BLTs for fun. They really don’t take much extra preparation time, but the extra deliciousness added in between the toasted bread is totally worth it!
BLTS are so simple and quick but so delicious! The addition of guacamole, spicy mayo, and a slice of pepper jack cheese (my favorite!) totally kick this “ordinary” sandwich up a notch. I’m craving another now!

When I eat a sandwich, I want something bold…not something boring. This past week, I made a sandwich that took bold to a whole new level – I even called hubby up from his desk to share because I was so excited with how it turned out.

I’ve tried both Italian-style turkey breast and chipotle seasoned chicken breast, and those who know me will not be surprised that it was the chipotle chicken breast that inspired me to get creative.
I loved that this sandwich was super-quick to make but not even CLOSE to ordinary or boring. I loved that it used fresh, cool ingredients, making it a perfect lunch or dinner option for spring and summer meal time. But the thing I loved most about this sandwich was that the deli chicken was so perfectly seasoned that it didn’t need much else. But of course, I had to add a few of my favorite sandwich toppings (and one unique addition, too)…

Just a little tip: Oscar Mayer Deli Fresh BOLD meats are also amazing straight out of the fridge. I’ve been rolling them up in a slice of cheese for a quick pick-me-up snack, and the flavor burst is incredible! These are definitely my new favorite sandwich meats!
