We’ve had a brief spring “preview” here in Maryland, and I’m eager and excited for the weather to warm up more permanently.

But more than anything else, I’m eager for our house renovations to be done so that I can get back to cooking regularly. I’m hoping that this long break from cooking and doing dishes will make me appreciate the ability to cook even more!

Happy Tuesday! This past week has been a whirlwind of excitement for our family. We’ve been slowly preparing to move for the last several months, but kicked the process into high gear this week when we found what seemed like our dream house.

We still love the location and the idea of the house, but the reality was that the house was in very bad shape and the owners were seriously loony.

The good news is that we’ve held onto that motivation to move faster on the things we need to do at our house to get it ready to sell and then find a new place.

It’s all good.

Hi guys! This week has been a literal whirlwind! We decided at the end of last week that I will be homeschooling my 10th grader starting immediately. Obviously, starting a homeschool program, even if the curriculum is already established, is a huge deal, but I’m so excited about it (mostly because we both felt like this was the right move to make for our situation). You guys! Today is the day! It’s the first day of school! I’ve had a long and wonderful (but also challenging) summer, and I am ready to get back into the swing of a new school year, with all of its schedule challenges and hours of driving kids here and there.

Did I really say that?

It’s true. I’m excited for the school year. As much as I love having lazy mornings and extra time with my kids, I do prefer the structure and order of the school year.

AND…. with the passing of Labor Day (one of the hottest that I can remember in ages), we MUST have cooler weather on the horizon. And with cooler weather comes more Instant Pot dinners! A busy mom can never have too many quick and easy chicken recipes in her dinner-time arsenal. As we head back into another school year, the kids may be thinking about meeting new teachers or getting used to new classes and schedules, but I’m thinking about how much busier my afternoons and evenings will be when the kids are back into after-school sports and homework. I may not have as much time to prepare dinner once school is in session, but I don’t want to sacrifice taste or quality, either.

I’ve been asking my good friends and family for their favorite quick weeknight dinner ideas, and this braised balsamic chicken from my sister was one of the first recipes we tried. It was such a hit with my family that we quickly added it to our regular dinner rotation.

This past week, I made braised balsamic chicken with Open Nature® Air Chilled Boneless Skinnless Chicken Breasts and I could not believe how moist and tender and flavorful they were!

If you’re like me, at this point, you’re probably asking, “What in the world is air chilled chicken??” Put simply, air-chilled chickens are individually processed in cold chambers with purified air. But it’s so much more than that.

Ready to see my sister’s quick and easy braised balsamic chicken recipe? To serve this chicken dish recently, I made a side of garlic mashed red potatoes. The sauce from the tomatoes and balsamic vinegar is wonderful as a mashed potato “gravy” but if you’re looking for a lighter dish, you can serve the chicken with sauteed zucchini or green beans from the garden.

This light and flavorful braised balsamic chicken pairs wonderfully with a side of garlic mashed red potatoes. The sauce from the tomatoes and balsamic vinegar is wonderful as a mashed potato “gravy” but if you’re looking for a lighter dish, you can serve the chicken with sauteed zucchini or green beans from the garden.

Ingredients

  • 4 Open Nature Air Chilled boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tsp garlic, minced
  • 2 Tbs olive oil
  • 1 onion, sliced thin
  • ½ Cup balsamic vinegar
  • 3 large garden-fresh tomatoes, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme

Instructions

  1. Pat chicken dry and season with pepper and salt. Heat oil in a medium skillet and brown chicken breasts with the sliced onion for 3-5 minutes per side.
  2. Pour balsamic vinegar and diced tomatoes over the chicken and sprinkle spices over all. Bring to a gentle boil.
  3. Reduce heat to low and simmer, covered, for about 15 minutes, or until the chicken is cooked through.
  4. Serve hot with a side of mashed potatoes or sauteed garden vegetables.

St. Patrick’s Day is approaching fast, and as someone with a lot of Irish blood flowing through my veins, I love to celebrate each year in two ways. First, I wear lots of green (nobody wants to get pinched!) and second, I make some fun St. Patrick’s Day themed food. It’s easy to make green desserts for the kids, but dinner time can be a little trickier. This year, I was on a mission to find a meal that everyone would LOVE (and eat!) that didn’t take me all day to plan or prepare.

I hit the jackpot!

I think the BEST compliment I received after serving this delicious St. Patrick’s Day dinner was from my husband. Everyone loved the Cooked Perfect® Fire Grilled Chicken (Bourbon BBQ Wings!) and they were polished off pretty quickly. When my son wanted more chicken, I offered to heat some more up. My husband said that we’d finished it all, but I disagreed. I pulled a second bag of wings out of the freezer, and my husband said, “What?! That was frozen chicken? I totally thought you’d made those from scratch.”

Mission accomplished!

Because pre-dinner time is the busiest time in our house, I love finding meals that take some of the meal prep off my hands…especially when they taste THIS good. I grabbed two bags of the Bourbon BBQ Wings at the grocery store the other day (we have a big family – and teenagers – so I wanted to make sure we had plenty!).

Cooked Perfect Fire Grilled Chicken comes in a variety of tasty flavors, and you can choose a variety of cuts as well, such as wings, tenders, drumsticks, thighs or chunks. I was drawn to the Bourbon BBQ because it’s a flavor I know everyone in the family already likes, but I could have easily gone with any of the other flavors, like Buffalo Ranch, Wildflower Honey BBQ, Lemon Herb, Zesty Herbs and Spice, Szechuan, Korean Style, or Classic Style.

Seriously, my mouth is watering!

The best thing about Cooked Perfect Fire Grilled Chicken is that it is super flavorful, convenient and easy to prepare, and perfect for serving as-is with delicious sides. I decided to serve our Bourbon BBQ Chicken Wings with a side of broccoli and Irish-style mashed potatoes, or Colcannon.

Did I mention that this meal was a hit? Our colcannon side dish was so tasty, and I got it ready while the chicken was in the oven.

Colcannon, or Irish-Style Mashed Potatoes

Easy Irish Colcannon and Cooked Perfect Fire Grilled Chicken

Ingredients:
1/2 a head cabbage, shredded
2 lbs potatoes, peeled and cut into chunks
2 Tbsp butter
3 green onions, chopped
1 tsp salt
1/4 tsp pepper
1/2 tsp dried parsley
1 cup milk (I used 2%)
4-6 slices of bacon, cooked and crumbled

Easy Irish Colcannon and Cooked Perfect Fire Grilled Chicken

Directions:
1. Fill a large saucepan about 1/2 full with water; heat to boiling. Add chopped cabbage and bring to a boil. Reduce heat and simmer cabbage until tender, about 10 minutes. Drain and set cabbage aside, leaving the cooking liquid in the pan.

2. Add the potatoes to the hot water; add additional water if needed to cover the potatoes. Bring to a boil, then reduce heat and cook until potatoes are fork-tender, about 15 minutes. Drain potatoes, then return them to the dry pot.

3. Meanwhile, heat butter and green onions in a medium saucepan for 2-3 minutes at medium heat. Add salt, pepper, parsley, and milk. Stir until heated through. Add bacon crumbles.

4. Stir hot milk mixture into drained potatoes. Add reserved cooked cabbage and mash together until mixed and smooth.

I’m always on the look out for more meatless (or less-meat!) meals for my family, in an effort to be more healthy AND more frugal when it comes to the family dinner. Believe me, feeding a family of 6, in a house full of teens and tweens, is exhausting.

I was thrilled to receive a copy of the brand new Sheet Pan Suppers Meatless by Raquel Pelzel and couldn’t wait to try a recipe or two this past week with my family.

I bookmarked several recipes (they all look SO tasty!) and settled on trying this recipe for orzo with pan-roasted tomatoes, lemon and mozzarella first. I’m excited to be able to share the recipe with you (be sure to scroll down below the recipe to enter the giveaway, too!).

Orzo With Pan-Roasted Tomatoes, Lemon and Mozzarella

Orzo With Pan-Roasted Tomatoes, Lemon and Mozzarella: Sheet Pan Suppers Meatless

Ingredients

  • 1 lb cherry tomatoes, halved
  • 1 medium-size lemon, thinly sliced into rounds, seeds removed
  • 3 garlic cloves, very thinly sliced
  • 2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp crushed red pepper flakes
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup dry vermouth or dry white wine
  • 1 box (16 oz) orzo pasta
  • 3 3/4 cups boiling water
  • 1/4 cup fresh basil leaves, stacked, rolled, and thinly sliced crosswise into ribbons
  • 6 oz fresh mozzarella cheese, roughly torn by hand
  • 1/4 cup finely grated Parmesan cheese (freshly grated)

Instructions

  1. Adjust an oven rack to the middle position, place a sheet pan on the rack, and preheat the oven to 400° F.
  2. Place the tomatoes, lemon, garlic, 1 tsp salt, pepper, crushed red pepper flakes, and the olive oil in a medium-size bowl and toss to combine. Carefully turn the tomato mixture onto the heated sheet pan, spread it in an even layer, and and for 10 minutes.
  3. Remove the sheet pan from the oven and stir the vermouth into the tomato mixture. With a silicone spatula, press down on the tomatoes and lemon slices to extract their juices. Stir in the orzo.
  4. Pull the oven rack out partway and set the sheet pan on it. Carefully pour the boiling water into the orzo, stirring to combine and distribute evenly. Wearing oven mitts, cover the sheet pan with aluminum foil, crimping it tightly around the edges to seal. Bake the pasta for 15 minutes.
  5. Uncover the pan, add the remaining 1 tsp salt, stir the orzo, and cook, uncovered, to allow the juices to thicken and any partially cooked pasta from the top layer to absorb more liquid, 5 minutes more.
  6. Preheat the broiler to high. Stir most of the basil into the pasta, then scatter the mozzarella cheese over the top. Sprinkle the Parmesan cheese over the mozzarella and broil until the cheese is melted and golden, 3 to 5 minutes (watch the cheese closely, as broiler intensities vary!). Remove from the oven and let stand for a few minutes. Sprinkle the remaining basil over the top just before serving.

Loaded Potato Nachos (or Smiley Face Emoji Nachos) with McCain Smiles by Food Fun Family

I love nachos. But not the boring kind where you dip chips in a fake cheese sauce. Oh no. I like the real, melty cheese variety loaded with all sorts of delicious fresh and full-flavor toppings. Nachos are the perfect summer food. They’re quick to whip up for dinner or a backyard BBQ or party appetizer. Not only that but they are easy to customize to each person’s taste (I’ll take mine with everything, please!) something I know that the kids appreciate.

Can you believe that summer is right around the corner? It’s hard to believe, but having just wrapped up Spring Break (with some gorgeous weather!), it’s getting easier to imagine summer time! Summer is a busy but lazy time of year, with swim practice and swim meets, park days and camp outs. The two things that are SO much harder for me during the summer are sticking with a good work schedule (because the kids want to be on-the-go all the time) and sticking with a good dinner schedule (who wants to be in the kitchen standing over a hot stove when it’s 98 degrees outside?).

Summer is the perfect time for getting together with friends and family, and McCain fries compliment SO many of our favorite summer-time meals. Whether you’re firing up the grill for a backyard BBQ or inviting people over for a warm summer evening spent indoors, McCain fries are the ideal addition to your menu plan.

Our family is particularly fond of onion rings, so McCain Craft Beer Battered Onion Rings are always a hit alongside a juicy burger. But for those nights when I really don’t want to get any hotter by cooking dinner, McCain 5 Minute Fries can’t be beat! I try to spend as little time as possible in the kitchen during the summer. This week, I tried a new spin on a family-favorite and used McCain Smiles (mashed potato shapes) instead of tortilla chips for some quick and easy loaded potato nachos! They were a major hit in our house. Everyone loved them and was asking for more!

Not only are these loaded potato nachos delicious and easy to make, but they are so much fun thanks to the smiley faces on each McCain Smiles! In fact, we’ve already nicknamed these delicious nachos “Smiley Emoji Nachos” in our house!

What makes McCain Smiles so amazing? They’re full of real potato goodness, with no artificial colors or flavor. They take whole potatoes, peel, cook, mash, and then shape into adorable happy face “emojis!”

And let me tell you – potatoes make the perfect “base” for loaded nachos!

Loaded Potato Nachos (or Smiley Face Emoji Nachos) with McCain Smiles by Food Fun Family

Here’s how I made them:

Ingredients:

  • 1 (22-oz) bag McCain Smiles
  • 2-3 teaspoons Taco Seasoning
  • 1 cup shredded cheese (“Mexican” blend or other similar cheese)
  • ½ lb ground beef or chorizo sausage (or combination), crumbled, cooked and drained
  • Toppings: your choice of chopped lettuce, chopped tomato, diced avocado, sour cream, shopped cilantro, olives, guacamole, salsa, etc

Directions:

  • Preheat oven to 425° F. Line a baking sheet with aluminum foil. Spread McCain Smiles on the foil in a single layer. Sprinkle generously with taco seasoning.
  • Bake for 6 minutes; flip product over and bake for an additional 6 minutes.
  • Sprinkle with 1 cup cheese and return to oven; bake for an additional 2 minutes, or until cheese is melted.
  • Serve potato nachos hot topped with your favorite fresh nacho toppings.
  • Enjoy!

Having a pressure cooker has really taken the pressure off me (pun totally intended) at dinner time. If I forget to thaw meat for dinner or want a super delicious and quick meal, it’s there for me.  One of my favorite things to toss in the pressure cooker is chicken breasts -even better if they are crammed full of all kinds of tasty goodies. Ham & Spinach Stuffed Chicken Breasts are right at the top of my list!

Ham & Spinach Stuffed Chicken Breasts

Ingredients:

4 boneless skinless breasts

8 pieces thin sliced deli ham

fresh spinach

white cheddar

1 tsp. garlic salt

salt and pepper to  taste

Directions:

  1. Slice a pocket in your chicken breast along one side; be careful not to cut all the way through.

2. Cut a thick chunk of white cheddar cheese; place inside 2 pieces of ham and stuff into chicken.

3. Grab a handful of washed fresh spinach and stuff it in there too; use this to help your cheese stay inside.

Season outside of chicken breast well with salt, pepper, and garlic salt or powder. Use your pressure cooker’s brown feature to brown both sides of chicken breast in a small amount of olive oil. Then place chicken on top of the trivet of your cooker over 1 1/2 cups water.

Cook on high pressure for 8 minutes; release pressure naturally and keep the chicken in the pot for 8 additional minutes. Remove and serve with your favorite side for a tasty meal!
