Hi everybody! Yes, it’s THAT time of year again. Pumpkin Spice season! I’ve noticed that people tend to get pretty passionate about pumpkin spice everything…either they LOVE it and can’t get enough, or they can’t stand it. I’m definitely more on the “love it” side. ]]>Sometimes I get really spoiled with a houseful of teenagers.
Yes, I really did just say that.
Yesterday, my 14-year-old whipped up a beautiful (and very tasty) pumpkin roll with cream cheese-Cool Whip filling. It was scrumptious. There is something absolutely amazing about fall baking. It doesn’t get any better than this!
Note: if I hadn’t been feeling so awful while she was making tonight’s pumpkin roll, I would have shadowed her and taken pictures along the way to revamp the recipe post. This is an OLD recipe, but despite how the photos look, it is absolutely delicious!

]]>Well, this weekend took an unexpected turn and it has really thrown me for a loop. We thought we were far enough out of Irma’s path to not be directly impacted by the storm, but because of a few circumstances, we ended up spending most of the weekend packing the truck up with food, water, fuel, and supplies to send my husband TO FLORIDA. He arrived safely Monday. Luckily, our family members in Florida are safe, but they needed some extra help, and I’m grateful for a husband who was willing and ready to drop everything, to risk his own safety and comfort to travel down to help family members in need.
I’m up way later than I should be writing this post, but that’s the way the last 2 1/2 days have been. Exhausting! I’ll catch up on sleep another day.

]]>I love traveling, but at this moment, after coming home from 6 days in San Diego (with a nasty cold), I’m ready to sleep for a little while and not get on another plane for an even longer while. Maybe for the rest of the year. The right trip may persuade me to change my mind…but right now I’m happy to keep my feet on the ground and rest my head on my own pillow.
I sure do miss my mom and my nephews, though!

]]>It’s another travel week for me. I just got to LA yesterday and will be heading to the red carpet premiere of Queen of Katwe tonight. I just screened the movie last night and have to say….you MUST see this movie when it comes out in theaters (opening 9/30, and in select markets on 9/23!!). It is incredible! I grew up surrounded by grandparents, aunts, uncles, and cousins, and we always got together at Grandma and Grandpa’s house for holiday meals. Everyone had their specialty dishes that they’d bring every year, and with a big family like ours that meant a TON of delicious food. Each dish became an important part of our holiday tradition, and we noticed each time that a favorite recipe was missing. Note: affiliate links included within this post.
I have continued to make our traditional holiday“Wonderful” for the last 20+ years, and the chocolate version is an all-time favorite dessert in our house. This year, I thought I’d try giving our Thanksgiving classic dessert a pumpkin twist, and I cannot begin to describe how delicious it was.
“Wonderful” starts out with a basic shortbread-type crust baked in a 9×13 pan (I added finely crushed pecans to the pumpkin version because pumpkins + pecans = perfection). On top of the crust is a cream cheese-powdered sugar-Cool Whip layer. Once that has chilled for a little while, you add a layer of pumpkin spice pudding (a seasonal treat that can be found near the regular puddings…but don’t fret if you can’t find any. You can substitute any pudding (the small 3.4 oz. boxes) for the pumpkin. Top the layers off with the rest of the Cool Whip and a sprinkling of some additional crumbled pecans.
The only question is whether I like the chocolate version or the pumpkin version better…

Pumpkin Instant Pudding is a seasonal treat made by Jello, and can be found in October and November next to the rest of the pudding boxes. If you can't find pumpkin pudding, or if pumpkin isn't your thing, then you can substitute your favorite pudding flavor!
Also, it's totally fine to leave the nuts out.

I have to admit – when I saw that the latest theme for our Fresh Flavors Swap linky party was savory pumpkin recipes (main dishes, appetizers, sides, and more), I thought it would be a real stretch to find many non-dessert recipes using pumpkin. Before last week, I had never cooked any savory pumpkin dishes and I guess I hadn’t been keeping my eyes open for all the recipes that were out there. After this week, I am floored by all of the delicious savory pumpkin recipes that exist! I’m afraid I’m going to drive my family crazy trying a bunch of these…
That’s right, pumpkin is not just for baking! It’s a versatile, healthy, delicious ingredient to use in all sorts of recipes all year long.

]]>You are going to LOVE this pumpkin potato soup – your new favorite soup for winter!
When I think of cooking with pumpkin, I typically think of sweet, baked treats (I’ve made plenty of them over the years!) but I’ve very rarely had savory dishes with pumpkin.
Since tomorrow’s Fresh Flavors Swap is all about pumpkin main dishes, I knew that I wanted to at least attempt to add pumpkin to a dinner this week. I’ve seen pumpkin soup before, but I had never tried it before this week. I wasn’t sure if my family would be keen on pumpkin soup for dinner, so I thought I’d be sneaky and add pumpkin to a hearty potato soup that they’d normally eat.
My little pumpkin soup experiment was a huge success. Everyone in the family loved the soup, and they had no idea that there was pumpkin in it! The pumpkin made the soup thick and creamy and perfect. I can’t wait to make it again!

I based this recipe on a Sausage Potato Spinach Soup recipe I found on Damn Delicious. I thought it would taste great with pumpkin, and I was right!
