My second daughter graduated high school last weekend, and the rest of the kids finish up school in less than two weeks. Swim team has already started meeting for daily practice after school.
The air conditioning is on and the garden is growing.

]]>I got a pressure cooker (Amazon link) last year for my birthday and for over 6 months it sat in the unopened box in my pantry, taunting me. I had big plans for it – canning, meals, desserts – but I was intimidated by it so I didn’t even open the plastic. Then I just decided I had to give it a try and I was left wondering where the heck had this amazing thing been all my adult cooking life?
Forgot to pull meat for dinner? No problem! In a rush and need a full meal in 30 or less? Yep, it can do that. So now I am obsessed with my pressure cooker and use it at least twice a week for mouthwatering dinners in a flash like this recipe for Pressure Cooker Greek Stuffed Chicken Breasts- I even whipped up a from scratch Tzatziki sauce to top it with!
2-4 boneless skinless chicken breasts
1/2 cup feta cheese
4-6 pepperoncini peppers
1 tsp. oregano
1 tsp. salt
1 tsp. ground black pepper
Tzatziki sauce:
1/2 cup greek yogurt
1 1/2 tsp. lemon juice
1 tsp. dried oregano
2 T. grated cucumber
1/2 tsp. salt
1/2 tsp. ground black pepper

Directions:

2. Stuff pocket in chicken breast with feta, I chose one that was seasoned with sun-dried tomatoes and basil for more ready to go flavor!

3. Season the outside with salt, pepper, and oregano.
4. Turn pressure cooker on brown and give both sides of your chicken a nice brown on each side.

5. Remove stuffed chicken breasts from the pressure cooker and set aside. Add 1 cup chicken broth and 1/2 the juice from a jar of pepperoncini to pressure cooker. Place steamer basket/tray in cooker and lay your chicken on top with a pepperoncini on top.

6. Place your lid on top securely, be sure the steam valve is closed. Cook for 8 minutes on high pressure, release pressure naturally and allow chicken to sit for another 8 minutes.
7. While your chicken sits you can toss together this yummy tzatziki sauce! Just mix together greek yogurt, lemon juice, oregano, grated cucumber, salt and pepper. Place in fridge until ready to drizzle over chicken mixture.

As each new year begins and we say farewell to the old year, the same handful of thoughts goes through my mind…how can I make this coming year better than last? How can I spend more time with my family and less time working, cleaning, shopping, and cooking? How can I meet my healthy living goals (including losing a little weight!) without spending all my time stressing over what I eat?
I love to cook. I really do. But I don’t have the time to spend hours in the kitchen every night. There’s just no way. Between work that needs to get done and kids that need to be picked up and dropped off, it’s practically impossible to dedicate more than a few minutes to getting dinner prepped and served each night.
Typical “fast” dinner options simply aren’t an option for our family very often. With our family of six at home (including three teens and a tween), a lot of the convenience options are just too pricey, not to mention the fact that they are usually not very diet-friendly.

Recently, we made easy Greek-style chicken wraps for dinner, and not only did the kids declare their love for them, but my husband claimed that they were THE BEST wraps I had ever made. That’s a pretty bold statement for a dinner that only took me 15 minutes to make!
Because I knew everyone’s preferences are slightly different, I let everyone assemble their own wraps, which means that there are no specific measurements for ingredients. I personally love mine filled with a whole lot of everything. My son left off the olives, and my daughter preferred hers without sauce. So adjust the ingredients to suit your family’s needs.

]]>This recipe for easy Thai peanut curry chicken and vegetables is the bomb! Emphasis on the EASY. Who doesn’t love a family dinner idea that is ready in about 30 minutes? You are going to love it!
Do you ever base an entire meal on a single ingredient you find in your cupboard and are determined to use? I’ve had a jar of Red Curry Sauce from Trader Joe’s (<—psst…that’s an Amazon affiliate link to the red curry sauce I used, just in case you don’t have a Trader Joe’s nearby) in my pantry for what feels like ages, and I decided it was finally time to do something with it.
This dinner was so easy, so quick, and so delicious. What more do you need to know? I made it unique by throwing in a few vegetables, but this sauce is so versatile that you could add a different variety of vegetables or just skip the veggies altogether. Although the veggies were my favorite part (I got to eat some of the kids’ extra, unwanted vegetables, because even teenagers are picky sometimes!).
I made this dish in my large 12-inch cast iron skillet (another Amazon affiliate link) but you can use any large skillet. I’m just partial to my cast iron!

As simple as this dish was to make, it really did have a “fancy” taste, and I think that can be attributed to the Classico Riserva Pasta Sauce. An old classic: Meatloaf. Mom’s signature dish. Either you like it or you don’t (I, for one, love it!). Which is odd since I am not a fan of eating a lot of meat all at once. But the meat with the mashed potatoes in these recipes mixes it up just enough to make it one of our favorites!
This is also a very easy dump, mix and bake type recipe. There are no difficult steps, or weird things that you’ll have to spend tons of money on. Just simple wholesome ingredients!
For the meatloaf, I would recommend grass-fed organic beef, or at least a low fat content variety. Since you will be baking it, the fat won’t be drained out, so a low fat content will help with not having a lot of excess fat with your meal.
You can eat the meatloaf muffins as is, (with some optional ketchup on top per the comfort food rule!) or add the mashed potato topping, which you can whip up before your meatloaf is done in the oven.
The mashed potatoes can be made with any kind of potatoes, even sweet potatoes would work! I used large reds for this recipe.
Note: The amount that this makes will vary by the amount of potatoes and the size that you use. It also depends on how much your family likes potatoes, more might be better for those who love their potatoes!

]]>Believe it or not, sometimes I cook dinner for my family JUST to cook dinner for my family….not to make a gorgeous meal to share on Pinterest. And sometimes I don’t plan ahead and it gets to be 5:30 and the crew is getting hungry and I have no idea what to feed them.
It happens quite frequently, actually.
This meal did not start out as something I wanted to share with anyone else, because it was just one of those “throw something together” dinners. But then I snapped a picture (with horrible lighting, I might add!) and shared it on Instagram and so many people loved it that I decided I’d better snap a few more pictures and write up a recipe.
When I don’t know what to cook, I look through the fridge, freezer, and on the shelves to see what I might be able to throw together. When I’m pressed for time and ideas, I tend to skip the traditional recipes and cookbooks and instead base a meal on whatever ingredient I can find that sparks some inspiration.
This past week, I found some smoked sausage in the freezer (a family-staple that we almost always have on hand) and I knew I had some sun dried tomato pesto and fettuccine on hand in the pantry. I figured that I could use those three ingredients to make something worth eating.
You guys. It was so good!
I love when I discover recipes that are so easy to make and hardly take any prep time for those weeknights when I simply don’t have time, energy, OR inspiration to make something fancy.
Bonus points when they taste good and everyone likes them, too.

We are really trying to snack “outside the box” this year and come up with better solutions for filling up our bellies. I suggested a baked chicken fajita quesadilla and the girls were enthusiastically for it!

I wanted to make sure that I made something that would travel well and taste great (so they eat it instead of waste it). I loved that I could make several quesadillas at once and toss them in a bag in the fridge for the kids to put in their school lunches in the morning.
When the kids get home from school, they’re always hungry. These quesadillas reheat nicely (since we all love love hot, melty cheese) and are and easy snack to grab to fill in that gap between school and dinner time. But they also taste great cold (kind of like a covered slice of chicken fajita pizza) so they’re a perfect sandwich substitute. The best part (for me!) is that I can make so many at once and keep them handy for whenever hunger strikes (and with 5 kids, it strikes often).
