I got a pressure cooker (Amazon link) last year for my birthday and for over 6 months it sat in the unopened box in my pantry, taunting me. I had big plans for it – canning, meals, desserts – but I was intimidated by it so I didn’t even open the plastic. Then I just decided I had to give it a try and I was left wondering where the heck had this amazing thing been all my adult cooking life?

Forgot to pull meat for dinner? No problem! In a rush and need a full meal in 30 or less? Yep, it can do that. So now I am obsessed with my pressure cooker and use it at least twice a week for mouthwatering dinners in a flash like this recipe for Pressure Cooker Greek Stuffed Chicken Breasts- I even whipped up a from scratch Tzatziki sauce to top it with!

Pressure Cooker Greek Stuffed Chicken Breasts

Ingredients:

2-4  boneless skinless chicken breasts

1/2 cup feta cheese

4-6 pepperoncini peppers

1 tsp. oregano

1 tsp. salt

1 tsp. ground black pepper

Tzatziki sauce:

1/2 cup greek yogurt

1 1/2 tsp. lemon juice

1 tsp. dried oregano

2 T. grated cucumber

1/2 tsp. salt

1/2 tsp. ground black pepper

Directions:

  1. If your chicken breasts are large like mine were, cut them in half and then slice a pocket in the center of one side, careful not to cut it all the way through. Otherwise for smaller ones you can just serve one per person.

2. Stuff pocket in chicken breast with feta, I chose one that was seasoned with sun-dried tomatoes and basil for more ready to go flavor!

3. Season the outside with salt, pepper, and oregano.

4. Turn pressure cooker on brown and give both sides of your chicken a nice brown on each side.

5. Remove stuffed chicken breasts from the pressure cooker and set aside. Add 1 cup chicken broth and 1/2 the juice from a jar of pepperoncini to pressure cooker. Place steamer basket/tray in cooker and lay your chicken on top with a pepperoncini on top.

6. Place your lid on top securely, be sure the steam valve is closed. Cook for 8 minutes on high pressure, release pressure naturally and allow chicken to sit for another 8 minutes.

7. While your chicken sits you can toss together this yummy tzatziki sauce! Just mix together greek yogurt, lemon juice, oregano, grated cucumber, salt and pepper. Place in fridge until ready to drizzle over chicken mixture.

Recently, we made easy Greek-style chicken wraps for dinner, and not only did the kids declare their love for them, but my husband claimed that they were THE BEST wraps I had ever made. That’s a pretty bold statement for a dinner that only took me 15 minutes to make!

Greek-Style Chicken Wraps

Because I knew everyone’s preferences are slightly different, I let everyone assemble their own wraps, which means that there are no specific measurements for ingredients. I personally love mine filled with a whole lot of everything. My son left off the olives, and my daughter preferred hers without sauce. So adjust the ingredients to suit your family’s needs.

 

Greek-Style Chicken Wraps

Greek-Style Chicken Wraps

Ingredients

  • Tyson® Grilled & Ready Chicken Breast Strips
  • Olive oil
  • Sprinkle: Oregano, cumin, and lemon pepper
  • 1 clove garlic, minced
  • Wraps or flour tortillas
  • Fresh spinach
  • Feta cheese, crumbled
  • Kalamata olives
  • Cucumber, diced
  • Tzatziki sauce
  • Green onion, sliced

Instructions

  1. Drizzle a small amount of olive oil in a skillet over medium-high heat; add some minced garlic and stir. Add Tyson® Grilled & Ready Chicken Breast Strips to the hot oil; sprinkle with oregano, cumin, and lemon pepper. Cook chicken until heated through.
  2. Meanwhile, dice cucumber and prepare the other wrap ingredients.
  3. To serve, each family member takes a wrap and fills it with their desired ingredients. Roll the filled wrap up and secure it with a toothpick.

This past week I was feeling adventurous and tried something totally new for dinner. I love cooking Smithfield Marinated Fresh Pork for dinner, but I’m typically pretty boring when it comes to my pork tenderloin meals: roasted pork with a side of potatoes is an easy, no-brainer meal that I know the family will love. Smithfield Marinated Fresh Pork is Real Flavor, Real Fast, and I love that I can always count on Food Lion to have a good selection of flavors and cuts (Tenderloin, Loin Filet, and Sirloin) to grab for our family dinners.

This week, I had a new idea…and I wasn’t sure that it would work until I took my first bite.

Ingredients:

  • 1 Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet
  • Small flour tortillas
  • Cooked rice
  • Fresh cilantro, chopped
  • Toppings: chopped green onion, sour cream and shredded cheese, if desired

Fresh pico de gallo:

Mix together in a small bowl:

  • 3-4 fresh tomatoes, diced
  • 1 small onion, diced (white onions work best, but I’ve also used red onion)
  • 1/3 cup fresh cilantro, chopped
  • 1 fresh jalapeno, chopped, seeds removed
  • 1 tablespoon lime juice
  • 1 teaspoon kosher salt
  • Dash of pepper

Directions:

  • Cut pork loin filet into cubes. Sauté in a hot skillet until cooked through, about 10 minutes.
  • Serve pork in a warmed tortilla on top of rice. Top with fresh pico de gallo, sour cream, and cheese. Sprinkle with extra cilantro and green onions.

Do you ever base an entire meal on a single ingredient you find in your cupboard and are determined to use? I’ve had a jar of Red Curry Sauce from Trader Joe’s (<—psst…that’s an Amazon affiliate link to the red curry sauce I used, just in case you don’t have a Trader Joe’s nearby) in my pantry for what feels like ages, and I decided it was finally time to do something with it.

Easy Thai Peanut Curry Chicken - a quick one-skillet family dinner that is ready in about 30 minutes!

This dinner was so easy, so quick, and so delicious. What more do you need to know? I made it unique by throwing in a few vegetables, but this sauce is so versatile that you could add a different variety of vegetables or just skip the veggies altogether. Although the veggies were my favorite part (I got to eat some of the kids’ extra, unwanted vegetables, because even teenagers are picky sometimes!).

I made this dish in my large 12-inch cast iron skillet (another Amazon affiliate link) but you can use any large skillet. I’m just partial to my cast iron!

Ingredients
  • 4 boneless, skinless chicken breasts, cubed (or any boneless chicken pieces, cut into bite sized pieces)
  • 3 small to medium potatoes, cubed
  • 1 can sliced carrots, drained
  • 1 medium yellow onion, cut into chunks
  • 1 cup cubed bell peppers (I used a variety of colors)
  • 1 teaspoon garlic, minced
  • 2 tablespoons crunchy peanut butter
  • 1 (11 oz) jar Red Curry Sauce (NOT paste)
  • 2 teaspoons corn starch
  • 5-6 ounces of milk (fill the curry sauce jar about half full of milk)
  • Oil
  • Chopped, fresh cilantro, optional
  • Cooked rice, for serving
Instructions
  1. Heat oil in skillet. Add chicken pieces and stir for 3-5 minutes, until lightly browned. Add potatoes, carrots, onion, peppers, and garlic. Stir.
  2. Pour entire jar of red curry sauce over chicken and vegetables. Add peanut butter. Stir.
  3. Fill the empty curry sauce bottle about half way with milk. Add corn starch. Replace lid and shake well. Stir milk mixture into the skillet. Bring to a gentle boil.
  4. Turn the heat down to low, cover and simmer for about 20 minutes, or until potatoes are soft.
  5. Serve over hot rice and sprinkle with fresh, chopped cilantro.

Spaghetti and homemade meatballs has been a stand-by meal for as long as I’ve been a mom, but this past week I was determined to find a delicious recipe that I could make using chicken and spaghetti sauce. I was inspired by the Classico Riserva Pasta Sauce I had on the shelf, and I decided to try to make an easy chicken cacciatore for dinner this week.

You have got to try this recipe! Not only is it simple (with only a handful of basic ingredients), but it’s delicious….and it tastes like you’ve spent all day making it!

Easy Chicken Cacciatore

Easy Chicken Cacciatore

Ingredients
  • 6 pieces of boneless, skinless chicken (I used a mixture of chicken breasts and thighs)
  • 1 cup flour
  • 3 tablespoons olive oil
  • 8-10 mini bell peppers, seeded and sliced
  • ½ cup yellow onion, chopped
  • 1 jar (24 ounces) Classico Riserva Pasta Sauce (I used Eggplant & Artichoke)
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Parmesan cheese
  • Cooked spaghetti
Instructions
  1. Heat olive oil in a large, heavy skillet (I used my favorite cast iron skillet).
  2. Dip each piece of chicken in a shallow bowl of flour. Cover both sides. Add chicken to hot skillet. Sprinkle with salt and pepper to taste.
  3. Heat chicken, turning once, until lightly browned on both sides.
  4. Add sliced mini bells and onion on top of chicken. Pour the full jar of Classico Riserva Pasta Sauce on top of everything. Sprinkle with dried basil. Turn heat to low and simmer for 30 minutes.
  5. To serve, sprinkle generously with Parmesan cheese and serve over hot spaghetti.

As simple as this dish was to make, it really did have a “fancy” taste, and I think that can be attributed to the Classico Riserva Pasta Sauce. Meatloaf Muffins with Ranch Style Mashed Potatoes - an easy family-friendly recipe!

An old classic: Meatloaf. Mom’s signature dish. Either you like it or you don’t (I, for one, love it!). Which is odd since I am not a fan of eating a lot of meat all at once. But the meat with the mashed potatoes in these recipes mixes it up just enough to make it one of our favorites!

This is also a very easy dump, mix and bake type recipe. There are no difficult steps, or weird things that you’ll have to spend tons of money on. Just simple wholesome ingredients!

Meatloaf Muffins with Ranch Style Mashed Potatoes - an easy family-friendly recipe!

For the meatloaf, I would recommend grass-fed organic beef, or at least a low fat content variety. Since you will be baking it, the fat won’t be drained out, so a low fat content will help with not having a lot of excess fat with your meal.

You can eat the meatloaf muffins as is, (with some optional ketchup on top per the comfort food rule!) or add the mashed potato topping, which you can whip up before your meatloaf is done in the oven.

The mashed potatoes can be made with any kind of potatoes, even sweet potatoes would work! I used large reds for this recipe.

Ingredients
Meatloaf
  • 1 lb Ground Beef
  • ½ Cup Whole Grain Rolled Oats
  • 1 Egg
  • ½ Tsp Pepper
  • 1 Tsp Salt
  • ½ Cup Diced Onion
  • 2 Cloves of Garlic minced, or an equal amount of store bought minced garlic.
  • ¼ Cup Ketchup
  • ¼ Cup Milk
Ranch Style Mashed Potatoes
  • 5 Medium Potatoes
  • ¼ tsp Parsley
  • ¼ tsp Dill
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ⅓ Cup Buttermilk
Instructions
  1. Preheat your oven to 350 degrees.
  2. Add all of the ingredients to a mixing bowl and mix with your hands or a stand mixer. Be sure to get everything incorporated well.
  3. Grease a cupcake pan, or place silicone cupcake liners in one. (I swear by silicone and it works exceptionally well with meat, it won’t stick!)
  4. Bake in the oven at 350 degrees for one hour. Be sure to cut one open before calling it done to be sure it’s cooked all the way through to your liking.
Ranch Style Mashed Potatoes
  1. Put a pot of water on the stove the appropriate size for your potatoes to cook in. Let it heat up while you do step number two.
  2. Peel and chop your potatoes, you can leave the peel on, but be sure to clean them well if you do.
  3. Once the water is boiling add in the potatoes and cook them until they are tender, about 20 minutes.
  4. Strain the potatoes, and put them into a stand mixer or a bowl to use a hand mixer with.
  5. Add in the spices and buttermilk and mix well. They should fluff up a bit.
  6. I used an ice-cream scoop to put the mashed potatoes on the meatloaf muffins, but you can use a spoon, or simply just eat them together.
Notes
For the Ketchup, since I have tried and just dislike making my own ketchup a lot, I use Hunts brand. There are no corn syrups, just a few ingredients, and it’s affordable. Even when you make ketchup at home you add sugar, it just doesn’t taste right without it!
I used whole milk, but any milk will work, including almond or soy!
An optional ingredient would be cheese, just mix it in with the rest of it before putting it into the muffin cups.

 

Note: The amount that this makes will vary by the amount of potatoes and the size that you use. It also depends on how much your family likes potatoes, more might be better for those who love their potatoes!

This meal did not start out as something I wanted to share with anyone else, because it was just one of those “throw something together” dinners. But then I snapped a picture (with horrible lighting, I might add!) and shared it on Instagram and so many people loved it that I decided I’d better snap a few more pictures and write up a recipe.

When I don’t know what to cook, I look through the fridge, freezer, and on the shelves to see what I might be able to throw together. When I’m pressed for time and ideas, I tend to skip the traditional recipes and cookbooks and instead base a meal on whatever ingredient I can find that sparks some inspiration.

This past week, I found some smoked sausage in the freezer (a family-staple that we almost always have on hand) and I knew I had some sun dried tomato pesto and fettuccine on hand in the pantry. I figured that I could use those three ingredients to make something worth eating.

You guys. It was so good!

These easy chicken fajita quesadillas could not be any easier or more tasty! One simple trick makes this recipe SO much easier than any other chicken quesadilla recipe you've tried before!

I have been loving the HORMEL® Premium Chicken Breast that I picked up at the grocery store the other day! It’s an easy way to add great-tasting, satisfying protein to our family meals and snacks. I love how Hormel brands make recipes quick, easy, affordable and tasty!

On Friday, I made a family-friendly on-the-go dinner in less than 15 minutes (check out my recipe for Chicken Caesar Salad Pinwheels) and then I brainstormed with my teenage daughters to come up with a tasty and easy-to-prepare school lunch and after-school snack option. We are really trying to snack “outside the box” this year and come up with better solutions for filling up our bellies. I suggested a baked chicken fajita quesadilla and the girls were enthusiastically for it!

I wanted to make sure that I made something that would travel well and taste great (so they eat it instead of waste it). I loved that I could make several quesadillas at once and toss them in a bag in the fridge for the kids to put in their school lunches in the morning.

When the kids get home from school, they’re always hungry. These quesadillas reheat nicely (since we all love love hot, melty cheese) and are and easy snack to grab to fill in that gap between school and dinner time. But they also taste great cold (kind of like a covered slice of chicken fajita pizza) so they’re a perfect sandwich substitute. The best part (for me!) is that I can make so many at once and keep them handy for whenever hunger strikes (and with 5 kids, it strikes often).

Easy Chicken Fajita Quesadillas

Yield: 6 quesadillas

Easy Chicken Fajita Quesadillas

Ingredients

  • 1 can Hormel® Premium Chicken Breast, drained
  • 1 teaspoon fajita seasoning
  • 1 tablespoon fresh cilantro, diced
  • 3 cups shredded cheese (I used Colby Jack)
  • 12 small flour tortillas
  • Olive oil

Instructions

  1. Preheat oven to 400° F. Cover a cookie sheet with aluminum foil and spray with non-stick cooking spray or spread with olive oil. Place half of your tortillas on foil (note: I could only fit 3 quesadillas on my cookie sheet at a time).
  2. Mix fajita seasoning with drained chicken, shredding the chicken as you mix. Add cilantro and cheese and toss well.
  3. Place a heaping 1/2 cup of chicken and cheese mixture on top of each tortilla. Carefully spread cheese mixture over over tortillas and cover with another tortilla. Brush olive oil over the top of each tortilla.
  4. Bake for 5 minutes and then flip each quesadilla. Bake for an additional 2 -3 minutes. Remove from the oven and let cool for a few minutes, and then cut each quesadilla into quarters. Serve with salsa, sour cream, guacamole, or just eat plain.
