It’s the time of year when gardens are bursting with fresh tomatoes and cucumbers (and lots of other garden vegetables)! We probably have upwards of 100 tomatoes on the vines in the backyard right now, and my mouth waters just thinking about eating all of those vine-ripened tomatoes. I look forward to this time of year all year long.
Cucumber Tomato Salad is one of my favorite classic garden salad varieties, and this one is made even better with a simple vinaigrette dressing. This recipe is a perfect side-salad size to serve with dinner, but can easily be doubled if you’d like to make a larger salad. I’ve also had very good luck eating this salad the next day. Unlike leafy salads, this stores very well in the fridge!
Do you have a vegetable garden? What are your favorite garden veggies to grow?
1. Slice cucumbers and cut into quarters. A lot of people prefer to peel the cucumbers first, but this recipe works perfectly fine if you want to leave the peel on.
2. Cut tomatoes into bite sized pieces.
3. Peel onion and cut in half. Set one half aside.
4. Slice the onion half and and cut each slice in half, breaking apart all slices.
5. Add cucumbers, tomatoes and onion to a bowl. Pour in wet ingredients and spices. Toss well.
6. Alternatively, you can prepare the vinaigrette dressing first by mixing wet ingredients and spices, then pouring over cucumber mixture.
7. Chill for an hour, then serve.
You can add more or less of the cucumbers, tomatoes, or onions according to your taste. This salad is very versatile and always a hit!

]]>The kids are finally out of school for the summer and I’m shocked at how fast the time is already flying by. It’s HOT around here, and the boys seem to want to spend their days in one of two places: the pool or the couch playing video games. Sigh.
The 4th of July will be here before we know it, and I can’t wait for the backyard BBQs and our traditional picnic on the grass while we wait for the county fireworks to start. These firecracker popcorn balls (with a fun surprise inside!) are such a fun and tasty treat to take to any Independence Day celebration or get-together this year.
And best part of all, they’re a fun and easy kitchen project that the kids can help with (believe me, they’ll love drizzling the blue and red melted candy coating over the popcorn balls and sprinkling them with red and blue sprinkles…almost as much as they’ll enjoy biting into the popcorn balls and discovering the Pop Rocks inside!
Side note: my kids LOVE Pop Rocks. We go to this local ice cream place and for years the only ice cream any of them would get was vanilla mixed with Pop Rocks. I guess there’s something fun about having your tongue fizzle while you eat, right?
Here’s how easy these popcorn balls are to make! Where would you like to take these treats?

1 bag popped popcorn
1 bag marshmallows (10 oz)
Red wafer melts (6 oz)
Blue wafer melts (6 oz)
2 packs blue Pop Rocks
2 packs red Pop Rocks
Red & Blue Sprinkles
1. Melt marshmallows on low heat
2. Mix melted marshmallow with popcorn
3. After cooling a minute, use greased hands to shape gooey popcorn into balls, leaving a hollow pocket inside the ball
4. Fill pocket with 1 tsp Pop Rocks and close hole all the way with more popcorn
5. Melt wafer melts as directed on package
6. Use a fork or a piping bag to spread melted wafers over balls and add sprinkles, if desired
7. Let cool completely before enjoying
Here’s a printable recipe for you. Just click on the image below (don’t right click, because that will save the smaller photo file and won’t print as well). Enjoy!
These Firecracker Popcorn Balls are easy to make and so much fun to eat. They're a red white and blue sweet treat with an exciting surprise waiting on the inside of each popcorn ball!

]]>One of my family’s Spring Break traditions is to spend lots of time together in the kitchen. Spring Break for my kids starts tomorrow (we have a late one this year!) so I’m just barely starting to think about all of our spring traditions.
We love to hard boil and dye eggs, make batches and batches of sugar cookies and bowls full of homemade frosting in a rainbow of pastel colors and then decorate them (and eat them for days!).
It’s all about the Easter food!
This year I’m in mourning because our kitchen is STILL only half-functional, and it’s going to be a bigger challenge to make dyed Easter eggs, sugar cookies, or other treats. I’m so excited for the weekend when we’ll be getting together with our friends for a big Easter dinner (and I can use their kitchen to cook all day!).
If you’re luckier than I am this week and have a full-functioning kitchen, these cake ball eggs are not only super cute and festive, but they are beyond delicious, too! Use funfetti cake mix for a fun look inside your cake ball eggs, and mix up the flavors and use yellow cake mix with strawberry frosting. The great thing about this recipe is that there’s so much room for variations in color and flavor!
Here’s what you need to start:
Crumble cupcakes into a large bowl and stir in frosting until completely combined.
Form mixture into 12 egg shapes with your hands and place on a baking sheet lined with parchment paper or wax paper. Place in the freezer for 10 minutes to set.
While cake ball eggs are chilling, grab your fondant. Set aside a small amount of uncolored fondant for the polka dots at the end.
Work pink GEL food coloring into larger portion of fondant until the desired color is consistent throughout. Separate fondant into 3 equal-sized pieces, set 2 aside and work with one piece at a time.
Roll one section of fondant flat (about 1/8-inch thickness).
Cut rolled out fondant into 4 sections with a sharp knife.
Remove eggs from the freezer and wrap one egg in one of the sections of fondant you just cut.
Repeat until all eggs are covered in fondant. Do not try to work the egg too much, just get it covered–the more you handle the fondant, the more sticky it will get.
Place eggs into the freezer for another 10 minutes to set. Remove eggs from freezer and make tiny circles with the white fondant you set aside earlier; mash those tiny circles randomly onto the outside of the eggs.
Chill your Easter egg cake balls until ready to serve.
These Easter egg cake balls are fun to make and delicious to eat. They're the perfect easy Easter recipe that everyone in the family will enjoy.
1. Crumble cupcakes into a large bowl.
2. Mix cupcake crumbles with frosting until completely combined.
3. With your hands, form mixture into 12 egg shapes and place on a baking sheet lined with parchment paper or wax paper.
4. Place in the freezer for around 10 minutes to set.
5. Set aside a small amount of fondant for use at the end.
6. Work pink GEL food coloring into larger portion of fondant until the desired color is consistent throughout. I like to knead the fondant by hand. It's messy but it works great!
7. Separate fondant into 3 equal-sized pieces, set 2 aside and work with one piece at a time.
8. Roll the ¼ section of fondant flat (about ⅛-inch thickness).
9. Cut into 4 sections with a sharp knife.
10. Remove eggs from the freezer and wrap one egg in one of the quarter sections of fondant you just cut.
11. Repeat until all eggs are covered in fondant. Do not try to work the egg too much, just get it covered--the more you handle the fondant, the more sticky it will get.
12. Place eggs into the freezer for 10 minutes to set.
13. Remove eggs from freezer and make tiny circles with the white fondant you set aside earlier.
14. Mash those tiny circles randomly onto the outside of the eggs.
15. Place eggs back into the freezer until ready to serve. Serve cold.

]]>While our kitchen has been in a never-ending construction state for the last couple of months, we’ve been making more crock pot recipes (plus, slow cooker meals are exactly what the middle of the winter calls for). I’ve always hated cleaning the crock pot, and our #1 problem with cooking lately is our difficulty in cleaning dishes with no kitchen sink…but I discovered the amazingness of slow cooker LINERS (yes, that is an Amazon affiliate link in case you want to be like me and avoid washing the crock pot).
I don’t think I’ll ever go back to cooking in a “naked” crock pot!

]]>I’m sorry I’m so late getting this post up for you guys this week! WordPress decided to stop working for me, but after many frustrating tries, I finally found a solution. Hallelujah! We’re back in business!
This week, we’ve decided to feature some of the tasty breakfast recipes that our readers have shared on the party recently. These certainly have my mouth watering! I’m not a big fan of cooking in the morning (I like quick and easy when I’m starting my day) but I LOVE breakfast foods and enjoy making breakfast-for-dinner. It’s one of our favorite family traditions.

]]>We’ve had a brief spring “preview” here in Maryland, and I’m eager and excited for the weather to warm up more permanently.
But more than anything else, I’m eager for our house renovations to be done so that I can get back to cooking regularly. I’m hoping that this long break from cooking and doing dishes will make me appreciate the ability to cook even more!
This week, my fellow Delicious Dishes hostesses and I decided to feature recipes using ground beef. Ground beef is one of the easiest and most versatile starting points for dinner, and I almost always have some ground beef on hand. What about you?

]]>Happy Tuesday! This past week has been a whirlwind of excitement for our family. We’ve been slowly preparing to move for the last several months, but kicked the process into high gear this week when we found what seemed like our dream house.
We still love the location and the idea of the house, but the reality was that the house was in very bad shape and the owners were seriously loony.
The good news is that we’ve held onto that motivation to move faster on the things we need to do at our house to get it ready to sell and then find a new place.
It’s all good.
This week for Delicious Dishes, we’ve chosen some delicious chicken recipes that are sure to become new family-favorites. Once I have a working kitchen again, I’ll be making ALL of these chicken dishes for sure!

]]>It has been a crazy week and start to February. Last Tuesday, after our last Delicious Dishes post was published, we adopted a 7-month old kitten named Cody.
He is adorable, cuddly, curious and playful, and he already gets along fabulously with our big, old dog Jax.

]]>I was gone most of the day Monday preparing for today.
Somehow this ordinary Tuesday turned into the day that we’re adopting a kitten.
A year and a half ago, we were a family without pets. Now we’re all in.
I have a very happy 15-year-old girl living down the hall from me.
For this week’s Delicious Dishes Recipe Party, each of the hosts has chosen their favorite part of a 6-course Valentine’s Day dinner. Then we put them all together to create a delicious fancy (and dare I say romantic?) dinner.
