I tried all three and love each one. They are so soft, but they’re also hearty and filling. I love that they taste more like my fresh baked bread than something off the shelf. They’re especially delicious toasted with some melted butter, or grilled with some cheese. Yum!
I took a toasted, cheesy sandwich to the next level with my sun dried tomato tuna panini. I made it the other day for lunch, and my husband, who had just made himself a peanut butter and jelly sandwich on a boring slice of bread, was insanely jealous of my gourmet sandwich made with Harvest Blends Ancient Grain. I have to admit…it was a beautiful sandwich!
Luckily, it’s so easy to make, using just a few ingredients, and is ready in less than 10 minutes.

When you’ve got 2 kids in karate, 3 kids taking piano, 2 boys in scouts, 3 girls in youth group, one kid in drama, one with a job, one in track (you get the picture) …you need lots and lots of quick dinner ideas. I’ve been more creative this year than ever before, and I’m loving it. Dinner doesn’t have to be complicated to be good. And it doesn’t have to take long to prepare to be tasty, either.
So many of the 15 Minute Suppers that I’ve made in the last 6 months (yes, I’ve been doing a weekly #15MinuteSuppers recipe for over half a year!) can be paired with a quick raw veggie or a green salad (salads don’t have to be complicated, either!). I am loving the quick meal revolution that has been happening in my family.
This week, I made a dinner that was quickly coined “classy pizza” (by a certain teen who is not overly fond of pizza) after the second bite. This particular teen was so fond of these pizza paninis that she has actually asked for them again.
Like most nights, I was rushed and tried to take some quick shots before having to rush out the door again…and the lighting was NOT cooperating. I love cooking, but I cook for my family, not for the camera…and this time around the family won. Hopefully you can still tell how easy and delicious these paninis are, despite the pictures.
These pepperoni pizza paninis have so much going for them – Quick to prepare, kid-friendly, easy to eat on-the-run, and yummy! We’ll be making them again!

I have a hard time writing “recipes” for sandwiches, because…well, they’re sandwiches. Get two slices of bread, layer them with yummy ingredients, slice in two and eat.
Sandwiches can be as simple as the peanut-butter-only lunches I make every morning for my 3rd grade son, but they can also be filling enough to eat for dinner.
BLTs are a favorite at our house – bacon, lettuce, and tomato with some mayo on toasted bread – but every once in a while I like to make loaded BLTs for fun. They really don’t take much extra preparation time, but the extra deliciousness added in between the toasted bread is totally worth it!
BLTS are so simple and quick but so delicious! The addition of guacamole, spicy mayo, and a slice of pepper jack cheese (my favorite!) totally kick this “ordinary” sandwich up a notch. I’m craving another now!

When I eat a sandwich, I want something bold…not something boring. This past week, I made a sandwich that took bold to a whole new level – I even called hubby up from his desk to share because I was so excited with how it turned out.
Oscar Mayer has a new line of BOLD deli meats, with flavors that include:
I’ve tried both Italian-style turkey breast and chipotle seasoned chicken breast, and those who know me will not be surprised that it was the chipotle chicken breast that inspired me to get creative.
I loved that this sandwich was super-quick to make but not even CLOSE to ordinary or boring. I loved that it used fresh, cool ingredients, making it a perfect lunch or dinner option for spring and summer meal time. But the thing I loved most about this sandwich was that the deli chicken was so perfectly seasoned that it didn’t need much else. But of course, I had to add a few of my favorite sandwich toppings (and one unique addition, too)…

Just a little tip: Oscar Mayer Deli Fresh BOLD meats are also amazing straight out of the fridge. I’ve been rolling them up in a slice of cheese for a quick pick-me-up snack, and the flavor burst is incredible! These are definitely my new favorite sandwich meats!

]]>The other day, meatballs were on sale at the grocery store…so of course I had to pick some up. Not in the mood for spaghetti and meatballs, I set off to figure out a different way to enjoy some meatballs. What I came up with – super-easy meatball sliders – were a hit.
They’re perfect as a meal-on-the-go, a crowd-pleasing appetizer at your next get-together, or as a kid-friendly sit-down dinner with a salad or fresh veggies and Ranch dip (my kids’ favorite).

Place a slice of cheese on each open roll.
Put a spoonful of spaghetti sauce on each roll.
Slice each meatball in half and place on top of each roll (3 meatballs fit my rolls perfectly).
Put top of roll on each slider and heat in a 400° oven until the cheese melts.

Do you ever discover a new recipe that is such a hit with everyone in the family that people ask for it again and again…the same week? THIS is that recipe.
It all started with a ham. I had cooked a ham for dinner and had too many leftovers. The ham got me thinking about chicken cordon bleu. I brainstormed how I could make a quick chicken cordon bleu…and when I saw the sliced French bread at the store when I went to get the other ingredients, I knew what the perfect recipe would be.
Since that first time we made these paninis, we’ve made them twice again. So easy and so delicious. You MUST try them.

]]>I love Thanksgiving. I love spending all day in the kitchen cooking a dozen different dishes. After nearly two decades of cooking Thanksgiving dinners, I’ve got my system down pat….and as long as the rest of the family steps in to wash dishes every once in a while and preps the rest of the house for Thanksgiving day guests, then I’m happy to cook for 6 hours.
But only for holidays.
Typically, I like to keep my meal-preparation time down to as short a time as possible.
The other thing I love about Thanksgiving (probably even more than cooking all of my special holiday dishes) is eating Thanksgiving leftovers for days. I love all of the leftover turkey but I admit that even turkey eaten the same way (mashed potatoes and gravy, stuffing and cranberry sauce) can get old after two days.
This year, I found a delicious (and I mean DELICIOUS) way to mix up the turkey leftovers. This panini is so tasty that you’ll want to make it all year…and that’s totally doable with some sliced rotisserie chicken. I found this recipe on Panini Happy (oh my goodness! If you love paninis, you must check out this fabulous site!) and fell in love with this combination, based on the classic Reuben sandwich.
