The holidays may be over, but I am still enjoying the classic scents and flavors of the winter. In fact, I have a pot of orange, lime, cranberry, and cinnamon stick potpourri simmering on top of my wood stove as we speak.
I had this recipe post all set to share before Christmas, but I’ve been having some pretty major website issues. My site was finally successfully migrated to a new host, and for the first time in months I can upload photos to my site, log in without using a backdoor trick I figured out….it’s a happy day!
Ok, now on to that recipe I wanted to share with you guys over a month ago! Luckily, delicious breakfast recipes don’t have a “season,” right?
2 cups fresh cranberries
1/4 cup orange juice
1 cup sugar, divided
1/4 tsp ground cinnamon
1/2 tsp kosher salt, divided
4 tbsp butter, melted
2 cup whole milk
3 large eggs, slightly beaten
zest from 1 large orange
1 tsp pure vanilla extract
1 Loaf of day-old Challah bread, cubed
1. Spray a 7inch springform pan with nonstick baking spray
2. Cover the bottom with parchment paper
3. Using a medium sauce pan, bring cranberries, orange juice, 1/2 cup sugar, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt to a boil in a saucepan over medium-high heat.
4. Cook until the berries have popped and thickened slightly about 5 minutes. Remove from heat
5. Pour the cranberries into the springform pan
6. In a large bowl, whisk together melted butter and 1/2 cup sugar.
7. Add milk, beaten eggs, orange zest, vanilla, and salt. Mix in cubed bread.
8. Let rest until the bread absorbs the milk, stirring occasionally.
9. Spread bread mixture on top of cranberry sauce in pan.
10. Pour 1 cup water into the pressure cooker pot and place the trivet in the bottom.
11. Cover springform pan with foil and place on top of the trivet.
12. Lock the lid in place. Select High Pressure and set the timer for 25 minutes. When beep sounds, turn off pressure cooker, and do a quick pressure release to release the pressure.
13. When valve drops carefully remove lid.
14. Remove dish from and place onto the counter to cool completely.
15. Top with whipped cream and serve warm. Enjoy!

]]>Although it is exhausting, cooking a huge Thanksgiving dinner for family and friends is something that I look forward to all year long.
I do enjoy the turkey, but it’s really the side dishes and desserts that MAKE the feast. Our Thanksgiving sides have changed as our family has gotten older. Now, we tend to serve Brussels sprouts with bacon and candied yams (which I never liked before!) versus stuffing and green beans. Shocker, I know.

]]>Did I tell you guys my exciting news?? If you follow me on Instagram, you’ve probably seen our newest family member, Jax. Jax is a 7-year-old rescue dog and today is his 3 week anniversary of coming home with us. We are thrilled to have him as part of the family. All 72 snuggly pounds of him!
Yes, our new dog has taken up quite a bit of our time and energy the past few weeks. But he’s adjusting well and seems happy in his new home.
Jax is especially interested in ANY action in the kitchen and likes to plop right down in front of the oven whenever I’m cooking, which makes dinner prep very interesting. When I made a recipe for an upcoming blog post last Friday, I had to put the kitchen gate up just so Jax would stay clear of my feet.

]]>Thanksgiving is just around the corner, and I’m both in shock and ecstatic that it’s coming so soon. I look forward to Thanksgiving food ALL YEAR LONG. It really is my favorite dinner of the whole year, and I love that I cook so much that we can eat leftovers for days and days.
This year, I’m extra excited because Thanksgiving also signals a very special event! My husband and I are going on a cruise! I can’t wait to have some away time and relax instead of work-work-work. As much as I LOVE my LuLaRoe business and my blog and my big family, they sure do keep me busy!

I have to admit – I never paid much attention to the turkey frying craze. I was pretty happy with my turkey-cooking skills, thank-you-very-much. Plus, I don’t fry much food to begin with, so the idea of frying an entire turkey seemed a little over-the-top. But…I heard that people were getting amazing results with their fried turkeys, so I kept my mind open.

The Big Easy turkey fryer is available online and in store at Academy Sports, and based on my initial experience with it…it’s worth every penny and I would buy it again in a heartbeat!
If you’re a turkey fryer newbie like me, here’s a basic run-down of turkey-fryer options:
Classic gas fryers: These classic turkey fryers are used outdoors, use oil, and run off propane. Immersive heat makes a perfectly cooked, flavored bird with crispy skin and juicy meat.
Electric fryers: Since electric fryers don’t use propane, they can be used indoors. It’s just the electric version of the classic fryer. With built-in temperature controls – electric fryers fry, steam, boil, roast and more.
Oil-free fryers: Without oil, the oil-free fryers technically don’t “fry” turkeys, but they provide a similarly crisp, delicious bird without the oil. They also use propane so must be used outdoors. These use radiant heat to offer less mess and a healthier turkey “frying” option.
Like I mentioned above, I picked an oil-free turkey fryer, but there are a ton of options for delicious fried turkeys. In general, the following turkey frying tips apply to different types of turkey fryers (except, of course, that tips about the propane tank will not apply to electric turkey fryers). A couple of things that I learned when I used my turkey fryer for the first time:
Why I LOVE my Big Easy Oil-Free Turkey Fryer:
If it were only about the taste, I would still give my first turkey frying (or chicken frying) experience a big thumbs up. It was so much easier than I thought it would be, and the meat could not have turned out better!
But I think the best part of having a turkey fryer is the fact that my oven will be free to make pies and rolls on Thanksgiving Day instead of cooking an oven-filling turkey all day long. I am thrilled about the convenience of having a turkey fryer to free up the oven space, but I’m even more excited to have the fried turkey experience without having to use gallons and gallons of oil! This could not have been a better fit for my family.

]]>Life seems to be settling down just a little bit, which means we’re due for a little excitement, don’t you think? (And I am NOT referring to the election!) We do have a little family trip to Hersheypark planned for this coming weekend, a new car to test drive for the week, and a trip for my husband and youngest son to visit family next week.
So basically, I take back the thing about “my life settling down.” I need to resign my self to the happy chaos that is here to stay.
This past weekend was a baking weekend, and my tummy couldn’t be happier. And since the pumpkin cookies that I made fit perfectly with this week’s Thanksgiving theme, I figured I’d drop the recipe here before I get on with the rest of the party. Enjoy!

I love the holidays.
When I was growing up, holidays meant time with my extended family and some of the best foods ever. My mom, grandma, and all of my aunts would make their most delicious dishes and we would enjoy an amazing feast, regardless of which holiday we were celebrating.
The holidays changed quite a bit for me once I got married and moved across the country from the rest of my family. I still love the foods of the holidays, of course. But now it’s just a bigger challenge because all of the cooking and baking responsibility are on my shoulders.
I don’t want to skimp on all of my favorite holiday dishes, but I’m always on the look-out for recipes that make my holiday cooking easier and less time-intensive. Because time with family and celebrating the holidays together is important, I don’t want to spend the entire holiday by myself in the kitchen!
I love cooking, but I like spending time with the family even more, and nobody has time to be slaving away alone in the kitchen, especially when they’re supposed to be enjoying the holidays with family and friends. I’m guessing I’m not the only one that feels this way.
I have found a new family-favorite recipe that is a perfect addition to the holiday menu. It’s delicious and meets my picky holiday-worthy standards. And it’s fast and easy, which meets my holiday craziness needs!
When I told my kids and husband what I was making the other day, they just about died. They couldn’t wait for the crescent rolls to be done (and for me to take pictures). Once they were all done, you wouldn’t believe how quickly 16 Nutella and cheesecake-filled crescent rolls disappeared. No one could eat just one!

]]>I love Thanksgiving.
And I love Thanksgiving turkey. But I always end Thanksgiving with a massive amount of leftover turkey…certainly more than we can eat plain before getting sick of it. Over the years, I’ve come up with several family-favorite recipes for turkey leftovers, and I’ve gotten creative with our use of our beloved Thanksgiving food. I make several of these dishes the week after Thanksgiving, and I freeze some turkey so that we can use the turkey for soups and other easy dishes during those busy December nights.
Basically, any dish that calls for cooked chicken or turkey can be made into a Thanksgiving turkey leftovers recipe. In sandwiches, salads, soups, and casseroles, you can’t even tell the difference! I always buy more bird than we need so that I’ll have plenty of leftover meat to use for meals between Thanksgiving and Christmas. And because the recipes are so diverse, we don’t get sick of eating so much turkey!
