We’re on the final countdown to summer vacation – 7 more days of school to go before the kids are home all day, every day. This means hotter weather, afternoons spent at the pool and lots of BBQing for dinner.
Our school year is pretty organized. We have a fairly steady routine. Summer throws all of that up in the air (don’t get me wrong – the change of pace is something I look forward to!) and we have to switch gears to make the most out of our summer break. Three years ago, I wrote a list of 30 indoor and outdoor summer activities for kids. I only wish I could be so organized every summer…
This summer we’ll have…
- one daughter working full time at a summer camp
- two sons attending week-long scout camps
- three members of the family going on an intense three-day hike
- one cross-country drive to visit family
- my annual trip out to spend a week with my mom.
It will be over before I know it.
Because of I know the summer will fly by if I’m not careful, I am treasuring up every experience that I can. And that often means cooking more simple foods, eating more salads and grilled meats, and generally spending less time in a hot kitchen. Here’s a one-pot meal that I discovered many, many years ago on the back of a can of pigeon peas (gandules) and that I decided to bring back to our regular dinner rotation. Arroz Con Gandules (rice with pigeon peas) is extremely easy to make. The rice, beans and hot dogs together are mild but full of flavor…and just a quick tip: the crusty rice at the bottom of the pot is the BEST part.
- 2 Tablespoons vegetable oil
- 1 package Hebrew National jumbo beef franks, sliced
- 1 small onion, chopped
- ½ cup sofrito
- ¼ cup tomato sauce
- 1 envelope Sazon
- 1 can Gandules (pigeon peas), drained
- 1 Tablespoon salt
- 6 cups water
- 3½ cups rice
- Heat oil in large pot on medium heat. Add chopped onion and sliced hot dogs to the oil and heat until onions soften.
- Add remaining ingredients except rice; mix and bring to a boil.
- Add rice, mix, cover and cook on low heat for 20 minutes.
- Uncover and continue to cook, stirring frequently, until most of the liquid is absorbed and rice is tender.
Note: I also make this dish using sliced smoked sausage, but Hebrew National all-beef Kosher hot dogs were simply amazing in it! This time around, I tried making the dish in my rice multi-cooker, and while it was super easy to push start and walk away, the rice came out more mushy than I would typically prefer.
