Whether you’re hosting a big game day party this weekend, heading over to a friend’s house to watch some football, or simply staying at home and laying low, I’ve got the perfect appetizer or snack to share. I had a blast testing out several varieties of peach quesadillas – and by testing, I mean cooking and photographing and then eating a ton.
I have a hard time with a lot of fresh fruits because of something called oral allergy syndrome. When I eat certain fresh fruits, I have an allergic reaction. OAS is not actually a food allergy but an allergy to weeds and trees. Rather than go into a complex explanation here (you’re welcome to google it), I’ll just say this: I miss eating many fruits, and look for opportunities to eat as much cooked or canned fruit as I can, since cooked fruits are fine for me to eat.
So when I was challenged to come up with a game-day appetizer using one of Libby’s® fruits or vegetables, I was drawn immediately to their canned peaches and determined that I would find a way to showcase peaches in a unique recipe. I made three recipes – one flopped, and the other two were fantastic. Today, I’m going to share with you my first success (the second recipe will be coming soon, I promise!).
Peach Quesadillas 3 Ways
- Lightly butter one side of a tortilla and place it, butter-side-down on a heated skillet. Add a thin layer of your choice of cheese, then a layer of peaches, then additional cheese. Top with a second buttered tortilla. When the first side is slightly browned and crispy and the cheese is melty, flip the tortilla to heat the second side.
- Remove from pan and cool for 30 seconds, then slice into triangles for serving.
When I made the Cinnamon Peaches and Cream quesadillas, I sprinkled the outside of the tortilla with cinnamon-sugar before heating on the pan. That may have been a mistake, since the sugar burned faster than I could cook the quesadilla. Despite the fact that they were a little darker than I would have liked, I loved the taste. Dessert quesadilla? Yes, please!
My favorite quesadilla appetizer by far, though, was the Pepper Jack and Peach Quesadilla. It was the perfect combination of sweet and spicy – and it even tasted yummy cold.

Oh my gosh, these look GREAT! The peach, cinnamon and cream… reminds me of a random sandwich I had overseas where they didn’t speak English, except it was condensed milk not cream… strange combo, but oh so good!

I would make a fruit salad. The Cinnamon Peaches and Cream recipe sounds good. A Mexican fast food restaurant here serves a dessert that has a fried tortilla with cinnamon and sugar with apple pie filling and cheddar cheese on top and they are to die for. Would love to try making something similar at home.
