I’ve got it pretty easy this week because we have lots of food left over from my mom and dad’s visit. I figured I’d share what we made yesterday (SUPER EASY) and a few other easy meals to prepare.

*Crock Pot Shredded Beef BBQ sandwiches*

Basically all I did was cut up a large flank steak into 2 inch pieces and add to crock pot–the amount of meat you cook will depend on the number of people you’re cooking for. Pour an entire bottle of BBQ sauce on top of the meat, cover, and cook on low for 8 hours. Before serving, take the pieces of meat out of the crock pot with a slotted spoon, shred with 2 forks, and pour some of the sauce on top. Add the meat and sauce (plus some extra full-strength BBQ sauce if you like it that way…I do!) on your favorite bread or roll. SO YUMMY! We added some cooked fresh green beans and a spring greens salad with a vinagrette dressing on the side.

*Kielbasa and Potatoes*

Another family favorite that doesn’t need a traditional recipe…..Cut about 4 potatoes into bite sized pieces and boil them until they are just undercooked (you don’t want them to be mushy). While the potatoes are cooking, slice one pound of kielbasa/smoked sausage (any flavor or variety). Heat in a large skillet (no oil necessary–there’s plenty inside). I like to add some garlic and Italian seasoning to the sausage. When the potatoes are just about ready, strain them and add them to the skillet with the sausage. Heat until the potatoes are ready to eat (make sure you turn off the heat before you’ve got kielbasa and mashed potatoes!). Perfect with green beans. Yum! Ready in 15 minutes.

*Chicken Pot Pie*

A true family favorite. The kids go crazy when I make this! See My Recipe Blog for the recipe.

And now I need some help from YOU.

Does anybody have a fabulous, truly yummy Chicken Salad recipe? I had chicken salad sandwiches this weekend (on open-faced french bread) and I am craving more, but I don’t personally have a great recipe. I’d love to have some recipes sent my way to try out!
