I had hopes of losing a little bit of my extra weight before traveling to Las Vegas in less than two weeks for SITScation. I’m meeting some good friends for the first time, and want to look my best. I’ve been trying to watch what I eat, and I’ve actually been fairly successful….until this weekend.
On Saturday, KitKat and her friend, who spent the weekend with us, baked some Lemon Cheese Bars, and while the name didn’t sound all that enticing, I have not been able to keep my hands off those little buggers all weekend. They are killing me.
Oh, but it is a sweet way to die.
My pants may not fit quite as loosely as I would have liked in Vegas, but Oh Boy, has it been worth it.
In case you’re interested, here is the recipe:
LEMON CHEESE BARS | |
PART 1 :
1 box plain lemon cake mix 1/3 c. oil 1 egg PART 2 :
1 (8 oz.) pkg. cream cheese, softened 1/3 c. sugar 1 tsp. lemon juice 1 egg PART 1: Mix dry cake mix with above ingredients. Reserve 1 cup of crumb mixture. Press the rest into an ungreased 13″x9″x2″ pan. Bake 15 minutes at 350 degrees.
PART 2: Beat 4 above ingredients until light and smooth. Spread over baked layer and sprinkle reserved crumb mixture on top. Bake 15 minutes more. Cool and cut into bars. |
