You’ve got to know something is wrong when the photography nut stops taking pictures.
I just haven’t had an urge to pick up my camera lately. It’s the stress. It doesn’t seem like that big of a deal on a day to day basis, but when I look back on ALL of the pictures I took last week and find FOUR pictures, all of food…..it comes as somewhat of a shock.
So….since my pictures were of food, I figured I’d share the pictures (not that impressive) AND the recipe (absolutely amazing!).
Chimichurri Pork
Prep time: 30 minutes
Cook time: 55-60 minutes
Oven temp: 350 degrees
6 servings
2 Tbls olive oil
2 Tbls flour
1 tsp salt
1/2 tsp paprika
1/4 tsp black pepper
1 lb pork tenderloin, cut into 3/4 inch cubes
1 large onion, cut into 1/2 inch thick wedges
About 8 potatoes, unpeeled, and cut into bite-sized pieces
1-2 Tbls dried parsley
1 tsp dried oregano leaves
2 Tbls lime juice
1/2 tsp red pepper flakes
2 cloves garlic, chopped
1 3/4 cup chicken broth
1 can refrigerated biscuits
1/4 cup finely chopped fresh cilantro
1. Heat oven to 350 degrees. In a large saucepan, heat oil over med-high heat. In a large bowl, mix flour, salt, paprika, and pepper. Stir in pork until evenly coated. Add to hot oil. Cook and stir until evenly browned (meat does not have to be thoroughly cooked). Add remaining ingredients except biscuits and cilantro and stir. Turn into a large covered casserole dish.
2. Cover casserole and bake for 40 minutes. Remove from oven and increase oven temp to 375 degrees.
3. Separate biscuit dough and arrange on top of hot pork mixture. Bake uncovered 14-18 minutes longer or until biscuits are golden brown. Sprinkle with cilantro before serving.
(PS–I’ve actually almost got my cooking spirit back. I’ve been cooking more, and hope to be up to sharing recipes again more frequently!)
One more thing–I stretched my recipe a little further, so I separated the meat and potatoes into 2 casserole dishes. What you see above is only a third of what I made.
