When I was growing up, the holidays meant family gatherings, and I’ll never forget how my aunts and uncles and cousins, along with my parents and siblings and I, filled up my grandparents’ little house in California. We all drove the distance – some hours away and some just a few minutes away – to meet at Grandma and Grandpa’s house for Thanksgiving dinner together.
And, oh! What a feast it was!
Every family brought a few dishes each and we filled all of the counter and table space with delicious foods to eat. We ran around with the cousins all day and ate til we could run no more.
Now that I’m a mom and host my own Thanksgiving dinner, far away from most of my family, I have tried to maintain that holiday atmosphere at my own house…with a few less dishes on the table.
One of the hardest things about hosting my own Thanksgiving dinner is finding the time to make a few homemade desserts. This year, I have found an insanely delicious and totally easy recipe that my family loves (yes, we tested it earlier this month just to make sure it was a keeper!).
I love that these mini cheesecakes can be customized to everyone’s tastes and that they are portion-controlled. I just won’t tell anyone if I grab two for myself…
Caramel Apple Mini Cheesecakes:
- Bake pastry shells as directed on package; cool.
- Meanwhile, beat Neufchatel and ¼ cup milk with mixer until blended. Add dry pudding mix and remaining milk; beat 2 min. Refrigerate until ready to use.
- Remove top and doughy center from each pastry shell; discard removed pastry.
- Fill shells with pudding mixture; top with apples and caramel topping. Serve with pastry tops.
Note: I found these caramel apple mini cheesecakes on Jello.com. I doubled this recipe, since I couldn’t very well make 6 mini cheesecakes for my family of seven. We shared a couple of the extras with some friends who loved them just as much as we did!
