Lately, I need all the help I can get in the kitchen. I am a good cook. Really, I am. Ask my husband. Give me a recipe and I can make anything. My problem is that lately I lack the desire to spend an hour and a half in the hot kitchen making a meal that the kids might eat. Maybe it has to do with the fact that it’s summer and we just got our air conditioning back up and running last week. No one enjoys cooking in a kitchen that feels like the oven.

We tried the Orange Chicken over the weekend. Since my family is a little bit bigger than 2, I decided to add a little food from my freezer to stretch it out (a little broccoli and some chicken). I also cooked extra rice. It totally worked!
Here’s our meal, with a little added to make a meal for 2 stretch to a meal for 7. Remember that a few of my kids are birds when it comes to eating.
They might not have eaten a lot, but they enjoyed it.
And, yes, that IS my son eating chicken with two wooden skewers. I guess that’s what you do when the other kids grab the chop sticks before you. I did notice, however, that he got one of the 3 “cool” plates that the kids fight over at dinner time. They like to keep things interesting.
I had to take a picture of the rice because it was so incredible to me. The frozen dinner came with a little pouch of rice. It said to pop in the microwave for a few minutes. I though, “Wait! Where’s the water? How is this going to work?!” But, amazingly it did. Perfect rice in the microwave.
