Cafe Rio Creamy Tomatillo Dressing

This is my newest addiction. It is amazing on a salad, with chicken, quesadillas, fresh veggies, and burgers. Yes, I have tried it on just about everything.

A couple of friends of mine introduced me to this amazing recipe last month (a copycat version of Cafe Rio’s incredible dressing!), and then I happened to promise some other friends that I would post the recipe “soon.” Um, it’s not really soon, but the anticipation will make it taste that much sweeter, right?

Creamy Tomatillo Dressing

Without further ado, Creamy Tomatillo Dressing:

Ingredients
  • 1 pkg. dry ranch dressing mix
  • 1 cup buttermilk
  • 1 cup mayonnaise
  • 1-2 tomatillos
  • ½ clove garlic, minced
  • ½ bunch cilantro, chopped
  • ½ tsp. lime juice
  • ½ small jalapeno, seeds removed
Instructions
  1. Blend all ingredients together until smooth - no chunks! Refrigerate dressing for a few hours for best taste.
  2. You can add more cilantro or jalapeno according to taste.

Creamy Tomatillo Dressing blender

And now I have to tell you a story. When I made this dressing last month (on Reese’s birthday, in fact), CandyMan happened to be working at the kitchen table. He saw me putting things into the blender and got excited that I was making a shake. When he glanced over and saw me pouring a completely GREEN liquid into a jar, he gasped, “What is IN that? Why is it so green?” I calmly replied, “Tomatillos and jalapenos…” When I noticed his face after telling him the ingredients, I knew something was wrong. Poor guy thought I had added tomatillos and jalapenos to vanilla ice cream.

    Hmm. Our Cafe Rio’s dressing is very thin…maybe it’s just a difference in how your restaurant makes theirs? My daughter used to work at Cafe Rio and knows the recipe they use in house and said that this is very similar to what they do (she worked there long after I posted this recipe, incidentally, so I didn’t get it FROM the restaurant). Anyway, if you want yours thicker, I would reduce the amount of milk and/or increase the amount of sour cream until you’re happy with it. Hope that helps!

    i absolutely love this dressing but find that mine always comes out very thin not creamy like Cafe Rio’s. Am I doing something wrong or any suggestions to help? Thanks in advance for your reply

    I love this dressing. Problem is I love the salads that come with it. That is why I am on a serious diet/life change plan right now! I have got to get rid of this last 25 pounds it is KILLING me. So no Cafe Rio dressing for me this next few weeks!!!!!!
