POM Wonderful Recipes + Giveaway

I love pomegranates. In fact, my mom used to send a quarter of a pomegranate in a plastic bag for lunch while I was in elementary school. Growing up in sunny California has it’s advantages.

Pom Wonderful Pomegranate Juice

Recently, I was sent a box of POM Wonderful juices. As much as I wanted to drink them all up, I was intrigued by the challenge to try some recipes using pomegranate juice. So I saved two of the bottles and used them for dinner last night. I am so glad I did! We tried out the Pomegranate-Chipotle Pulled Pork. Yum! Recipe follows (You’ve got to try it!)

Pomegranate-Chipotle Pulled Pork

Chipotle Cole Slaw

Pomegranate-Chipotle Pulled Pork

1 (5 to 7 pound) pork roast, preferably shoulder or Boston butt
2 small bottles (16 oz.) POM Wonderful pomegranate juice
1/4 cup fresh lemon juice
1/4 sugar
1/2 cup apple cider vinegar
4 tablespoons chipotle peppers, chopped very fine
16 oz. tomato sauce
1 T. yellow mustard
1 cup brown sugar
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
fresh buns, nice and soft
chipotle slaw, recipe below

Chipotle Slaw

4 cups fresh cole slaw mix
3/4 – 1 cup mayonnaise
1/4 cup honey
juice from half a lemon
1/4 – 1/2 cup finely chopped red onion
1 teaspoon finely chopped chipotle peppers

Preparation

Preheat the oven to 300 degrees F. Put the pork in a roasting pan and season generously with salt and pepper on all sides. Place in the oven and roast it for about six hours, or until an instant-read thermometer stuck into the thickest part of the pork registers 170 degrees F. It should be falling-apart tender at this point! While the pork is roasting, make the barbecue sauce. Combine pomegranate juice, lemon juice and sugar in a medium saucepan. Bring to a boil then quickly reduce to the heat to low. Simmer, stirring occasionally, until the mixture reduces to a syrup consistency that coats your spoon, about a half hour or so. Add the rest of the ingredients to saucepan, and continue to simmer until mixture thickens to a barbecue sauce consistency. When the pork is done, remove it from the oven and let it rest for 15 minutes or so to let the juices redistribute. Using two forks, shred the pork and place in a large bowl. Add enough barbecue sauce to just coat all the meat. Place meat on buns and top with slaw. Pass the extra sauce at the table and enjoy! Mix Chipotle Slaw and serve on top of pulled pork sandwiches, or serve as a delicious side dish!

Note: I cooked my roast in the crock pot, adding the sauce at the beginning of the cooking time. It was perfect!

    POM Blueberry. That and a couple of shots of Vodka added to it. Vodka vasodilates the brain’s capillaries improving cerebral blood flow and cognitive performance. People that drink alcohol in a moderate manner have greater cardiovascular health than non-drinkers. Yup POM and Vodka is a tonic I would recommend to anyone who wants to improve their health.

    I actually poach pears in pomegranate juice and serve with a few fresh pom seeds – much more kid-friendly than red wine! It tastes fabulous and looks great.

    I’ve actually been looking for new recipes. I really like the look of the Pan Seared Duck. Never had duck, but it sounds good in that recipe.
