Spicy Chicken and Corn Chowder #TexasPete

My family loves full-flavor foods. So when I was challenged to make a new recipe for the family dinner this past week using Texas Pete Hot Sauce, I knew it would be a hit. I just didn’t know how delicious it would be (since a good bit of the creation of this recipe was pure luck!).

I was already familiar with Texas Pete original hot sauce as a condiment on top of sandwiches, eggs, meats, pizza, and more, but I was intrigued by the idea of using hot sauce as a key ingredient inside a dish…not just as a topping. Did you know that in addition to Texas Pete Hot Sauce, they’ve also got wing sauces, Hotter hot sauce, a garlic hot sauce, CHA! by Texas Pete sriracha sauce and a green pepper sauce?

Since I love sriracha sauce, I couldn’t wait to try CHA! by Texas Pete, and decided to use that as the starting point for my new dinner recipe. I am so excited to share this with you….get your taste buds ready. This soup is amazing!

Spicy Chicken and Corn Chowder with Texas Pete CHA! Hot Sauce

Spicy Chicken and Corn Chowder

Ingredients:

6 slices bacon, crumbled (reserve for topping) plus 3 tablespoons drippings 
1 poblano pepper, diced
1 cup celery, diced
1 cup onion, diced
1/2 cup flour
4 cups chicken broth 
3 cups cooked chicken, diced
2 cans corn, drained
2 tablespoons CHA! by Texas Pete Sriracha Hot Sauce
1 tablespoon Worcestershire sauce
1/2 tablespoon thyme
1/4 teaspoon pepper
1 bay leaf
2 cups milk or cream 
Optional Toppings: fresh cilantro, chopped and corn chips, crushed
Directions: 
1. Cook bacon tip crisp. Remove bacon to cool on paper towel and reserve 3 tablespoons of the bacon grease.
2. In a large pot, add bacon grease and pepper, celery, and onion. Saute vegetables until the begin to soften, about 3-5 minutes.
3. Add flour to softened vegetables and stir. Heat, stirring occasionally, for another 3-5 minutes over medium-low heat. 
4. Add chicken broth slowly and stir until the mixture is smooth and free of lumps.
5. Add CHA! by Texas Pete Hot Sauce, chicken, corn, Worcestershire sauce, thyme, pepper and bay leaf. Stir to combine and bring to a boil.
6. After the soup has started to boil, turn the heat to low/simmer and cook for about 30 minutes, stirring a few times, or until the soup/chowder has thickened.
7. Remove and discard the bay leaf and mix in the milk/cream, adding more or less if needed to obtain desired consistency. Stir til just heated through. 
8. Serve topped with crumbled bacon, fresh cilantro, and corn chips. Makes 6-8 servings.
Note: as the name suggests, this chowder is spicy! If you prefer less spice, reduce the hot sauce and the poblano pepper by half (or reduce it even more, if you’re worried) – you can always add more hot sauce to your taste!
