I rarely have much time to make a fancy dinner….especially during the week when we’ve got piano lessons and drama club and scouts and karate. More and more of my meals lately have been of the quick-prep variety. I’ve been on the look out for more quick meal ideas that are still tasty.
This week while the kids were at piano lessons, I picked up some steaks on sale at the grocery store, grabbed a bag full of brussels sprouts, and tried a new dish that was ready in just over 30 minutes. I used a few additional ingredients that I already had at home – onions and mushrooms and a box of Better Crocker Creamy Butter Mashed Potatoes – and whipped up a satisfying home cooked meal in no time.
I found a recipe for skillet steak with mushrooms and onion online, but changed the recipe up quite a bit (most importantly, I didn’t cook the steak in the skillet so the name doesn’t work anymore!). While the steak and mushrooms and onions did require some chopping and stirring, the potatoes couldn’t have been easier. I loved that I just had to heat up the water and add the potatoes, some butter and some milk. Would you believe that the potatoes were the ONE dinner item that everyone in the family ate without complaint?

Steak with Mushroom and Onion Sauce
- 1 tablespoon vegetable oil
- 1 medium onion, sliced thin
- 2 teaspoons minced garlic
- 1 teaspoon ginger
- 1 pound mushrooms, sliced
- 3 tablespoons cooking sherry, divided
- ⅔ cup chicken broth
- ¼ cup teriyaki sauce
- ½ teaspoon cornstarch
- 1½ pound thin beef loin top sirloin steak
- Freshly ground sea salt and black pepper, to taste
- Heat oil in a large skillet over medium-high heat. Add onion and cook until softened. Add garlic and ginger; stir and cook 1 minute.
- Add mushrooms and 1 tablespoon of the cooking sherry. Stir mushrooms until lightly browned, about 5 minutes.
- Meanwhile, in a medium bowl whisk together chicken broth, teriyaki sauce, remaining 2 tablespoons sherry and cornstarch. Add sauce to mushroom mixture and bring to a boil. Reduce heat and simmer until ready to serve.
- Season steak with salt and pepper. Sear steak for just a few minutes on each side (I use an indoor grill that sears both sides at once – you can also use an outdoor grill, a skillet, or the broiler).
- Slice steak into thin strips and add to the mushroom and onion sauce.
- Serve with mashed potatoes and a vegetable on the side.
