I have a confession to make. It’s lunch time and I am eating a hot dog, without bun, cut up like I would do for my kids. I’m dipping the hot dog chunks in spicy mustard….with a cup of yogurt and a few tylenol on the side.
Not the epitome of a healthy lunch.
So often, lunch is whatever I can throw together fast. Left overs, a quick sandwich, or something from the freezer are my typical choices. Last week, I was lucky enough to have some yummier and healthier options when a refrigerated package from Healthy Choice came in the mail.
Healthy Choice has a whole new line of steaming entrees. The first meal I tested was the Steaming Portabella Parmesan Risotto.
How does this sound? Flavorful portabella mushrooms are mixed with garden peas, whole-grain rice, and red peppers for extra taste. Cover it all in a delicate Parmesan cheese sauce and it’s love at first bite, Italian-style.
Sounds (and tastes) quite a bit better than a bun-less hot dog. I loved the flavor and the texture of the risotto and veggies. It really didn’t taste like a freezer meal.
As much I enjoyed the taste, I was equally impressed with the nutritional information that I skimmed over as I ate:

The second entree I tested was the Lemon Herb Chicken. Listen to this description: Tasty chicken tenderloins are prepared in a savory herb lemon-Chardonnay sauce and are mixed with firm whole-grain pasta, juicy cherry tomatoes, and succulent green beans. And at just 210 calories, it’s a lunch-sized portion that will take your taste buds on a trip down the California coast.
The chicken didn’t have that fake-freezer chicken taste, the green beans tasted freshly steamed (no canned or frozen bean taste at all. They were even crisp!), and the sauce was light and flavorful. The only thing I could have done without was the cooked tomatoes, but that’s just a personal preference.
