I’ve waited ALL summer for this week….and no, I’m not talking about the eclipse, though that WAS pretty incredible!
It’s finally my vacation week (and not a “vacation” where I’m sleeping in a tent and taking care of a couple dozen teenage girls). I’m here at my parents’ house relaxing, taking classes at BYU with my mom and feeling utterly exhausted and totally happy.
My kids still have 2 weeks before they’re back in school, but it’s never too early to make plans for after-school snacks. Especially when they look as tasty as these after-school (or DURING school!) recipes that you guys shared with us.

As a single dad raising my 5 kids, I am not the best cook but try at least. We have made the no bake cookies a lot here and my kids love them. They can even make them now. I can now try some new recipes. Thanks for sharing!

I’ve made no-bake cookies like the ones above & loved them, but I want to try those apple bars. The peanut butter balls look great, too.
