German Pancakes are one of my family’s favorite breakfast dishes (and, oddly, we almost always eat them for dinner). I’ve been making them for longer than I can remember…and I must say that mine are the best I’ve tried. There’s nothing quite like a puffy German pancake straight out of the oven. I love that the ingredients are simple and they are easy enough for my kids to make.
When I was challenged to come up with a recipe using Eggland’s Best eggs, I thought immediately of my German pancake recipe and wondered what I might be able to do to dress it up a bit.
The obvious answer was bacon.
Typically, I enjoy adding apples and cinnamon-sugar to my German pancakes (I’ve included that variation below as well), but in the past my kids wouldn’t touch them unless they were plain. I was wondering how they’d react to my trial bacon version.
They ate the Maple Bacon German Pancakes so fast there wasn’t a crumb left for dad to try them. To put it lightly, they were a huge hit. I just wish they had turned out a little prettier (But you guys all know that beauty does not mean food tastes good and vice versa, right?).
- 2 tablespoons butter
- 2 large Eggland’s Best eggs
- ½ cup flour
- ½ cup lowfat milk
- ¼ teaspoon salt
- 2 tablespoons maple syrup
- 2 slices bacon, cooked and crumbled
- Heat oven to 400 degrees. Place butter in a pie plate and melt butter in oven as it preheats. When butter is melted, remove from oven and swirl butter around so that the bottom and sides of dish are covered. Drizzle melted butter with 2 tablespoons syrup and sprinkle with crumbled bacon. Set aside.
- In a small mixing bowl, beat eggs with a whisk. Beat in flour, milk, and salt, just until mixed. Pour into pie plate.
- Bake for 25 to 30 minutes or until puffy and golden. Serve immediately with powdered sugar or maple syrup.
Here’s a little step-by-step photo tour of the process:
Beat eggs and then add milk, flour, and salt.
Beat until combined.
Meanwhile, melt butter in a pie plate and drizzle with maple syrup.
Sprinkle crumbled bacon over butter and syrup.
Pour batter directly over butter/maple/bacon (note: next time, I might opt to pour around the edges versus pouring straight into the middle of the pie plate since a lot of my bacon was pushed to the edges by the batter. Granted, that made the edges all the more delicious…).
Bake for 25-30 minutes. Slice and serve!
I typically make FOUR of these to feed my family. You can double a batch and bake it in a larger dish. Try a few varieties and let me know which ones your family likes the best!

- 25% less saturated fat {Reducing the amount of saturated fat is recommended for maintaining healthy cholesterol levels and cardiovascular functions}.

Vanilla pudding! I have to use the freshest eggs (luv Eggland!!!), milk and vanilla, then some cornstarch and a shake of salt. I love it warm or cold!
