Maple Bacon German Pancakes

German Pancakes are one of my family’s favorite breakfast dishes (and, oddly, we almost always eat them for dinner). I’ve been making them for longer than I can remember…and I must say that mine are the best I’ve tried. There’s nothing quite like a puffy German pancake straight out of the oven. I love that the ingredients are simple and they are easy enough for my kids to make.

When I was challenged to come up with a recipe using Eggland’s Best eggs, I thought immediately of my German pancake recipe and wondered what I might be able to do to dress it up a bit.

The obvious answer was bacon.

Typically, I enjoy adding apples and cinnamon-sugar to my German pancakes (I’ve included that variation below as well), but in the past my kids wouldn’t touch them unless they were plain. I was wondering how they’d react to my trial bacon version.

My standard apple cinnamon German pancake – I love them, but my kids turn their noses up!

They ate the Maple Bacon German Pancakes so fast there wasn’t a crumb left for dad to try them. To put it lightly, they were a huge hit. I just wish they had turned out a little prettier (But you guys all know that beauty does not mean food tastes good and vice versa, right?).

This is a fun variation on plain German Pancakes (and, hey – you’d be eating them with maple syrup and bacon anyway, right?).

Serves: 2-3

Ingredients
  • 2 tablespoons butter
  • 2 large Eggland’s Best eggs
  • ½ cup flour
  • ½ cup lowfat milk
  • ¼ teaspoon salt
  • 2 tablespoons maple syrup
  • 2 slices bacon, cooked and crumbled

Instructions
  1. Heat oven to 400 degrees. Place butter in a pie plate and melt butter in oven as it preheats. When butter is melted, remove from oven and swirl butter around so that the bottom and sides of dish are covered. Drizzle melted butter with 2 tablespoons syrup and sprinkle with crumbled bacon. Set aside.
  2. In a small mixing bowl, beat eggs with a whisk. Beat in flour, milk, and salt, just until mixed. Pour into pie plate.
  3. Bake for 25 to 30 minutes or until puffy and golden. Serve immediately with powdered sugar or maple syrup.

Notes
Cinnamon apple variation: Instead of adding maple syrup and bacon to the buttered pie plate, sprinkle pie plate with 2 Tablespoons of brown sugar and ¼ teaspoon cinnamon. Place thinly sliced, peeled apples on top of sugar-cinnamon (I use one small apple) and then pour batter over all. Bake for 30-35 minutes. Excellent served plain, with whipped cream, syrup, apple butter….Yum!

Here’s a little step-by-step photo tour of the process:

Gather your ingredients

Beat eggs and then add milk, flour, and salt.

Beat until combined.

Meanwhile, melt butter in a pie plate and drizzle with maple syrup.

Sprinkle crumbled bacon over butter and syrup.

Pour batter directly over butter/maple/bacon (note: next time, I might opt to pour around the edges versus pouring straight into the middle of the pie plate since a lot of my bacon was pushed to the edges by the batter. Granted, that made the edges all the more delicious…).

Bake for 25-30 minutes. Slice and serve!

I typically make FOUR of these to feed my family. You can double a batch and bake it in a larger dish. Try a few varieties and let me know which ones your family likes the best!

Compared to ordinary eggs, Eggland’s Best eggs contain:

  • 10 times more Vitamin E {Vitamin E is an antioxidant that helps to protect body cells and tissues whether in the heart, skin, lungs, joints or elsewhere in the body. Antioxidants are nutrients in our foods which can prevent, or slow down, the oxidative damage to our bodies. Each EB egg contains 10 times more Vitamin E than ordinary eggs, which is equal to 25% of the recommended daily intake for Vitamin E}.
  • 4 times more Vitamin D {Vitamin D aids in the body’s absorption of calcium, helping to form and maintain strong bones. It is important for maintaining muscle strength, healthy body fat levels, and body tissue health. Each EB egg contains 4 times more Vitamin D than ordinary eggs, which is equal to 30% of the daily recommended intake of Vitamin D. (based on third-party testing of ordinary eggs)}
  • More than double the Omega-3 {Omega-3 fatty acids are classified as essential fatty acids because they are important for maintaining good health. Omega-3’s are believed to be beneficial for heart health, brain and eye function, infant development, and alleviating hypertension. Our bodies do not produce omega-3’s naturally, therefore, they must be obtained from food sources}.
  • 25% less saturated fat {Reducing the amount of saturated fat is recommended for maintaining healthy cholesterol levels and cardiovascular functions}.
  • 3 times more Vitamin B12 {Vitamin B12 is important for healthy protein metabolism, as well as cognitive, cardiovascular, and nervous system health. Vitamin B12 is needed for the process of converting carbohydrates, fats, and proteins from food into energy. It also helps form healthy red blood cells}.
  • 38% more lutein {Lutein is an important antioxidant that helps maintain healthy vision and overall eye health. Lutein may slow the effects of age-related macular degeneration, and it is an important nutrient for those who may be at risk for cataracts}.

    We make German pancakes all the time. in fact I just made them for dinner tonight. I would love to try these Maple bacon ones! Although I would have to make an entire pan like that for each person individually! My kids eat these German Pancakes like they are candy!

    Vanilla pudding! I have to use the freshest eggs (luv Eggland!!!), milk and vanilla, then some cornstarch and a shake of salt. I love it warm or cold! It matters to use the best ingredients, so it must be Eggland or I don’t make it!!! And I’m fussy because I used to have a couple of chickens and got spoiled having their eggs, and Eggland is my choice!
