School Night Tacos #FoodLionBoxTops

When the kids head back to school, it’s time for all of us (the kids AND me) to kick it in gear and get into the faster-paced routine of the school year. After spending a full day working while the kids are at school and then running kids to after-school activities and getting homework done, I need as many easy meal options as possible because dinner time comes fast!

Perhaps our family’s number one favorite quick dinner is tacos. I’ve never shared our family taco recipe because it is hardly a recipe…but then I realized that other families would love this easy meal, no matter how simple the steps.

Here’s how we make our perfect taco night at home:

Back-to-School Tacos Recipe

Ingredients:

1 pound ground beef
1 package taco seasoning
1 can black beans, drained
1 package taco shells
Shredded cheese
Shredded lettuce
Chopped tomatoes
Sour cream
Salsa
Chopped cilantro

Directions:

1. Cook ground beef in a sauce pan and drain fat. Add taco seasoning and follow directions on package. Add black beans if desired (we LOVE our black beans and they stretch the meat a lot farther, but I know lots of people prefer tacos without beans).

2. Prepare taco shells according to package in a casserole dish.

3. Fill shells with meat mixture and top with shredded cheese. Heat in a 350 degree oven for 5-8 minutes, or until cheese is melted.

4. Top each taco as desired.
