The Chew: Dress Up Your Summer Salads with Homemade Dressing

The only thing better than watching the brilliant chefs and bakers on The Chew cook up delicious food each weekday would be joining them in their kitchens to sample everything they make. While I won’t be making it out to the ABC studios in New York City to chow down on The Chew very often, I know I can sneak a peek into The Chew’s kitchen every weekday at 1:00 pm ET. Five days a week, co-hosts Michael Symon, Mario Batali, Clinton Kelly, Carla Hall and Daphne Oz throw a party in their kitchen and invite the rest of us to join in. 

 

The Chew

I have been loving The Chew – don’t get me started…I’ve watched too many clips from The Chew and have come away with so many great ideas! – and have been not only enjoying the new ideas for summer time meals to prepare, but I’ve been finding myself inspired. It’s not like any food or cooking show that on the air because it perfectly combines entertainment with excellent food and tips for the kitchen. 

I’m sure I’m not alone this time of year…I love all of the fresh fruits and vegetables that are available during the Summer time, and yet Summer is the hardest time for me to cook dinner for my family. I’m always looking for more fresh (and refreshing!) meals to prepare for the family so that I can 1) take advantage of the bounty that summer gardens bring and 2) avoid spending too much time in a hot kitchen. Thanks to The Chew, I realized that I have more summer-appropriate recipes than I thought!

When I watched the following clip from the Chew, I was intrigued by the grilled cantelope and vegetable salad with a homemade vinaigrette dressing. By the way, you will love the grilled chicken tips and the watermelon and cucumber drink that they share on this clip as well. What an incredible summer meal!

In the video, the crew of The Chew mentioned how awesome homemade dressing is. Not only are homemade salad dressings delicious and cheap, but you can save a little on the sodium and sugar that goes into many purchased salad dressings. I have a few family favorite salad dressings that I’ve been making for years, along with a few that I’ve gathered from friends.

 

One of my old favorites is the creamy dill dressing that I use on my holiday 7-layer salad. Another that I’ve shared here on the blog is a restaurant copycat dressing – Cafe Rio’s famous Creamy Tomatillo dressing. I’ve got one more to share today – and hopefully this will inspire you to use more of those fresh vegetables and fruits in your meal planning this summer.

Poppy Seed Dressing

Poppy Seed Dressing

This dressing is perfect tossed with fresh spinach, sliced strawberries, feta cheese and crumbled bacon.

Ingredients
  • 1 Tablespoon poppy seeds
  • 1 cup vegetable oil
  • ½ cup white wine vinegar
  • ½ cup sugar
  • 1 Tablespoon onion, minced
  • 1 Tablespoon salt
  • ½ tsp pepper
  • ½ Tablespoon dry mustard

Instructions
  1. Mix all ingredients (I like to put everything in a glass jar with a tight lid and shake) til combined. You’ll need to shake the dressing before using it each time.

    Looks very good! I have been rather frustrated with grocery store dressings. I was surprised when I checked a very tasty one the other day and it had MSG :( I feel like we shouldn’t have to worry about things like that. Making your own is the best way to know what is going into your foods!
