Bacon Stuffed Avocados #AvocadoBowl

If you were to ask me to name a handful of ingredients that make almost any food taste better, avocados and bacon would top the list. Honestly, when I’m looking at a menu in a restaurant or scanning a recipe at home, if I see avocados or bacon on the ingredients list, I’m more likely to choose that food.

So it’s no surprise that an appetizer whose two main ingredients are avocados and bacon would catch my eye.

Bacon-stuffed Avocados

Bacon and avocado...Two ingredients that make just about any recipe more delicious. So it's no wonder that bacon stuffed avocados are to-die-for amazing! I ate a half stuffed avocado for a filling breakfast, but these would make a good side dish or appetizer, too!

Ingredients
  • 4 medium ripe avocados
  • 8 slices bacon, cooked until crisp and crumbled
  • Lime juice (a few sprinkles)
  • ½ cup butter
  • ¼ cup brown sugar
  • ¼ cup white wine vinegar
  • ¼ cup chopped garlic
  • ½ teaspoon salt
Instructions
  1. Slice avocados in half lengthwise; scoop out about half of each avocado flesh, leaving a small “bowl” of avocado in each piece. Place scooped-out avocado in a medium bowl; add bacon and mash gently. Spoon mixture back into each avocado half. Sprinkle with lime juice to prevent browning.
  2. Combine remaining ingredients in a small saucepan; bring to a boil over medium-high heat, stirring occasionally, until smooth and all sugars are dissolved. Pour hot mixture over filled avocado halves. Serve immediately.

I actually ate a bacon-stuffed avocado for breakfast before leaving for my trip to Detroit this past weekend, and found it to be both satisfyingly filling AND delicious. These little avocado “boats” would make a great appetizer or side dish as well. And don’t you think these would make perfect Super Bowl snacks?
