Creamy Spinach and Chicken Penne

Spinach is one of my favorite foods and I lucked out to have children who enjoy eating it, too. Spinach is a great source of fiber, and the Vitamin A found in spinach is wonderful for healthy skin and the body’s immune system. Spinach is also a great source of Vitamin K, which is good for your bones as well as brain and nervous system function. We eat spinach as often as we can!

The other day, as I was trying to figure out what to cook for dinner, I surveyed the ingredients that I had available. Pasta, left over chicken, and fresh spinach. I set out to make a simple meal based on those 3 ingredients, and the creamy spinach and chicken penne was a success!

Creamy Spinach and Chicken Penne

Ingredients
  • 1 box of penne pasta, cooked and drained
  • 6 cups of fresh spinach, chopped
  • 1 Tbsp of olive oil
  • 3 cloves of garlic, minced
  • ¾ cup of chicken broth
  • ½ cup of light whipping cream
  • 2 cups cooked chicken, shredded or cut into bite-sized pieces
  • ⅓ cup of Parmesan cheese
  • creamy spinach and chicken penne
Instructions
  1. In a large skillet heat the olive oil over medium-high heat. Add garlic and cook for 1-2 minutes.
  2. Add the spinach to the skillet and cook for about 1 minute, then add the chicken broth and let that cook for about 3 minutes. Add the cream and cook for an additional minute.
  3. Add the cooked, drained pasta, chicken and Parmesan cheese, salt and pepper (to taste) and stir. Sprinkle additional Parmesan cheese over pasta to serve.
