My youngest son, AJ, and I used to go to Costco just to eat mini quiche samples. We couldn’t get enough of them. Parties, buffets, picnics…mini quiches are perfect for so many occasions but I had no idea until recently that they were so easy to make. Now that I can easily whip up a couple dozen mini quiches, they are now one of my favorite breakfast, brunch, lunch, or snack foods (and I don’t have to make a run to Costco or crash any parties to sneak a few).
Ham and Spinach Mini Quiche
- 1 package refrigerated pie crust
- Vegetable oil
- 1 small onion, finely diced
- ½ cup fresh spinach, chopped
- ½ cup ham, diced
- 5 eggs
- 1 cup cream
- ½ cup grated cheddar cheese
- 1 teaspoon dried parsley
- salt & pepper, to taste
- Cook the onion in a small amount of oil over low heat for about 3 minutes, and then add spinach and ham. Cook until the onion is softened. Allow to cool slightly.
- Mix onion mixture together with the eggs, cream, cheese, parsley, salt and pepper.
- Unroll the pie crust sheets and, using a round cookie cutter or glass, cut circles from each sheet. Line mini muffin pan with circles; press gently into muffin cups.
- Place a spoonful of the egg mixture into each crust-lined muffin cup (fill almost to the top).
- Bake at 350 degrees for about 12 minutes, until golden and eggs are set.
- Cool for several minutes and carefully remove from muffin tin by lifting edge with a knife.
This recipe can be easily adjusted to taste: leave out the spinach and add Swiss cheese for ham and Swiss quiches. Love bacon? Add crumbled bacon instead of ham. Want a veggie version? Just leave out the meat and add a little more spinach or chopped broccoli to the egg mixture.
