Sometimes I am still shocked at how quickly my big family goes through staples like milk, bread, eggs, and snacks for school lunches. Thank goodness for Target! It’s so easy to get everything I need on a quick Target run—from the staples that my family devours daily to those things that I keep forgetting I need to get for myself (like a new body pillow to replace the 15-year-old pillow I threw out last month).

This week, I had one of my most popular Target runs EVER when I brought home several of the new Archer Farms fall-inspired snacks. It’s not every day that I try something new that is so popular with my whole family that I have kids begging me to head out to the store again to get more.

But that’s exactly what happened. My husband and I have been devouring the Archer Farms pumpkin seed spice popcorn (so yummy!). But the most popular item overall? Archer Farms’ new cinnamon sugar sweet potato tortilla chips. The kids say they taste like churros in chip form. They were so delicious that they inspired me to create a dip to eat with them…and, oh my goodness, the combination was heavenly!

Sweet and Creamy Pumpkin Dip

Sweet and Creamy Pumpkin Dip

This quick and easy dip pairs perfectly with Archer Farms' new cinnamon sugar sweet potato tortilla chips, pumpkin tortilla chips, or apple slices. Serve it as an after-school snack or at your next fall get together!

Ingredients

  • 1 (8 oz) package cream cheese, softened
  • 2 cups confectioner’s sugar
  • 1 cup pumpkin puree
  • 1 tablespoon cinnamon
  • 1 tablespoon pumpkin pie spice
  • 2 cups Cool Whip

Instructions

  1. Beat cream cheese and sugar in a medium bowl until smooth. Add pumpkin and spices until blended. Stir in Cool Whip.
  2. Eat with cinnamon sugar sweet potato tortilla chips or apple slices.
  3. Store, covered, in refrigerator.

    I can’t wait to try this dip. A perfect snack on a cool Fall day while watching a football game. I love everything pumpkin and make my own puree. So this is a great way to use the beautiful roasted puree.

    I would love to dip apples in this Pumpkin dip and it looks so delicious! I love the easy way to make this recipe! I am going to be serving this dip for the Holidays!
